Chicken Meatballs

Chicken Meatballs with no breadcrumbs or eggs
Ingredients
  • 1 lb. Ground Chicken
  • ¼ cup Fresh Italian Parsley (about 1 large handful), finely chopped
  • ¼ heaping cup, Pecorino Romano cheese, shredded
  • ¾ teaspoon Coarse Kosher Salt
  • ½ teaspoon Onion Powder
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Freshly Ground Pepper
  • ⅛ teaspoon Cayenne Pepper
  • 1 tablespoon Olive Oil
Instructions
  1. Preheat oven to 350ºF.
  2. In a large bowl, mix all ingredients together. Do not over mix.
  3. From meatballs about the size of golfballs. (Approximately 15 meatballs)
  4. In a large oven proof skillet, over medium heat add olive oil.
  5. Brown meatballs on all sizes.
  6. Place skillet with meatballs in oven and bake for 10 minutes.
