<p>Sometimes you just need to fry something. It&#8217;s a necessary evil.<br />
Sure frying isn&#8217;t good for you, well neither is picking your nose, but I see people do that all the time. We will call it even.</p>
<p>I needed to get my brain working overtime because I wanted to created a recipe for the Johnsonville <a href="http://www.facebook.com/JohnsonvilleKitchens/app_132197500240171">Wake Up To Johnsonville Photo Recipe Contest</a>.</p>
<p>My husband might have had a little influence on this one. He always comes up with some whacked out food ideas. He wanted these on a stick, but the sausage links are just too thin for that, so I decided on the balls.</p>
<p>They are mighty tasty, mighty tasty indeed! Certainly not your everyday breakfast meal, but they sure are a nice delight every once in a while&#8230;.you know, when you need a little oil in your life.</p>

<li class="ingredient">1 package Johnsonville Sausage Patties(8 ct), original recipe</li>
<li class="ERSeparator">Batter</li>
<li class="ingredient">1 1/2 cups Bisquick</li>
<li class="ingredient">1 tablespoon Sugar</li>
<li class="ingredient">1/4 teaspoon Cinnamon</li>
<li class="ingredient">1/2 teaspoon Vanilla Extract</li>
<li class="ingredient">1 Egg</li>
<li class="ingredient">1/2 cup Milk + 2 Tablespoons</li>
<li class="ERSeparator">Syrup</li>
<li class="ingredient">1 /2 cup Pure Maple Syrup</li>
<li class="ingredient">1 tablespoon Butter</li>
<li class="ingredient">2 tablespoon Heavy cream</li>

<li class="instruction">Place about 2&#8243; oil in a sauce pan and heat to 350</li>
<li class="instruction">Place the sausage patties in a medium bowl.</li>
<li class="instruction">Break them up so they are no longer formed.</li>
<li class="instruction">Reform into about 22 1 1/2 teaspoon sized balls.</li>
<li class="instruction">Place the sausage balls in a large skillet over medium heat and cook for about 15 minutes, turning often.</li>
<li class="instruction">Remove and drain on a plate lined with paper towels.</li>
<li class="instruction">In a medium bowl, mix together the bisquick ,sugar and cinnamon.</li>
<li class="instruction">Whisk in the vanilla, egg and milk until smooth.</li>
<li class="instruction">Pick up a cooked sausage ball with a toothpick and dip into the batter, completely cover the sausage with batter.</li>
<li class="instruction">Carefully lower into the oil and fry for about 1- 1 1/2 minutes or until golden brown.</li>
<li class="instruction">Remove and drain on a paper towel lined plate</li>

<li class="instruction">Pour the maple syrup into a small bowl and add the butter.</li>
<li class="instruction">Microwave for about 45 seconds.</li>
<li class="instruction">Remove and stir to incorporate the syrup and butter.</li>
<li class="instruction">Add the heavy cream and stir.</li>

<li class="ingredient">1/2 cup Italian Style Bread Crumbs</li>

<li class="ingredient">1/4 teaspoon pepper</li>
<li class="ingredient">1 teaspoon dried rosemary</li>
<li class="ingredient">1/2 teaspoon garlic powder</li>
<li class="ingredient">1 egg, beaten</li>
<li class="ingredient">1 tablespoon mustard (preferably Dijon)</li>
<li class="ingredient">Non-Stick cooking spray</li>
<li class="ERSeparator">For Spinach</li>
<li class="ingredient">1 bunch fresh spinach</li>
<li class="ingredient">2 tablespoons butter</li>
<li class="ingredient">1/8 teaspoon salt</li>
<li class="ingredient">1/2 teaspoon pepper</li>
<li class="ERSeparator">For Carrots</li>
<li class="ingredient">16 oz pre peeled baby carrots</li>
<li class="ingredient">4 tablespoons butter</li>
<li class="ingredient">1/4 cup brown sugar</li>
<li class="ingredient">3 tablespoons water</li>

<li class="instruction">To Make the Pork</li>
<li class="instruction">Preheat the oven to 350.</li>
<li class="instruction">Line a baking sheet with parchment paper or foil.</li>
<li class="instruction">In a shallow dish, like a pie plate, mix together the bread crumbs, salt,pepper, dried rosemary and garlic powder.</li>
<li class="instruction">In another shallow dish, mix together the egg and the mustard.</li>
<li class="instruction">Coat the pork with the egg mixture then coat with bread crumbs</li>
<li class="instruction">Place the pork on the prepared baking sheet and spray the top with non-stick cooking spray.</li>
<li class="instruction">Bake for 35 minutes or until the internal temperature reaches 145.</li>
<li class="instruction">To make the Spinach</li>
<li class="instruction">Wash and dry the spinach and remove the long stems.</li>
<li class="instruction">In a large skillet over medium heat melt the butter.</li>
<li class="instruction">Add the spinach, salt and pepper, cook for 3 minutes or until spinach is wilted.</li>
<li class="instruction">To make the Carrots</li>
<li class="instruction">Place the carrots in a pot, cover with water, cover with a lid and boil for 8-10 minutes. Drain.</li>
<li class="instruction">In the pan that you cooked the carrots, melt the butter and add the brown sugar and</li>
<li class="instruction">water.</li>
<li class="instruction">Add the carrots back in and cook for an additional 4-5 minutes.</li>

<p>Johnsonville sent me some goodies to create a recipe. I had the hardest times trying to choose just one of them that was swirling in my mind.<br />
I went with easy. Baseball has been keeping me busy, so time doesn&#8217;t seem to be on my side these days.<br />
So here is my easy recipe that incorporates the delicious <a href="http://www.johnsonville.com/products/four-cheese-italian-sausage.html">Johnsonville Italian 4 Cheese</a> sausage.<br />
You know why I choose the 4 cheese variety? When I was a kid, I loved loved loved those hot dogs with the &#8220;cheese&#8221; inside them. Oh, man I loved those. I used to eat them uncooked. The thought makes my stomach turn these days.<br />
Anyhooooo, here is the recipe. Everyone enjoyed it. It&#8217;s easy, full of flavor and it fills you up!</p>

<li class="ingredient">1/4 cup + 1 tablespoon prepared jarred Pesto (5 tablespoons)</li>
<li class="ingredient">1/4 cup Kraft Parmesan Cheese</li>
<li class="ingredient">5 Basil leaves, chopped</li>
<li class="ingredient">1 tablespoon Olive Oil</li>

<li class="instruction">In a medium bowl, mix together the ricotta cheese, pesto,parmesan cheese,basil and pasta water. Set aside</li>
<li class="instruction">In a large skillet with a lid, cook the sausage per package directions.</li>
<li class="instruction">Remove the sausage and set aside. Do not clean out the skillet.</li>
<li class="instruction">In the same skillet you cooked the sausage, add the olive oil and onions, cook over medium heat for 5 minutes, until the onions become soft.</li>
<li class="instruction">Add the tomatoes and cook for an additional 5 minutes or until the tomatoes begin to pop.</li>
<li class="instruction">Add the garlic and cook for 1 minute.</li>
<li class="instruction">Slice the sausage into medallions and add to skillet with the onions, tomatoes and garlic.</li>
<li class="instruction">Add the cooked pasta and ricotta mixture. Mix together.</li>
<li class="instruction">Sat and pepper to your desired taste.</li>

<p>I was asked by <a href="http://www.sweetbaysupermarket.com/">Sweetbay Supermarket</a> to develop a savory strawberry Heart Healthy Recipe for <a href="http://www.heart.org/HEARTORG/">National Heart Month</a>, and pork and strawberry immediately come to mind.</p>
<p>Let me tell you how amazing this recipe is&#8230;Really REALLY amazing! Once you slather the pork chop with the strawberry sauce, it is pure heaven.</p>

<li class="instruction">Pat the pork chops dry with paper towel. Season with rosemary, salt and pepper.</li>
<li class="instruction">In a large skillet over medium heat, add the olive oil and butter.</li>
<li class="instruction">Sauté pork chops for 5 minutes per side or until the internal temperature reaches 145.</li>
<li class="instruction">Allow to sit for 3 minutes prior to cutting.</li>
<li class="instruction">Serve with Balsamic Strawberry Sauce</li>

<li class="instruction">In a medium saucepan, over medium heat, add the strawberries,brown sugar, vinegar,rosemary,salt and pepper. Cook for 10 minutes, stirring occasionally.</li>

<p>When <a href="http://www.sweetbaysupermarket.com/home.jsp">Sweetbay Supermarket</a> came to me to develop recipes for them for a new program they were launching I was so excited.</p>
<p>They wanted to launch a challenge to all of their shoppers. What is the challenge you may ask?</p>
<p><strong>Feed a family of 4 for $10 or less.</strong></p>
<p>I was up for it, ohhhh, yes I was.<br />
You see I am not much of a bargain shopper, coupon cutter or price watcher. Ha, I don&#8217;t even meal plan. Shocking I know, coming form a food blogger, you would think I was super organized in the grocery shopping department. But sadly, I am not. Well, that is until now.</p>
<p>Having to develop recipes, and price specific recipes at that, forced me to get organized and count every penny. Normally I would go to the grocery store about 4 times a week because I would always change my mind on what I was cooking or I had forgotten something.<br />
Having a recipe prepared ahead of time not only saved me HUGE amounts of money at the grocery store, it also saved me time.</p>
<p>So why did <a href="http://www.sweetbaysupermarket.com/home.jsp">Sweetbay Supermarket</a> want to come up with this <a href="http://www.sweetbaysupermarket.com/content.jsp?pageName=10DollarMeals">challenge</a>, $10 Meals?<br />
They believe you can feed a family of four a delicious, nutritious and quick meal for $10 or less.<br />
I am here to tell you that you can!<br />
Over the next 13 weeks, I will be sharing the $10 meals I created for Sweetbay Supermarket.<br />
The trick to getting a delicious meal for under $10 is to purchase things that are on sale, to use store brand whenever possible, to take some shortcuts(using prepared items, such as the stuffing) and to make it simple!<br />
You will notice that all of the recipes are very easy to cook and have minimal ingredients. Let&#8217;s face it, we are all busy and most of the time we don&#8217;t have 2 hours to devote to preparing dinner.</p>

<li class="ingredient">1 teaspoon olive oil</li>
<li class="ingredient">1 red apple, chopped into small pieces</li>
<li class="ingredient">1 pear, chopped into small pieces</li>
<li class="ingredient">1/3 cup dried cranberries</li>
<li class="ingredient">1/8 teaspoon ground cinnamon</li>
<li class="ingredient">1 tablespoon butter</li>
<li class="ingredient">1 6 oz. Box Hannaford Pork Stuffing Mix, cooked to package directions</li>

<li class="instruction">Season the pork chops with the pepper, salt, garlic powder and onion powder.</li>
<li class="instruction">Add the oil to a large skillet over medium heat.</li>
<li class="instruction">Add the pork chops and cook for 3 minutes per side or until no longer pink in the</li>
<li class="instruction">middle and set aside.</li>
<li class="instruction">In the same skillet, add the butter, apple, pear, cranberries and cinnamon. Cook for about 5 minutes or until the fruit is softened.</li>
<li class="instruction">Add the pork chops and any juices that have accumulated on the plate back into the pan. Toss with the fruit and serve.</li>
<li class="instruction">Serve with the stuffing</li>

<p>I think one of the tricks to a perfect piece of pork it to Brine it. Brining tenderizes the meat and gives it a delicious flavor. If you plan a little bit ahead, you will never have another dry piece of pork again! Did you know that the internal cooking temp for pork was just recently lowered to 145 degrees?</p>
<p>Pork is a great alternative meat to turkey on Thanksgiving and Christmas. I know I spend about a week preparing Thanksgiving dinner and I just don&#8217;t have the time to do it all again for Christmas. <li class="ingredient">1 tablespoon Dijon Mustard</li>
<li class="ingredient">1 cup Italian Bread Crumbs</li>
<li class="ingredient">1 teaspoon Rosemary</li>
<li class="ingredient">1/2 teaspoon Garlic Powder</li>
<li class="ingredient">1 teaspoon Onion Powder</li>
<li class="ingredient">Pinch Cayenne Pepper</li>
<li class="ingredient">1/4 teaspoon Dry Mustard</li>

<div class="ERSeparator">TO BRINE PORK</div>
<ol>
<li class="instruction">In a gallon zip lock bag, dissolve the salt and sugar.</li>
<li class="instruction">Add pork to the bag, squeeze out all of the air and place in the refriderator for 4 to 24 hours.</li>
<li class="instruction">Remove the pork and rinse with water, pat dry.</li>
<li class="instruction">Preheat the oven to 350</li>
</ol>
<div class="ERSeparator">SEASONING THE PORK</div>
<ol>
<li class="instruction">In a shallow dish ( like a pie plate), mix the egg and mustard.</li>
<li class="instruction">In another shallow dish, mix together the bread crumbs, rosemary,garlic powder,onion powder,onion powder, cayenne powder, dry mustard, salt and pepper.</li>
<li class="instruction">Coat the pork in the egg mixture. Let the excess drip off.</li>
<li class="instruction">Roll the pork in the bread crumb mixture and make sure the entire piece is coated well.</li>
<li class="instruction">Place in a baking dish lined with non-stick foil.</li>
<li class="instruction">Lightly spray the top of the pork with cooking spray.</li>
<li class="instruction">Bake for about 40 minutes or until the internal temperature is at least 145.</li>

I have a roast in it as we speak!<br />Let me tell you about these bad ass little pork chops. They are so delicious and packed with flavor. They literally fall apart. BONUS- takes less than 5 minutes to prep.<br />We all know kids are picky, right? Well my kids were begging for 2nd and thirds( I am NOT exaggerating).The night I made them, I emailed the recipe to my BFF Bobbi and she was shocked I used canned soup. I think canned soup totally has its place in the culinary world. A white trash culinary world it may be, but I am not predigest. I never said I <i>WASNT</i> white trash. Pftt, you should see my roots right now.</p>
<p>SLOW COOKER PORK CHOPS<br /><a href="https://sites.google.com/site/hungryhousewifeprinterversion/slow-cooker-pork-chops">Printer Friendly Version</a></p>
<p>4 thick cut pork chops (bone-in or boneless)<br />1 can Cream of Chicken Soup with herbs (or without herbs)<br />1 package Hidden Valley Dry Ranch Dressing Mix<br />4 cloves garlic, minced<br />1/4 cup white wine<br />1/4 cup chicken stock<br />Pepper</p>
<p>In a medium bowl, mix together cream of chicken soup, dry ranch mix, garlic, wine and chicken stock. Set aside.<br />Sprinkle pork chops with pepper (NO SALT..there is enough salt in the other ingredients)<br />Place the pork chops in the slow cooker.<br />Pour the soup mix over the pork chops.<br />Cover and cook on high for 4 hours or low for 6 to 7 hours.</p>

So if you are Cuban, I am sure this is not the authentic way to make Roast Pork with Black Beans and Yellow Rice, but it my way and it tastes damn good (and it takes like the Cuban restaurants).And sorry about the photo, the food wouldn&#8217;t corporate and was being shy(kinda of a blah picture)</p>
<div><strong>ROAST PORK WITH BLACK BEANS AND YELLOW RICE</strong></div>
<div><strong>PORK</strong></div>
<div>4-5 pound Boston Butt</div>
<div><a href="http://www.goya.com/english/products/product.html?prodCatID=4&amp;prodSubCatID=7">Adobo Seasoning </a>(Goya Brand)</div>
<div>3/4 cup <a href="http://www.cubanfoodmarket.com/mm5/merchant.mvc?Screen=PROD&amp;Store_Code=CFM&amp;Product_Code=MOJ03959&amp;Category_Code=11204">Mojo Criollo</a></div>
<div>Preheat oven to 350</div>
<div>Generously season meat with Adobo Seasoning. Place in a dutch oven(or large pot w/ lid) along with the mojo criollo, cover and cook per package directions on meat. I think it is 22-26 minutes per pound.<strong>YELLOW RICE</strong></p>

<div>1 Package <a href="http://www.cubanfoodmarket.com/mm5/merchant.mvc?Screen=PROD&amp;Store_Code=CFM&amp;Product_Code=MOJ03959&amp;Category_Code=11204">Vigo Yellow Rice</a> (16 oz. for a family of 4)</div>
<div>Mojo Criollo</div>
<div>Cook per package directions..HOWEVER..dont use all water like the package calls for, use 1/2 water and 1/2 Mojo Criollo.</div>
<div>The rice already has wonder flavor, but using 1/2 water and 1/2 mojo gives it a great kick!</div>
<div><strong>BLACK BEANS</strong></div>
<div><strong>2</strong> cans <a href="https://www.wegmans.com/webapp/wcs/stores/servlet/ProductDisplay?langId=-1&amp;storeId=10052&amp;productId=376646&amp;catalogId=10002&amp;krypto=QJrbAudPd0vzXUGByeatog%3D%3D&amp;ddkey=http:ProductDisplay">Goya Black Beans</a></div>
<div>1 Tbsp Olive oil</div>
<div>1 onion, diced</div>
<div>2 garlic cloves, minced</div>
<div>2 Tbsp cumin</div>
<div>2 bay leaves</div>
<div>1/4- 1/2 cup <a href="http://www.amazon.com/Goya-Criollo-Marinade-24-Ounce-Bottle/dp/B00032CV8O">Goya mojo criollo</a></div>
<div>In a medium sauce pan over medium heat, saute onions in olive oil for about 10 minutes. Add Garlic and cook for 2 minutes more. Add cumin. Add Beans,bay leaves and mojo.</div>
<div>Simmer for about 10 minutes, until beans are soft.</div>
<div>Oh and don&#8217;t forget the Crystal Hot sauce! NO Cuban meal is complete without it!!!</div>

A few month ago the ceramic liner got a crack in it, so I had to toss it!<br />I was totally fine with my loss..because that meant I could get a new shiny toy! Waho!!!!<br />I decided on the All-Clad 6 1/2 Qt. slow cooker! Its bad ass!!! I love shiny stuff! Especially diamonds! What??Did I say diamonds..husband are you reading this??? Hint Hint!!!<br />Anyhooooo&#8230;I love to cook in my slow cooker. Cant get much simpler than throwing all the junk in there in the morning and it being done in 8 hours without me having to do any work!!! Love it.</p>

<p>I decided on some BBQ shredded Beef with Whole Grain Buns!<br />Yum!<br />I made these over the weekend. Too bad <a href="http://pickypalate.blogspot.com/">Jenny at the Picky Palate </a>didn&#8217;t post her <a href="http://pickypalate.blogspot.com/2008/09/slide-on-over.html">BBQ sauce </a>recipe until today, cause I would have loved to have tried it! It looks soooo much better than the Bottled junk!</p>
<p>Here&#8217;s what you do..</p>
<p>3 1/2 lb organic chuck Roast<br />1 large bottle of BBQ sauce (or if your fancy..make your own)<br />Garlic Powder<br />Onion Powder<br />Salt<br />Pepper<br />A gulg of vinegar</p>
<p>Rub the meat with the garlic powder, onion powder,salt and pepper. But the meat into the crock pot and cover it with the BBQ sauce and dump the vinegar in. SET IT AND FORGET IT!!<br />Set it on high for 7 hours.<br />Take the meat out after hour 7.<br />Shred it and get rid of all the fatty stuff! (Yucky)<br />Put it back into the crock pot and cook it on low for another hour!!<br />Enjoy</p>

<div align="left"><strong>For the pork</strong><br />2 pork tenderloins<br />4 tablespoons Dijon mustard ( I used Grey Poupon Original Dijon)<br />1 tablespoon oil</div>
<div align="left"><strong>Sauce</strong></div>
<div align="left">2 tablespoons butter<br />2 shallots, minced<br />1 cup Marsala wine<br />1 tablespoon Dijon mustard (I used Grey Poupon Harvest Coarse Ground)<br />1 cup heavy cream </div>
<div align="left">Salt and Pepper to taste</div>

<div align="left"><strong>Directions</strong></div>
<div align="left">Preheat oven to 350 degrees F (175 degrees C). Coat pork tenderloins generously with mustard. Oil a 9&#215;13 inch baking dish.<br />Heat oil in a large skillet over medium-high heat. Arrange tenderloins in pan, and brown the meat. Turn to brown evenly. Transfer meat to prepared baking dish.<br />Bake in preheated oven for 20 minutes. Turn, and continue cooking for 20 minutes, or until desired doneness.<br />Meanwhile, melt butter over medium heat in the same pan used to cook the pork. Cook shallots in butter until soft. Stir in Marsala, mustard, and cream, and cook until volume of liquid is reduced by half.<br />Slice pork, and place on a serving dish. Spoon sauce over meat, and serve.</div>
