<p>I was asked by <a href="http://www.sweetbaysupermarket.com/">Sweetbay Supermarket</a> to develop a savory strawberry Heart Healthy Recipe for <a href="http://www.heart.org/HEARTORG/">National Heart Month</a>, and pork and strawberry immediately come to mind.</p>
<p>Let me tell you how amazing this recipe is&#8230;Really REALLY amazing! Once you slather the pork chop with the strawberry sauce, it is pure heaven.</p>
<p>I cooked these on 2 Tv Segments.</p>

<ol>
<li class="instruction">Pat the pork chops dry with paper towel. Season with rosemary, salt and pepper.</li>
<li class="instruction">In a large skillet over medium heat, add the olive oil and butter.</li>
<li class="instruction">Sauté pork chops for 5 minutes per side or until the internal temperature reaches 145.</li>
<li class="instruction">Allow to sit for 3 minutes prior to cutting.</li>
<li class="instruction">Serve with Balsamic Strawberry Sauce</li>

<li class="instruction">In a medium saucepan, over medium heat, add the strawberries,brown sugar, vinegar,rosemary,salt and pepper. Cook for 10 minutes, stirring occasionally.</li>
<li class="instruction">Reduce heat to low and cook for an additional 5-10 minutes, stirring occasionally or until the sauce becomes thick.</li>

<li class="ingredient">1 Egg White, beaten</li>
<li class="ingredient">Peanut Oil for frying</li>
<li class="ingredient">Powdered Sugar for Garnish</li>

<li class="instruction">In a medium pot, heat about 4 inches of peanut or canola oil to 350.</li>
<li class="instruction">In a small bowl, mix cream cheese and sugar together until smooth.</li>
<li class="instruction">Flour your work surface.</li>
<li class="instruction">Roll each biscuit into a 8 inch circle.</li>
<li class="instruction">Place 2 table spoons of the cream cheese mixture onto the middle of the biscuit circle.</li>
<li class="instruction">Place 1 1/2 tablespoons of the guava preserves in the biscuit circle.</li>
<li class="instruction">Brush some egg white onto the outer edge of the biscuit.</li>
<li class="instruction">Fold the biscuit over.</li>
<li class="instruction">Seal it with or fork or firmly pinch the edges together.</li>
<li class="instruction">Fry in batches of 2 for about 45 seconds to 1 minute or until golden brown.</li>
<li class="instruction">Drain them on paper towels.</li>
<li class="instruction">Sprinkle with powdered sugar.</li>

<p>It&#8217;s not officially fall yet, so I am still allowed to post a yummy summer dessert. But hurry because berry season is almost out the window.<br />
This dessert is about as healthy as you can get on the Hungry Housewife. Berries and yogurt. There <em>is</em> a nice buttery sweet tart there too, but I mean the berries totally make it a fat free dessert. Work with me here people.</p>

<li class="ERSeparator">SWEET PASTRY DOUGH</li>
<li class="ingredient">1 1/3 cups all-purpose flour</li>
<li class="ingredient">2 tablespoons sugar</li>
<li class="ingredient">1/4 teaspoon salt</li>
<li class="ingredient">1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch cubes</li>
<li class="ingredient">1 large egg yolk</li>
<li class="ingredient">1 1/2 tablespoons ice water</li>
<li class="ingredient">1 egg white, lightly beaten(for brushing the dough while in the oven)</li>
<li class="ERSeparator">BERRIES</li>
<li class="ingredient">5 1/2 cups mixed berries, such as strawberries(sliced), blackberries, blueberries and raspberries</li>
<li class="ingredient">1 1/4 cup vanilla flavored yogurt, Greek or regular</li>
<li class="ingredient">1 tablespoon agave nectar</li>

<div class="ERSeparator">FOR THE CRUST</div>
<ol>
<li class="instruction">Whisk together flour, sugar, and salt in a large bowl.</li>
<li class="instruction">Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal with some small (roughly pea-size) butter lumps.</li>
<li class="instruction">Beat together yolk and water with a fork and stir into flour mixture until combined well.</li>
<li class="instruction">Gently knead mixture in bowl with floured hands just until a dough forms.</li>
<li class="instruction">Turn out dough onto a lightly floured surface and knead gently 4 or 5 times more.</li>
<li class="instruction">Form dough into a ball, then flatten into a 5-inch disk.</li>
<li class="instruction">Chill, wrapped tightly in plastic wrap, at least 1 hour</li>
<li class="instruction">Preheat the oven to 400.</li>
<li class="instruction">Flour your counter again.</li>
<li class="instruction">Roll the dough out into a circle, large enough to fit in a 9&#8243; tart pan, about 10-11 inches.</li>
<li class="instruction">Place the dough in a 9&#8243; tart or pie pan.</li>
<li class="instruction">Lightly prick the bottom of the tart with a fork.</li>
<li class="instruction">Line the tart with foil and fill with pie weights.</li>
<li class="instruction">Bake for 8 minutes.</li>
<li class="instruction">Remove the foil and weights.</li>
<li class="instruction">Reduce heat to 350.</li>
<li class="instruction">Bake for an additional 25 minutes.</li>
<li class="instruction">Remove from oven a brush with beaten egg white and bake for an additional 3 minutes.</li>
<li class="instruction">Remove from oven and allow to cool completely.</li>
</ol>

<li class="instruction">In a large bowl, gently mix together the berries,yogurt and agave nectar</li>

<p>I am a sucker for all things LEMON. Lemon chicken, lemon pasta, lemon lotion..I could go on and on.<br />
But nothing screams summertime more than a nice refreshing Lemon Bar or some call the Lemon Squares. They have been one of my favs ever since I was a wee little girl.</p>
<p>I like to think they are healthy because a fruit<em> is</em> after all the first word. Totally a diet dessert. {cough-cough}</p>

<li class="ingredient">1 3/4 cups plus 3 tablespoons all-purpose flour</li>
<li class="ingredient">2/3 cup confectioners&#8217; sugar, plus more for garnish</li>
<li class="ingredient">1/4 cup cornstarch</li>
<li class="ingredient">3/4 teaspoon salt plus a pinch</li>
<li class="ingredient">4 eggs, lightly beaten</li>
<li class="ingredient">1 1/3 cups granulated sugar</li>
<li class="ingredient">1 1/2 teaspoons lemon zest</li>
<li class="ingredient">2/3 cup fresh lemon juice, strained</li>
<li class="ingredient">1/4 cup whole milk</li>
</ul>

<ol>
<li class="instruction">Line a 9 by 13-inch baking dish(bottom and sides) with non stick foil, or use regular foil sprayed with non-stick spray. Set pan aside.</li>
<li class="instruction">In a large bowl combine 1 3/4 cups of the flour, 2/3 cup of the confectioners&#8217; sugar, the cornstarch, and 3/4 teaspoon of the salt and mix thoroughly.</li>
<li class="instruction">Cut the 12 tablespoons of butter into small pieces and add to the flour mixture.</li>
<li class="instruction">Using your hands, 2 forks, or a pastry blender, work the butter into the flour mixture until the mixture resembles coarse meal.</li>
<li class="instruction">Transfer the butter-flour mixture to the prepared baking dish and press into an even 1/4-inch layer along the bottom and partly up the sides of the pan.</li>
<li class="instruction">Refrigerate for 30 minutes.</li>
<li class="instruction">While the crust is chilling, preheat the oven to 350 degrees F.</li>
<li class="instruction">Bake the crust until golden brown, about 20 to 25 minutes.</li>
<li class="instruction">While the crust is baking, assemble the filling by combining the eggs, granulated sugar, flour, and lemon zest in a medium bowl and whisking until smooth.</li>
<li class="instruction">Stir in lemon juice, milk, and remaining pinch of salt and mix well.</li>
<li class="instruction">When the crust is golden brown, remove it from the oven and reduce the oven temperature to 325 degrees F.</li>
<li class="instruction">Stir the lemon mixture again, then pour onto the warm crust.</li>
<li class="instruction">Bake until the filling is set, about 20 minutes.</li>
<li class="instruction">Transfer to a wire rack to cool completely.</li>
<li class="instruction">Remove the dessert by gently pulling it out of trepan by the foil.</li>
<li class="instruction">Transfer to a cutting board and, using a clean knife, cut into squares, wiping knife after each cut.</li>
<li class="instruction">Sprinkle with powdered sugar.</li>
<li class="instruction">Serve immediately, or refrigerate, wrapped with plastic wrap, up to 2 days, until ready to serve.</li>

The avocado/mango salsa is out of this world. I used to just use it as a dip with chips. Honestly, it amazing right out of the bowl. Adding it over some citrus brined chicken breasts makes it even more heavenly. And let’s not even get started with the coconut rice I made! This dinner will leave you full and happy but not stuffed and bloated. It is the perfect summer meal.</p>
<p><b>ISLAND CHICKEN WITH COCONUT RICE</b><br />Recipe and photo by The Hungry Housewife-Leslie Green<br />Serves 4

<p>AVOCADO/MANGO SALSA</p>
<p>2 Mangos, cubed<br />2 Haas Acocados, cubed<br />1/2 Red Onion, finely diced<br />1 Tbsp Honey<br />Juice of 1/2 Lime<br />Juice of 1/2 Lemon<br />1 1/2-2 Tbsp Cilantro, finely chopped<br />Salt and Pepper to Taste</p>
<p>Mix all ingredients in a bowl, cover and set in fridge while you prepare the rest of the meal.</p>
<p>BRINE AND CHICKEN<br />1 1/2 pounds Boneless Skinless Chicken Breasts<br />3 cups Water<br />Zest of 2 Limes<br />Juice of 2 Limes<br />1/2 cup Kosher Salt<br />1/4 cup Honey<br />2 Tbsp Cumin<br />1/2 Tsp Red Pepper Flakes</p>
<p>Combine all of the ingredients in a bowl and stir until the salt is dissolved. Add the chicken into the brine, cover and pop into the fridge for 20 minutes.<br />Preheat grill.<br />Remove the chicken from the brine and rinse under water. Pat dry.<br />Grill the chicken for about 10 minutes on each side or until internal temperature reaches 170.</p>
<p>COCONUT RICE</p>
<p>1 cup White Rice<br />1 1/2 cups Coconut Milk<br />1/2 cup Water<br />2 Tbsp Butter<br />2- 2 1/2 Tbsp Sugar<br />1/2 cup Toasted Coconut<br />Pinch of Salt and Pepper</p>
<p>In a medium sauce pan with a tight fitting lid, combine water, coconut milk, rice, and butter. Bring to a boil, stir once. Cover, reduce heat and simmer for 15 minutes. Remove for heat and let stand covered for 5-10 minutes longer. Remove the lid and add the sugar, toasted coconut and salt and pepper</p>

<p>Need a tissue? I saw you drooling. It&#8217;s totally acceptable, as I did the same thing.
<div>We had house guests and house guests =&#8217;s a perfect reason to make dessert. I wanted something other than a heavy cake, but didn&#8217;t want to make anything complex. I had a butt load of apples that were never going to get eaten..so apple tart it was. I didn&#8217;t follow a recipe, but I did make sure to write everything down, just incase it turned out good..and thank God I did, because it was Yummm-A-Licious! I did use the perfect go-to tart shell recipe from Epicurious that is No-Fail and always turns out perfect. I didnt have any ice cream to scoop on top, but I needed something &#8220;creamy&#8221;. So I made some cream anglaise( sounds fancy, but its not) to pour over the top. Ummmm,YUM!!!</div>

<div style="TEXT-ALIGN: center">1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch cubes</div>
<div style="TEXT-ALIGN: center">1 large egg yolk</div>
<div style="TEXT-ALIGN: center">1 1/2 tablespoons ice water</div>
<div style="TEXT-ALIGN: center"><span class="Apple-style-span"  style="LINE-HEIGHT: 20px;font-size:13;">Whisk together flour, sugar, and salt in a large bowl. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal with some small (roughly pea-size) butter lumps. Beat together yolk and water with a fork and stir into flour mixture until combined well.</span></div>

Chill, wrapped tightly in plastic wrap, at least 1 hour.</span></div>

<div style="TEXT-ALIGN: center">1 Tbsp Ground Cinnamon</div>
<div style="TEXT-ALIGN: center">5 Tbsp Brown Sugar</div>
<div style="TEXT-ALIGN: center">1/4 cup apricot preserves</div>
<div style="TEXT-ALIGN: center">1 cup walnuts, toasted</div>
<div style="TEXT-ALIGN: center">3/4 cup butter, cut up</div>

<div style="TEXT-ALIGN: center">Preheat oven to 375</div>
<div style="TEXT-ALIGN: center">In a large bowl mix together the cinnamon, sugar, preserves and walnuts.</div>
<div style="TEXT-ALIGN: center">Peel, core, cut in half and thinly slice the apples.</div>
<div style="TEXT-ALIGN: center">Toss the apples and layer them in circles around the tart shell.</div>
<div style="TEXT-ALIGN: center">Place the cut up butter on top of the apples.</div>
<div style="TEXT-ALIGN: center">Bake for about 50 minutes. If the nuts are getting to browned, you can place a piece of tinfoil lightly over the top</div>

<div style="TEXT-ALIGN: center">1 vanilla bean, split in half</div>
<div style="TEXT-ALIGN: center">1/2 cup sugar</div>
<div style="TEXT-ALIGN: center">4 large egg yolks, room temperature </div>
<div style="TEXT-ALIGN: center"></div>
<div style="TEXT-ALIGN: center">Set a large fine strainer over a medium bowl and set the bowl in a larger bowl with ice water(you are making an ice water bath to stop the cooking process)</div>
<div style="TEXT-ALIGN: center">In a large sauce pan, combine the milk, vanilla pod and cook over moderately low heat just until small bubbles appear around the rim, about 5 minutes.</div>
<div style="TEXT-ALIGN: center">In another medium bowl, whisk the sugar and egg yolks until combined. Slowly, and I mean slowly(or you eggs will cook), whisk in half of the hot milk. Pour the mixture into the sauce pan and cook over moderate, stirring constantly with a wooden spoon, until the sauce has thickened slightly, about 4-5 minutes. DO NOT OVER COOK OR YOUR SAUCE WILL CURDLE!</div>
<div style="TEXT-ALIGN: center">Immediately strain the sauce into the bowl in the ice bath to stop it from cooking. Scrape the vanilla seed from the pod into the sauce. Serve warm or chill until ready to use.</div>

<div style="text-align: center;">1⁄3 cup plus 1⁄4 cup sugar, preferably superfine</div>
<div style="text-align: center;">2 tsp lemon juice</div>
<div style="text-align: center;">2 cups vanilla yogurt</div>

<div style="text-align: center;">You’ll also need: </div>
<div style="text-align: center;">2 large plastic squeeze bottles,</div>
<div style="text-align: center;">10 pop molds (1⁄2-cup capacity)</div>

<div style="text-align: center;">PREPARATION</div>
<div style="text-align: center;">1. Place strawberries, 1⁄3 cup sugar and lemon juice in blender; purée 3 minutes. Pour into a large plastic squeeze bottle and screw on bottle top.</div>

<div style="text-align: center;">2. In a medium bowl, stir remaining 1⁄4 cup sugar into yogurt until sugar is dissolved. Pour into the second squeeze bottle and screw on bottle top.</div>

<div style="text-align: center;">3. Fill each pop mold with strawberry and yogurt mixtures, alternately squeezing or spooning the mixtures into each mold to create a swirled pattern. Place tops on molds; insert wooden sticks. Freeze at least 6 hours until solidly frozen.</div>

<div style="text-align: center;">4. Remove molds from freezer. Soften slightly at room temperature, about 5 minutes (or dip molds in warm water a few seconds). Remove pops from molds. Serve immediately, or wrap pops separately in plastic wrap, then store in freezer bag or container.</div>

<div style="text-align: center;">Tip: Large squeeze bottles (2-cup capacity) are available in crafts stores and baking supply stores, sometimes labeled for candy-making. To easily unmold the pops, use a pair of pliers to grip the sticks and gently pull out pops. </div>

<div style="text-align: center;">****I didnt have any squeeze bottles, so I used 2 heavy duty zip lock bags and snipped the corners.</div>
<div style="text-align: center;">Also, I can NEVER find superfine sugar, so you can just process it in the food processor for about 30 seconds, just be sure to let the sugar dust settle before you take the lid off your food processor.</div>

<div>My friend Bobbi actually wanted me to make this salad for our little 4th of July party. She said her relative made it all the time when she visited Pennsylvania. I guess Rosa Marina is a type of pasta (damn, my grandma theory sounds soooo much better) that is popular in Pennsylvania. </div>
<div>Since Rosa Marina Pasta is no where to be found in Florida, I used Orzo Pasta. Bobbi gave me her family recipe..but I made a few changes as always. My husband has since renamed this salad Maggot Salad.(cause he thinks the cooked Orzo looks like Maggots) Yeah, real appetizing huh? Mmmmm, lets have some Maggot Salad. <b><i>Tasty</i></b></div>

<div style="text-align: center;">1 can crushed Pineapple (20 oz)</div>
<div style="text-align: center;">1 can Chunk Pineapple (20 oz)</div>
<div style="text-align: center;">1 Large can Mandarin Oranges</div>
<div style="text-align: center;">1 jar maraschino Cherries (10 oz)</div>
<div style="text-align: center;">2 eggs</div>
<div style="text-align: center;">3/4 cup sugar</div>
<div style="text-align: center;">2 Tbsp Flour</div>
<div style="text-align: center;">1 Tbsp Corn starch</div>
<div style="text-align: center;">16 oz. Cool Whip</div>
<div style="text-align: center;">1-2 cups pecans, toasted and chopped</div>

<div style="text-align: center;">Cook pasta according to package directions, drain, rinse and cool.</div>
<div style="text-align: center;">Drain the juice from the cans of pineapple, oranges and cherries into a large sauce pan. Reserve the fruit.</div>
<div style="text-align: center;">Beat in the eggs, sugar flour and cornstarch. Cook until thickened. Allow to cool somewhat and mix into the pasta. Cover and pop in the fridge overnight.</div>
<div style="text-align: center;">The next morning loosen up the pasta mixture with a sturdy spoon.</div>
<div style="text-align: center;">Add the fruit and nuts.</div>

<div>I get these really cute mini watermelons at the store and use one side to make the pops and the other half as the &#8220;pop holder&#8221;. Too cute huh? I had previously used a circle cookie cutter to make my pops but I saw that Family Fun had used a star cookie cutter. Duh.! Cute for the 4th of July.</div>
