Yogurt Covered Blueberries | The Hungry Housewife

If you follow me on Instagram and Facebook, you will know I went blueberry picking and came home with over 7 pounds of blueberries.

Do blueberries remind you of Violet Beauregarde from Willy Wonka? No? Just me?

Back on track Leslie, back on track….

So what does one do with over 7 pounds of blueberries?

Well, you eat so many that you feel like Violet Beauregarde. “Violet, your turning Violet.”

I measured them into 1 cup amounts, put them in baggies and popped them in the freezer.

I have lots of plans for them.

Well, ViSalus contacted me and wanted me to create a recipe for them using their shape mix…you might have heard them referred to as “Body by Vi™” or heard people talking about the Body By Vi™ Challenge. People loose crazy amounts of weight! Go look at all the success stories here.

I am always on the hunt for a good grab and go breakfast or lunch, well because I am always on the go, and unfortunately don’t have time to sit down and eat.

I received my ViSalus in the mail and mixed myself up a shake. I mixed 12 oz. Unsweetened Vanilla Almond milk and 2 scoops of Vi-Shape®. IT TASTES LIKE CAKE MIX…I swear.  Oh, and I figured it was 3 WW points for the shake. 3 points for breakfast..yes please.

Sooooo, I am totally incorporating these HIGH protein, low carb,low fat shakes into my point counting.Click here for the nutritional info on the shakes.

Anyhow, back to recipe thought process….. those blueberries.

I took a 6 oz. container of Non Fat Greek Yogurt and mixed in 1 1 /2 scoops of the Vi-Shape®. I could have scarfed up the Vi-Shape® spike yogurt up, but those blueberries needed attention.

I dipped the blueberries in the yogurt, placed them on some non-stick foil and stuck them back in the freezer until frozen.

BAM..super healthy snack.

They were delish. I have always loved munching on frozen fruit, but adding the extra protein and nutrition from the Yogurt and Vi-Shape shake mix, made them extra delightful and nutritious.

If you don’t have any Vi-Shape® on hand at this moment and you HAVE to have these blueberries right now, you can just substitute some vanilla Greek Yogurt and they would be equally scrumptious.

Yogurt Covered Blueberries

Yogurt Covered Blueberries
Ingredients
  • 6 oz. Non Fat Plain Greek Yogurt
  • 1 1/2 scoops ViSalus Vi-Shape Mix
  • 1 cup Frozen Blueberries
Instructions
  1. Line a 9 x 13 pan with non stick foil or parchment paper.
  2. In a small bowl, mix together yogurt and Vi-Shape Mix.
  3. Toss in a couple blueberries (not all of them because it will freeze the yogurt), coat the blueberries with the yogurt and remove with 2 toothpicks.
  4. Place on the lined pan.
  5. Repeat until all the blueberries are covered.
  6. Freeze until yogurt has frozen, about 1 hour.
  7. Keep frozen until you are ready to eat.
Notes
If you don’t have any Vi-Shape on hand at this moment and you HAVE to have these blueberries right now, you can just substitute some vanilla Greek Yogurt and they would be equally scrumptious
