Hi all, I hope you had a wonderful Holiday Season. Mine, like I am sure everyone else’s was packed full and honestly is a bit of a blurr. I spent the last half of my Birthday(Christmas Eve) and into Christmas day cleaning up after my daughter who had the stomach virus. Poor little thing..who wants to be puking on Christmas? And then she gave it to me the day after Christmas..good times..good times. Let me just tell you that Red Robin tastes so much better going in than coming back out. ugggg

New Years Eve was great. My husband decided he wanted to have a party last minute. And by last minute, I mean the day before. Gotta love em’.
If you read this post, you know that none of my clothes fit me, so I began stressing out on what I was going to wear for the party. I mean, people usually get all fancied up for New Years.
So I decided to make our New Years party a PAJAMA party! Everyone had to come in the P.J’s. Sure, I still put on some make up, but let me tell you how comfy I was!!!!
I had too much to drink…doesn’t happen often, but when it does….good lord. Diet Coke and Cherry Flavored Vodka is VERY easy to chug down.
I was dancing all night long. One low point was, dancing to Beastie Boys- Brass Monkey with my dog under one arm and a wooden spoon in the other hand as a microphone.
I had fun

I am wishing each and everyone of you a Happy 2012.
I can’t thank you all enough for continually stopping by my blog and reading what I have to say. You all are very much appreciated. You make doing what I do worth every calorie!!!!

So onto my top 10 recipe/posts of 2011 (according to Google Analytics)

Have you tried my Roast Pork with Black Beans and Yellow rice yet? No? Shame on you..I don’t want to be your friend anymore( Yeah, I am at home with sick kids and a sick self, so I am feeling a bit childish!)

Well if you did make it you probably had some left over pork. And here is an interesting way to use it up.

So you know my husband, the one who cant boil water, the one who doesn’t even grill?? Uh Huh, that’s the one. He said many moons ago he ate “Cuban Pizza” at a baseball game. Well it sounded totally disgusting me me. But I will give anything a try once(ok, well maybe not anything, but you get the picture). Cubans..no not the people..the sandwich is another Tampa food. The Wikipedia definition is… a sandwich created by Cuban workers, either in Cuba or in the immigrant community of Ybor City in Tampa Florida. Later, Cubans brought it to other communities in southern Florida, particularly Key West and Miami where it is very popular. The sandwich is made with ham, roasted pork, Swiss cheese, pickles, mustard, and sometimes salami on Cuban bread.

So Cuban Pizza it was and I just so happened to pick up some pizza dough from the bakery, so I was ready to go.

Let me tell you how wrong it felt spreading mustard over a pizza dough! I was actually grossed out. But with an open mind, I continued……

CUBAN PIZZA

1 Pizza dough

Mustard

A bunch of Mozzarella and some Swiss cheese

Dill Pickles

Left Over shredded Roast Pork

Adobo Seasoning

Preheat your oven to 500 and put your pizza stone on the bottom rack. Preheat for a good 30 minutes.

Roll out your pizza dough.

Spread is with a nice helping of mustard( I know I know..just trust me on this one)

Cover it with the mozzarella and Swiss cheese

Put on the pork and pickles

Sprinkle with a bit of Adobo Seasoning.

Bake in the over for about 6-8 minutes or until the crust is browned.

DAMN IT, my husband was right(again), it was delicious!!!!

Even though my children don’t like rice..I have to do my part as a responsible parent and cook it and put it on their plate! Do they eat it?? Hell no! So needless to say I often have a bunch of leftovers. I was left with exactly 2 cups of brown rice. I’ll throw it away..then I heard of voice of my past(mother)..”eat your food, there are starving children in China.” SO it sat there on the stove until I figured out its fate!

Ah ha..RICE PUDDIN!

Oh wait I cook all my rice and couscous in chicken stock(gives it much more flavor). Oh no I didn’t..not tonight. I used my last drop of chicken stock on my Chicken Piccata. So I used plain water to cook the rice..so there was a green light for the Rice Puddin!!
