Guacamole with Greek Yogurt

Guacamole with Greek Yogurt
  • 3 Avocados, fruit removed
  • 2 small Limes, zested and juiced
  • 1 Roma Tomato, seeded and finely minced
  • 1 Jalapeno, seeded and finely minced
  • 1 Clove Garlic, minced
  • 1 tbsp Cilantro, minced
  • ½ cup Low fat or non fat Greek Yogurt (Cabot is my favorite)
  • ¼ cup minced red onion (about ⅛th of a medium onion)
  • Salt and Pepper
  1. In a medium mixing bowl, add avocado, lime zest and juice, tomato, jalapeƱo, garlic,cilantro, yogurt and onion.
  2. Mash and mix with a spoon until it is only semi chunky.
  3. Salt and pepper to taste.
Makes 2½ cups
