<p>When I was asked to develop the recipes for Florida Beef Month by the <a href="http://www.floridacattlemen.org/fbc.html">Florida Beef Council</a> the first thing I thought of was a nostalgic recipe.  One that maybe needed a little TLC.</p>
<p>Some dinners get a bad rap.  Some that I can think of are tuna casserole, meatloaf and pot roast.  I am not sure why they have a stigma around their titles.  Maybe because people include them in their weekly meal rotation and never switch it up.  Or maybe because those meals are just ugly to look at.</p>
<p>In my opinion, you can take an old recipe, one with a bad rap, and turn its reputation right around.  Let’s take pot roast, shall we?</p>
<p>Some people just take a slab of chuck roast, throw in some veggies and turn the slow cooker on for 8 hours.  You know what that means?  It means mushy, colorless vegetables and flavorless meat.  And it sure doesn&#8217;t look very appetizing when you serve it.  I have taken your everyday boring pot roast and turned it into a visually appetizing and taste bud tantalizing meal.</p>
<p>One key to a meal with a lot of pep is to “build the flavors.”  This basically means to cook each component separately, to give the dish a deep depth of flavor.  In my recipe you will notice I build the flavors by searing the meat, deglazing the pan, caramelizing the onions, adding the extra flavorings and then cooking for a nice amount of time.</p>

<p>Remember how I talked about colorless, mushy vegetables?  You can avoid this by adding the veggies during the last hour of cooking.  This allows them to cook fully without losing color or taste.</p>
<p>So, if your family balks at the sound of pot roast for dinner, make my recipe and they will ask for it all the time!</p>

<li class="ingredient">Coarse kosher salt</li>
<li class="ingredient">Freshly cracked pepper</li>
<li class="ingredient">1 tablespoon canola oil</li>
<li class="ingredient">1 large red onion, sliced</li>
<li class="ingredient">4 cloves garlic, minced</li>
<li class="ingredient">1 1/2 cup cabernet sauvignon (or your favorite red wine), divided</li>
<li class="ingredient">1 (26 oz.) box beef stock</li>
<li class="ingredient">2 tablespoons concentrated tomato paste</li>
<li class="ingredient">2 tablespoons Dijon mustard</li>
<li class="ingredient">2 bay leaves</li>
<li class="ingredient">3 stalks fresh rosemary</li>
<li class="ingredient">8 large carrots, cut into 1/2 pieces</li>
<li class="ingredient">1 (28 oz.) bag baby potatoes, sliced in half</li>
<li class="ingredient">4 stalks celery, cut into 1/2 pieces</li>
<li class="ERSeparator">Gravy</li>
<li class="ingredient">1 1/2 tablespoon butter</li>
<li class="ingredient">1 1/2 tablespoon flour</li>
<li class="ingredient">1 1/2 cups beef stock (reserved from the roast)</li>

<ol>
<li class="instruction">Preheat oven to 325 degrees F.</li>
<li class="instruction">Allow chuck roast to sit out at room temperature for 30 minutes.</li>
<li class="instruction">Season liberally with coarse kosher salt and pepper.</li>
<li class="instruction">Over medium-high heat, add the canola oil to a large pot with lid.</li>
<li class="instruction">Add the roast to the pot and brown meat, about 4 minutes per side.</li>
<li class="instruction">Remove the roast, place on a plate and set aside.</li>
<li class="instruction">Pour about 1/2 cup of wine into the pot and scrape the bottom of the pan to loosen all the brown bits.</li>
<li class="instruction">Reduce heat to medium.</li>
<li class="instruction">Add onions and garlic and cook for 5 minutes.</li>
<li class="instruction">Add the stock and the remaining wine.</li>
<li class="instruction">Stir in tomato paste, Dijon mustard and bay leaves.</li>
<li class="instruction">Place the roast back into the pot, add rosemary stalks, cover and place in the oven.</li>
<li class="instruction">Cook for 4 hours.</li>
<li class="instruction">After 4 hours, remove from oven and add the carrots, potatoes and celery.</li>
<li class="instruction">Place the lid back on and cook for 1 more hour in the oven.</li>
<li class="instruction">Remove the roast and place on a large platter.</li>
<li class="instruction">With a slotted spoon, remove all the vegetables and place with the roast.</li>
</ol>

<ol>
<li class="instruction">Ladle 1 1/2 cups of the beef stock (from the pot where you cooked the roast) into a measuring cup.</li>
<li class="instruction">- In a small saucepan, melt butter over medium heat.</li>
<li class="instruction">- Add flour and cook for 1 minute while stirring.</li>
<li class="instruction">- Slowly add beef stock into pan with the butter and flour.</li>
<li class="instruction">- Stir until all incorporated and lump free.</li>
<li class="instruction">- Bring to a boil while stirring, reduce heat and cook until slightly thickened.</li>
<li class="instruction">Spoon gravy over meat and vegetables before serving.</li>

<p>Oh, date night.  Where have you gone?  After having kids, date night is pretty much a thing of the past.  It’s not that my husband and I <em>can’t</em> go out and have a fancy evening to ourselves, because we can.  You see, we actually love hanging out with our kids.</p>
<p>At the ages of 7 and 9, they are pretty neat little people.  We are well aware that in just a few short years, our kids will want to have nothing to do with us.  So, while they think we are still kind of cool, we choose to spend all of our time with them.  It’s fun, but to be honest, I do miss nights out alone with the hubby.  No worries though; once we are embarrassing to our children, we will have all the time in the world to ourselves.</p>
<p>&nbsp;</p>
<p>You can still have a semi-date night at home.  Or you can at least cook a fancy meal.  When I think of the words romantic, fancy and food, I think filet mignon.  Just because you read the word “fancy,” that does not mean difficult.  I do not cook anything difficult.  A filet mignon is very simple to cook.  You just need a nice pan and some high heat.  Cover the filet with a scrumptious sauce, and, well, you have just put the romance meter over the top.  Easy peasy.</p>

<p>Kids or no kids, this meal is as romantic as it gets.  It is beautiful and the taste is amazing.  I developed this recipe for the <a href="http://www.floridacattlemen.org/fbc.html">Florida Beef Council</a> for Florida Beef Month, which runs through the whole month of May.</p>

<li class="ingredient">1 tablespoon butter</li>

<ol>
<li class="instruction">Allow the steaks to sit out at room temperature for 30 minutes.</li>
<li class="instruction">Generously season each steak with salt and pepper.</li>
<li class="instruction">Place a large oven-proof skillet (such as a cast iron skillet) into the oven.</li>
<li class="instruction">Preheat the oven (with the skillet) to 500 degrees F.</li>
<li class="instruction">Once the oven reaches 500 degrees, carefully remove the skillet and place it on the stove over medium-high heat.</li>
<li class="instruction">Pour canola oil into the pan and swirl to coat the entire bottom of the pan.</li>
<li class="instruction">Place the filets into the pan and cook for 4 minutes on the first side (do not move the steak around while it is cooking).</li>
<li class="instruction">Flip the steak over and cook for another 4 minutes.</li>
<li class="instruction">Put the skillet with the filets back into the oven and cook for another 4 minutes.</li>
<li class="instruction">Remove from the oven, take steaks out of the skillet, place on a plate and loosely cover with foil to keep warm.</li>

<li class="instruction">*Cook the sauce in the same pan you cooked the steaks without washing it</li>
<li class="instruction">Place the skillet on the stove over medium-high heat.</li>
<li class="instruction">Deglaze the pan with 1/4 cup of beef broth and scrape up any brown bits that have formed in the pan from cooking the filets.</li>
<li class="instruction">Add the butter and olive oil.</li>
<li class="instruction">Add the mushrooms and shallots, cook for 5 minutes, stirring occasionally.</li>
<li class="instruction">Add the garlic, rosemary and thyme and cook for an additional 30 seconds.</li>
<li class="instruction">Stir in flour and cook while stirring for 30 seconds.</li>
<li class="instruction">Slowly stir in the sherry wine and remaining 1/2 cup beef broth.</li>
<li class="instruction">Bring to a boil.</li>
<li class="instruction">Reduce heat to a simmer and cook for 3-5 minutes until sauce thickens.</li>
<li class="instruction">Stir in mascarpone cheese and cook to warm through.</li>

<p>Did you know there are 29 cuts of lean beef? 29! If you need some help remembering what cuts are considered extra lean or lean, you can download this handy wallet card that you can carry with you to the grocery store to help you choose smart &#8211; <a href="http://www.beefitswhatsfordinner.com/leanbeef.aspx">http://www.beefitswhatsfordinner.com/leanbeef.aspx.</a> Before I started really cooking, I had no clue what cut of beef was what, so this card would have come in very handy for me back then.</p>
<p>Flank steak falls under the lean cut of beef department. This makes me very, very happy because flank steak is so versatile. The flank can be found on the underside of the cow, around the abdominal muscles. It is a tougher cut of meat, so it benefits from marinating. Marinating is always fine by me because it not only tenderizes the meat, but makes it wonderfully flavorful.</p>
<p>A nice marinated flank steak makes the perfect addition to a salad. Not only does it add texture and body, it adds a substantial amount of protein that you need to have a balanced diet. Just 4 ounces of flank steak boasts 25 grams of protein and just 7 grams of fat. Not too shabby.</p>
<p>I hope you enjoy this recipe that I developed for <a href="http://www.floridacattlemen.org/fbc.html">The Florida Beef Council</a>. My husband went back for seconds, that says a lot for a salad!</p>

<p>If you are in the mood for a deliciously fresh and light salad, look no further than my Asian Beef Salad with Citrus Vinaigrette. The steak is marinated in an easy homemade marinade and then quickly grilled. It is the perfect topping for a cold, crispy salad.</p>

<li class="ingredient">2 cups mandarin oranges</li>
<li class="ERSeparator">Marinade</li>
<li class="ingredient">2 garlic cloves, minced</li>
<li class="ingredient">1 tablespoon fresh ginger, finely minced</li>
<li class="ingredient">1/8 teaspoon red pepper flakes</li>
<li class="ingredient">1/4 cup soy sauce</li>
<li class="ingredient">Juice of 1 lime</li>
<li class="ingredient">1 tablespoon sesame oil</li>
<li class="ERSeparator">Dressing</li>
<li class="ingredient">1 garlic clove, minced</li>
<li class="ingredient">1/2 teaspoon fresh ginger, finely minced</li>

<ol>
<li class="instruction">In a small bowl or measuring cup, mix together garlic, ginger, red pepper flakes, soy sauce, lime juice and sesame oil until combined.</li>
<li class="instruction">Pour into a gallon zipper bag.</li>
<li class="instruction">Place flank steak in bag, press air out and seal tightly.</li>
<li class="instruction">Place in refrigerator and allow to marinate for 4-6 hours.</li>
</ol>
<div class="ERSeparator">Dressing (Can be made a week in advance)</div>

<li class="instruction">In a blender, add garlic, ginger, sugar, soy sauce, orange juice and rice vinegar.</li>
<li class="instruction">Pulse several times.</li>
<li class="instruction">With blender on, add oils in a slow stream.</li>
<li class="instruction">Blend for 15 seconds.</li>

<ol>
<li class="instruction">Preheat grill for at least 15 minutes on medium-high heat.</li>
<li class="instruction">Remove flank steak from marinade and place on grill; discard the marinade.</li>
<li class="instruction">Grill flank steak for 3-4 minutes per side.</li>
<li class="instruction">Remove from grill and allow to rest for 5 minutes.</li>
<li class="instruction">Slice the flank steak across the grain into thin strips.</li>

<li class="instruction">Toss with desired amount of dressing.</li>

<p>I just love when I get the steam coming of a dish when I snap a shot!</p>
<p>So, what is your go to meal when you are in a rush? In my opinion, there is nothing easier than a nice pasta and sauce dish. I usually make my <a href="http://www.thehungryhousewife.com/2009/11/spaghetti-and-meatballs.html">own sauce</a>, but when you are knee deep in baseball, blogging, science projects and deadlines, you tend to reach for the convenience foods. I always have a jar of pasta sauce on my shelf. You can take a few extra yet simple steps to make it your own. Add some spices, meat and cheese. You can instantly make it taste homemade. And they best part is you don&#8217;t have to simmer your sauce for hours.</p>

<li class="instruction">In a medium, oven proof skillet, over medium heat, cook ground beef until no longer pink in the middle, drain and return to the skillet.</li>
<li class="instruction">To the skillet, add the cooked pasta, pasta sauce, salt, pepper,Italian Seasoning and ricotta cheese, mix until and incorporated and heated through.</li>
<li class="instruction">Sprinkle with mozzarella cheese and place in oven until the cheese has melted, about 5 minutes</li>
<li class="instruction">Serve with breadsticks</li>

<p>Don&#8217;t you just love lettuce wraps?<br />
You can eat a plethora of them and not feel guilty or feel like you need to go purge.<br />
I honestly don&#8217;t remember the first place I had them, put I remember the coolness of the crispy lettuce against the piping hot filling. It was pure heaven. And very low in carbs. Yeah, I could probably live on lettuce wraps for the rest of my life. And the fact that this meal serves a family of four for $10 means my grocery bill would be pretty cheap for dinner for the remainder of my years. However, I am sure my offspring might object on the lettuce wraps for the rest of <em>their</em> lives.</p>

<li class="ingredient">8 oz. portobello mushrooms, chopped</li>
<li class="ingredient">1 pound ground beef</li>
<li class="ingredient">1 (1 oz.) package Mongolian Beef Seasoning Mix</li>
<li class="ingredient">1/4 cup carrot (1/2 large carrot), chopped</li>
<li class="ingredient">1 head Boston bibb lettuce</li>
<li class="ingredient">2 scallions, chopped, divided</li>
<li class="ingredient">1/2 cup crispy chow mein noodles (wide style)</li>
<li class="ingredient">1 cup Hannaford white rice, cooked to package directions</li>
<li class="ingredient">3/4 cup Hannaford Frozen Peas and Carrots (from 16 oz. package), thawed</li>
<li class="ingredient">2 eggs, whisked</li>
<li class="ingredient">3 tablespoons Soy Sauce</li>
<li class="ingredient">Salt and Pepper</li>
</ul>

<li class="instruction">Mix the Mongolian Beef Seasoning and 1/4 cup water together in a small bowl and</li>
<li class="instruction">set aside.</li>
<li class="instruction">Over medium heat, add 1/2 teaspoon oil to a medium skillet</li>
<li class="instruction">Add the mushrooms and carrots and cook for 3 minutes. Remove and set aside</li>
<li class="instruction">In the same skillet, cook for meat until no longer pink, about 5 minutes. Drain</li>
<li class="instruction">Place the meat back into the skillet and add the mushrooms, carrots and Mongolian beef seasoning. Stir to incorporate and cook until heated through.</li>
<li class="instruction">Separate the lettuce into 8 “cups”.</li>
<li class="instruction">Divide the filling into each cup. About 1/3 cup per piece of lettuce.</li>
<li class="instruction">Sprinkle with 1 scallions and crispy chow mein noodles.</li>

<li class="instruction">In a medium skillet, over medium heat add 1 teaspoon oil.</li>
<li class="instruction">Add the thawed peas and carrots and cook for about 3-5 minutes or until carrots are softened</li>

<li class="instruction">Add the cooked rice and stir to combine.</li>
<li class="instruction">Stir in the soy sauce and 1 scallion.</li>

So I made an easy Shepherd Pie Filling and put it over baked potatoes and topped it with cheese! YUM!</p>

<li class="instruction">Wash and prick the top potatoes with a fork about 5 times.</li>
<li class="instruction">Cook the potatoes in the microwave on high for 25 minutes or until fork tender</li>
<li class="instruction">In a medium skillet cook the ground beef until no longer pink in the middle, drain.</li>
<li class="instruction">In the same skillet, over medium heat, add the oil, peas,carrots and corn. Cook for 5 minutes or until the carrots are tender.</li>
<li class="instruction">Return the beef to the skillet with the vegetables. Add the gravy and cook for about 5 minutes or until heated through.</li>
<li class="instruction">Partially open the potatoes and evenly divide the beef mixture over each potato, top each potato with 1/4 cheese.</li>

<p>I think I professed my love for hamburgers in my last <a href="http://www.thehungryhousewife.com/2012/02/favorite-things-thursday-7.html">Favorite Things Thursday Post</a>.</p>
<p>There is nothing better than a big fat juicy hamburger. A big fat juice hamburger on a toasted bun, slathered with aioli sauce, melty cheese and a creamy avocado&#8230;..oh pinch me now!</p>
<p>Like I said last week, I like my hamburgers with lots of coarse Kosher salt and lots and lot of freshly ground pepper. And I like them on the rare side of medium- rare! If there is juice dripping off my elbow when I am eating it, well then  I know my work as the master hamburger griller is done!</p>
<p>You get this delicious hamburger and a side of homemade sweet potato fries all for $10! Yup.</p>

<li class="ingredient">1 Small Tomato,sliced</li>
<li class="ingredient">1 Avocado, pitted, removed from skin and sliced</li>
<li class="ingredient">Salt</li>
<li class="ingredient">Pepper</li>
<li class="ERSeparator">Sweet Potato Fries</li>
<li class="ingredient">2 small Sweet Potatoes,washed (about 1 pound)</li>
<li class="ingredient">1 tablespoon Vegetable Oil</li>
<li class="ingredient">1/4 teaspoon Salt</li>
<li class="ingredient">1/2 teaspoon Pepper</li>

<li class="ingredient">1/4 cup mayonnaise</li>
<li class="ingredient">1 Garlic Clove, minced</li>

<li class="instruction">In a small bowl mix together the mayonnaise, garlic, lemon zest, lemon juice, hot sauce and pepper.</li>
<li class="instruction">Cover with plastic wrap and place in the refrigerator.</li>
<li class="instruction">The aioli can be made a day in advance.</li>
</ol>

<li class="instruction">Preheat the oven to 450</li>
<li class="instruction">Line a baking sheet with non-stick foil or parchment paper.</li>
<li class="instruction">Cut the sweet potatoes into thin french fry shaped sticks.</li>
<li class="instruction">Place them in a bowl and toss with the oil, salt and pepper.</li>
<li class="instruction">Arrange them on the prepared baking sheet so they are not touching.</li>
<li class="instruction">Bake for 15-20 minutes, turning over halfway through cooking.</li>
</ol>

<ol>
<li class="instruction">Form the ground beef into 4 equal sized patties.</li>
<li class="instruction">Season with desired amount of salt and pepper</li>
<li class="instruction">In a large skillet over medium high heat, cook the hamburgers for about 4 minutes per side or to your desired doneness.</li>
<li class="instruction">Add the cheese to the tops during the last minute of cooking to allow it to melt.</li>

<li class="instruction">Spread the top of each bun with 1 tablespoon aioli.</li>

<li class="instruction">Add the bun with the aioli to the top.</li>

<p>But let me tell you, making the sauce from scratch is not only WAY better than the can, but it is also really really easy!!!</p>
<p>And how fun is it to make those Sloppy Joe&#8217;s opened faced? And on some cheesy Texas Toast!!! Much better than a boring ol&#8217; bun.</p>
<p>In my opinion, you just can&#8217;t serve these old school sandwiches without corn on the cob. That would be like having grilled cheese without tomato soup. It&#8217;s illegal I think.</p>
<p>What really put this meal over the top is that is feeds a family of four, takes less than 20 minutes to cook AND it&#8217;s only $10!!!!!!!</p>

<li class="instruction">Add the oil to a medium skillet over medium heat.</li>
<li class="instruction">Add the onion and cook for about 5 minutes or until the onion has softened.</li>
<li class="instruction">Add the green pepper and cook for an additional 3-5 minutes or until softened. Remove the onion and green pepper and set aside.</li>
<li class="instruction">In the same skillet, cook the ground beef until no longer pink in the middle. Drain</li>
<li class="instruction">Add the cooked beef, onions and peppers back into the skillet, and add the ketchup, mustard, brown sugar, salt, black pepper, garlic powder, onion powder, white vinegar and red pepper. Stir to incorporate.</li>
<li class="instruction">Reduce the heat to low and allow to cook for about 5 minutes, stirring occasionally.</li>
<li class="instruction">Serve over 2 slices of Texas Toast and 2 ears of corn.</li>
<li class="instruction">Sprinkle 1 tablespoon cheese over each Sloppy Joe</li>

<p>Love me some Chili. However I am not a big fan of chili with Kidney Beans.<br />

<p>When I created this recipe for <a href="http://www.sweetbaysupermarket.com/">SweetBay Supermarket</a> I wanted a different take on the normal chili.</p>
<p>A taco take!  This would be perfect to have on the stove for &#8220;The Big Game&#8221; coming up!<br />
This is a chunky chili filled with corn, black beans and taco seasoning. YUM<br />
Serve it with some easy to make Boxed corn bread with some corn thrown in there.<br />

<li class="ingredient">1 box Jiffy Corn Bread Mix cooked to package directions with 1/2 of the thawed corn mixed in prior to baking.</li>

<li class="instruction">In a large pot, over medium heat, cook the ground beef for 5-6 minutes or until no longer pink in the middle. Drain.</li>
<li class="instruction">Return the ground beef to the skillet and add the taco seasoning, remaining corn, black beans, diced tomatoes, tomato sauce, chili powder, cumin and paprika.</li>
<li class="instruction">Cook over medium heat for 10 minutes then reduce heat to low and cook for an additional 20 minutes.</li>
<li class="instruction">Top each bowl with 1 tablespoon of sour cream and 1/4 cup cheese.</li>

<p>Italian Meatball Stromboli with salad.</p>
<p>This is a huge hit with kids. Kids love anything rolled up.</p>
<p>You can even make the meatballs ahead of time to save you some time the night you want to prepare this delicious dinner. And using pre made refrigerated  pizza dough saves a huge amount of time!</p>

<li class="ingredient">1/2 cup Italian Style Bread Crumbs</li>
<li class="ingredient">1 Egg</li>
<li class="ingredient">1/2 teaspoon Italian Seasoning</li>
<li class="ingredient">1/4 teaspoon Salt</li>
<li class="ingredient">1/8 teaspoon Pepper</li>
<li class="ingredient">1 tablespoon Vegetable Oil</li>
<li class="ingredient">1 11 oz. tube Refrigerated Thin Crust Pizza Dough</li>
<li class="ingredient">1 cup Hannaford Pizza Sauce, divided</li>
<li class="ingredient">1 1/2 cups My Essentials Shredded Mozzarella Cheese</li>
<li class="ingredient">1/2 head Romaine Lettuce</li>
<li class="ingredient">1 Cucumber, chopped</li>
<li class="ingredient">1 Roma Tomato, chopped</li>

<ol>
<li class="instruction">Preheat the oven to 400.</li>
<li class="instruction">In a large bowl mix together the ground beef, bread crumbs, egg, Italian seasoning,</li>
<li class="instruction">salt and pepper.</li>
<li class="instruction">Form the meat into golf ball sized balls.</li>
<li class="instruction">Over medium meat, add the oil to a large skillet.</li>
<li class="instruction">Cook the meatballs over medium heat for 10 minutes, turning over half way through</li>
<li class="instruction">the cooking time.</li>
<li class="instruction">Place the meatballs on a paper towel lined plate and allow to cool slightly and slice in half.</li>
<li class="instruction">On a greased cookie sheet unroll the pizza dough.</li>
<li class="instruction">Spread 1/2 cup pizza sauce over the pizza dough.</li>
<li class="instruction">Arrange meatball slices over the dough in 3 rows.</li>
<li class="instruction">Spread the cheese over the meatballs.</li>
<li class="instruction">Roll the dough lengthwise so you have a long roll.</li>
<li class="instruction">Bake for 20 minutes or until golden brown.</li>
<li class="instruction">Serve with 1/2 cup pizza sauce for dipping and simple Romaine, tomato and cucumber salad.</li>
