<p>Do you want an AMAZING and easy dessert?  One that doesn&#8217;t have to look perfect? Here you have it.</p>
<p>But hurry up before peach season is over.</p>
<p>The sweet folks at the <a href="http://gapeaches.org/">Georgia Peach Council</a>, courtesy of <a href="http://gapeaches.org/growers/lane-southern-orchards">Lane</a> and <a href="http://gapeaches.org/growers/pearsons-of-pearson-farm">Pearson Farms</a> sent me the MOST DELICIOUS peaches I have ever had. I buy peaches all the time at the grocery store, but these were a million times better. Maybe the ones I get at the store aren&#8217;t Georgia Peaches. Regardless, they were the best peaches I have ever had&#8230;.juicy and sweet..just perfect.</p>
<p>I&#8217;ve had bunches of galettes in my day, but I knew I wanted to use my fresh Georgia Peaches. I also wanted to add some tartness..so I threw some cherries in too.</p>
<p>Can I get an AMEN?!?!?!?</p>

<p>Oh and my crust&#8230;forgettaboutit. Full of flavor because of the butter and ultra flaky because of the shortening. I think it&#8217;s my best yet&#8230;defiantly a keeper!</p>
<p>You can take the super easy route and use a pre-made pie crust, but I advise against it..homemade crust is soooooooooooOOOOOOOOOO much better. However it does add more time to the process. So I suppose if you were in a rush, you could take the short cut.<br />
The trick to homemade crust is to make sure some of the butter chunks are still intact. The butter chunks = flaky goodness. See the butter in the in the photo below? That&#8217;s how you want your rolled out crust to look like.</p>
<p>I used vanilla sugar in my filling. Click<a href="http://www.thehungryhousewife.com/2012/01/how-to-make-vanilla-sugar.html"> here</a> to learn how to make it. If you don&#8217;t have any on hand, you can use just regular sugar.</p>

<li class="instruction" itemprop="recipeInstructions">Place a large cookie sheet in the oven and pre-heat to 400.(leave the cookie sheet in the oven)</li>

<li class="instruction" itemprop="recipeInstructions">Place flour,salt and sugar into a food processor fitted with a metal blade and pulse a few times until mixed.</li>
<li class="instruction" itemprop="recipeInstructions">Add all of the butter and pulse 5 or six more times.</li>
<li class="instruction" itemprop="recipeInstructions">Add shortening. Pulse until the mixture has pea sized butter and shortening balls in the dough.</li>
<li class="instruction" itemprop="recipeInstructions">Place the mixture into a bowl.</li>
<li class="instruction" itemprop="recipeInstructions">Sprinkle the water over the dough and using a spatula, mix the dough until it comes together.</li>
<li class="instruction" itemprop="recipeInstructions">Form the dough into a disc and place on floured plastic wrap.</li>
<li class="instruction" itemprop="recipeInstructions">Wrap tightly.</li>
<li class="instruction" itemprop="recipeInstructions">Place in the refrigerator for 1 hour to overnight.</li>

<li class="instruction" itemprop="recipeInstructions">In a medium bowl, mix together vanilla sugar, cinnamon and corn starch.</li>
<li class="instruction" itemprop="recipeInstructions">In a large bowl, mix together the peaches, cherries and lemon juice.</li>
<li class="instruction" itemprop="recipeInstructions">Sprinkle the sugar/corn starch mixture over the peaches/cherries and stir until all incorporated.</li>
</ol>

<ol>
<li class="instruction" itemprop="recipeInstructions">Place the dough onto a floured piece of parchment paper.</li>
<li class="instruction" itemprop="recipeInstructions">Roll the dough into a 15&#8243; circle (approximate size).</li>
<li class="instruction" itemprop="recipeInstructions">Place the peach mixture into the middle of the dough circle, leaving a 2&#8243; rim of dough.</li>
<li class="instruction" itemprop="recipeInstructions">Fold the dough up over the sides of the peaches.</li>
<li class="instruction" itemprop="recipeInstructions">Brush the top of the dough with the egg wash and sprinkle with the Demerara sugar.</li>
<li class="instruction" itemprop="recipeInstructions">Keep the galette on the parchment paper and slide it onto the cookie sheet that is preheated in the oven.</li>

<p>It&#8217;s not officially fall yet, so I am still allowed to post a yummy summer dessert. But hurry because berry season is almost out the window.<br />
This dessert is about as healthy as you can get on the Hungry Housewife. Berries and yogurt. There <em>is</em> a nice buttery sweet tart there too, but I mean the berries totally make it a fat free dessert. Work with me here people.</p>

<li class="ingredient" itemprop="ingredients">1 stick (1/2 cup) cold unsalted butter, cut into &frac12;-inch cubes</li>
<li class="ingredient" itemprop="ingredients">1 large egg yolk</li>
<li class="ingredient" itemprop="ingredients">1&frac12; tablespoons ice water</li>
<li class="ingredient" itemprop="ingredients">1 egg white, lightly beaten(for brushing the dough while in the oven)</li>

<ol>
<li class="instruction" itemprop="recipeInstructions">Whisk together flour, sugar, and salt in a large bowl.</li>
<li class="instruction" itemprop="recipeInstructions">Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal with some small (roughly pea-size) butter lumps.</li>
<li class="instruction" itemprop="recipeInstructions">Beat together yolk and water with a fork and stir into flour mixture until combined well.</li>
<li class="instruction" itemprop="recipeInstructions">Gently knead mixture in bowl with floured hands just until a dough forms.</li>
<li class="instruction" itemprop="recipeInstructions">Turn out dough onto a lightly floured surface and knead gently 4 or 5 times more.</li>
<li class="instruction" itemprop="recipeInstructions">Form dough into a ball, then flatten into a 5-inch disk.</li>
<li class="instruction" itemprop="recipeInstructions">Chill, wrapped tightly in plastic wrap, at least 1 hour</li>
<li class="instruction" itemprop="recipeInstructions">Preheat the oven to 400.</li>
<li class="instruction" itemprop="recipeInstructions">Flour your counter again.</li>
<li class="instruction" itemprop="recipeInstructions">Roll the dough out into a circle, large enough to fit in a 9&#8243; tart pan, about 10-11 inches.</li>
<li class="instruction" itemprop="recipeInstructions">Place the dough in a 9&#8243; tart or pie pan.</li>
<li class="instruction" itemprop="recipeInstructions">Lightly prick the bottom of the tart with a fork.</li>
<li class="instruction" itemprop="recipeInstructions">Line the tart with foil and fill with pie weights.</li>
<li class="instruction" itemprop="recipeInstructions">Bake for 8 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Remove the foil and weights.</li>
<li class="instruction" itemprop="recipeInstructions">Reduce heat to 350.</li>
<li class="instruction" itemprop="recipeInstructions">Bake for an additional 25 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Remove from oven a brush with beaten egg white and bake for an additional 3 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Remove from oven and allow to cool completely.</li>

<p>So by now we have all established that I am a slacker. &nbsp;I am ok with it, I really am.<br />All the cool bloggers have posted their awesome Thanksgiving spreads in advance.<br />Well, not me. Last year while preparing Thanksgiving, it did not even dawn on me to document my 3 day Thanksgiving cooking marathon. I will try to be more prepared this year to take pretty little photos, so next year you can come here in advance and get yummy recipes. K?<br />So in true slacker style, I am going to post a repeat dessert.<br />But you must make it for Thanksgiving, or just any-other random Thursday.<br />It is the Cranberry Walnut Tart. My husband says it is his favorite dessert of all times, and last year he about cried when I left the leftovers at my Moms house for Christmas.<br />Its easy and can be made a day in advance.<br />*on a side note, many of you have contacted me saying you are not able to print my recipes using the link I provide. I am sorry for this. Turns out my printable site has been &#8220;suspended&#8221; by Google for violation of terms of service&#8221;. Hmmmm, not sure what that is all about. Well, I am hear to tell you that it is not so inocent when we close the fridge doors. 
<div>One night, after I had closed up the kitchen for the night, I put the kids to bed and slipped into a slumber.  The next morning I woke up and made my necessary pot of coffee.  I opened the fridge to get my creamer out and noticed something different, something very different. A dessert I had not seen before was in-front of me. Knowing very well my husband does not cook/bake and my kids had certainly not become culinary geniuses at the young ages of 5 and 7, there was only one explanation&#8230;. my fridge had become a literal red light district, a sexual underground if you will when the doors closed. Money was exchanged. Unspeakables happened. I dare not think of the dirty deeds that were done.  This dessert is proof. Remember my <a href="http://thehungryhousewife.blogspot.com/2010/05/mocha-tartand-my-attempt-at-acting.html">Mocha Tart</a> and my <a href="http://thehungryhousewife.blogspot.com/2010/10/white-chocolate-mini-pies.html">Mini Pies</a>? Two totally separate desserts. Well until last night that is. I think the mocha tart was Mr. Suave and the poor mini pies were the unsuspecting victims. The courting that must have went on is mind blowing.  Well I am glad my two desserts made happy sweet dessert love together. The result was heavenly.

<div style="text-align: center;">4 Ounces of Philadelphia Cream Cheese, softened</div>
<div style="text-align: center;">3/4 cup Heavy Cream</div>
<div style="text-align: center;">1/4 cup Sugar</div>
<div style="text-align: center;">3/4 Tbsp Instant Espresso Powder</div>
<div style="text-align: center;">1 Bag Semi-Sweet Chocolate Chips</div>

<div style="text-align: center;">In a medium sauce pan over medium heat, melt cream cheese.</div>
<div style="text-align: center;">Whisk in the heavy cream and sugar.</div>
<div style="text-align: center;">Add in the instant espresso powder and mix until combined.</div>
<div style="text-align: center;">Bring mixture to just under a boil(bubbles will be forming around the edges)</div>
<div style="text-align: center;">Place the chocolate chips in a medium bowl.</div>
<div style="text-align: center;">Pour the hot cream mixture over the chocolate chips and let sit 5 minutes without stirring.</div>
<div style="text-align: center;">After 5 minutes, whisk the chocolate until smooth.</div>
<div style="text-align: center;">Pour into your pie crust and place in the refrigerator for a few hours or overnight until set.</div>

<div>4 oz cream cheese, mixed until smooth</div>
<div>3 Tbsp Sugar<br />4 oz White Chocolate, chopped</div>

<div>In a small saucepan, bring about 1 inch of water to a boil. Make a double boiler by placing a bowl on top on the saucepan with the boiling water so it fits snuggle over the top without touching the water.</div>
<div>Put the white chocolate in the bowl, and stir until completely melted. set aside.</div>
<div>In a medium bowl, combine the cream, sugar with an electric mixer and vanilla until it starts to thicken.</div>
<div>Add the softened cream cheese in 3 parts, mixing well in-between each addition.</div>
<div>Whip to a whip creamed consistency.</div>
<div>Fold in the melted chocolate.</div>
</div>
<div>Spoon onto the chilled pie and place in the refrigerator for 1 hour.</div>

<div>6 pre-made mini graham cracker crusts</div>
<div>1 egg white, beaten</div>
<div>1 cup heavy cream</div>
<div>4 oz cream cheese, mixed until smooth</div>
<div>4 oz White Chocolate, chopped</div>
<div>1 tsp vanilla</div>
<div>6 Tbsp Nutella</div>
<div>Fresh Berries for garnish</div>

<div>Preheat oven to 375</div>
<div>Brush the graham cracker crusts with beaten egg white and bake for 5 minutes. Remove the </div>
<div>from oven and allow them to cool completely.</div>
<div>In a small saucepan, bring about 1 inch of water to a boil. Make a double boiler by placing a bowl on top on the saucepan with the boiling water so it fits snuggle over the top without touching the water.</div>
<div>Put the white chocolate in the bowl, and stir until completely melted. set aside.</div>
<div>In a medium bowl, combine the cream, sugar with an electric mixer and vanilla until it starts to thicken.</div>
<div>Add the softened cream cheese in 3 parts, mixing well in-between each addition.</div>
<div>Whip to a whip creamed consistency.</div>
<div>Fold in the melted chocolate.</div>
<div>Cover and place the chocolate, cream cheese mixture in the fridge for about one hour.</div>
<div>Place one tablespoon of the Nutella in each of the tarts.</div>
<div>Place the chocolate mixture in a zip lock bag, snip off the edge and pipe it into the mini pie shells.</div>
<div>Garnish with fresh berries.</div>
<div>Refrigerate until ready for serving.</div>
