Guacamole with Greek Yogurt

Guacamole with Greek yogurt is pretty much epic.

And by epic, I am outrageously delicious and completely addictive.

Instead of using the standard sour cream, I decided to add some low fat Greek Yogurt ( I used Cabot of course). I feel that greek yogurt gives it a bit more flavor and not to mention, Greek Yogurt has way more protein. You could certainly use non fat as well.

Oh and guess what, Cinco de Mayo is just a couple days away, so this makes for the perfect Cinco de Mayo recipe.

Here is a little tip to make your guac last a little longer and not turn brown.
When you put it in the container you are going to store it in, take some plastic wrap and press it completely onto the surface of the guac. Air is guacamoles enemy, so this little trick prevents air hitting your precious dip!

Serves: 2 1/2 cups
Guacamole made with Greek Yogurt
Ingredients
  • 3 Avocados, fruit scooped out
  • 2 small Limes, zested and juiced
  • 1 Roma Tomato, seeds removed and diced very fine
  • 1 Jalapeno, seeds removed and diced very thin
  • 1 Garlic Clove, minced
  • 1 tbsp Cilantro, minced
  • 1/2 cup Greek Yogurt( my favorite is [url href=”https://www.cabotcheese.coop/lowfat-plain-greek-style-yogurt” target=”_blank”]Cabot[/url])
  • 1/4 cup minced Red Onion (about 1/8th of a medium onion)
  • Salt and Pepper
Instructions
  1. In a medium bowl, add the avocado, lime zest and juice, tomato, jalapeƱo, garlic, cilantro, Greek yogurt, and onion.
  2. Mix and mash with a spoon until only slightly chunky.
  3. Salt and pepper to taste.
