<p>I love a good recipe that doesn&#8217;t make my butt bigger just by looking at them. These Chewy Fruit Bars would be one of them.</p>
<p>Yes, they have butter and sugar, but some of the sugar is replaced by using <a href="http://www.musselmans.com/">Musselman&#8217;s Cinnamon Apple Sauce</a>.</p>
<p>I have heard, you know urban legend kinda stuff, that using apple sauce can sometimes be a great way to lighten up a dessert. Yeah, yeah, give me butter/sugar or give me death is what I say. But you know what? These little bars were PERFECT. Sweet, but not overly sweet. You could eat them for breakfast and not feel to terribly guilty.</p>
<p>They are soft, and cinnamon-y (yes, that is a culinary word) with lovely specs of nuts and fruit.</p>
<p>The possibilities for the babies are endless. Next time I might throw in some dried cherries&#8230;oh yeah.</p>
<p>Thank you to <a href="http://www.musselmans.com/products/products.aspx">Musselman&#8217;s</a> for sending me some apple sauce  and the recipe to make the bars. I am glad they did, because now I can somewhat jump on the applesauce replacing sugar/butter bandwagon. However, ones not to say I might not fall of the wagon often.</p>

<li class="ingredient">(4) 4 oz cups any flavor MUSSELMAN&#8217;S Healthy Picks Apple Sauce</li>

<li class="ingredient">1 c. walnuts, chopped</li>

<li class="instruction">In large mixer bowl beat butter to soften.</li>
<li class="instruction">Add brown sugar and vanilla extract. Beat until light and fluffy.</li>
<li class="instruction">Blend in flour, cinnamon and baking soda, mixing well.</li>
<li class="instruction">Stir in oats.</li>
<li class="instruction">Press 2/3 of mixture into 13&#8243; x 9&#8243; baking pan lightly sprayed with cooking spray.</li>
<li class="instruction">In medium bowl, combine apple sauce, raisins and walnuts.</li>
<li class="instruction">Spoon evenly over dough in pan.</li>
<li class="instruction">Crumble remaining dough over top.</li>
<li class="instruction">Bake at 350 degrees for 40-45 minutes or until golden brown.</li>
<li class="instruction">Cool completely.</li>
<li class="instruction">Cover and refrigerate until ready to serve.</li>
<li class="instruction">Cut into bars.</li>

<p>These brownies made me very happy. I always have brownie mix on hand. If we are being honest here, sometimes I make the brownie mix just to have SEVEAL spoonfuls of the brownie batter before it even makes it in the oven. Oh, I know what some of you are thinking&#8230;&#8221;ewwww, thats nasty, there are raw eggs in there.&#8221; What I say to that is , PAH-LEEEEZE, I have been eating raw batters in all forms(brownie,cookie,pancake,cake etc.) since I was a small child and I am still alive. Heck, when I was really little I would sneak raw hamburger meat, dip it in the softened butter my Mom kept on the counter (another gasp from the peanut gallery) and EAT IT. The thought of that makes my stomach completely queazy, but the point being, I AM STILL ALIVE.<br />
Geeze, I went off on a tangent there, I&#8217;m sorry&#8230;<br />
Anyhoooo, yes, this is the perfect way to doctor up a brownie mix with literally ZERO effort with  MAXIUM result.</p>

<li class="instruction">Heat the peanut butter in the microwave for 15-20 seconds or until slightly runny.</li>
<li class="instruction">Stir powdered sugar into the peanut butter.</li>
<li class="instruction">Plop(yes technical cooking term) the peanut butter over the top of the brownie mixture and swirl with a knife.</li>
<li class="instruction">Bake per the package directions.</li>
<li class="instruction">Allow to completely cool before cutting.</li>

<p>How can one say no? I mean, we all know I have no will power.</p>
<p>So I sit here with 2 boxes of Samoas, 2 boxes of Thin Mints(now in the freezer) and 2 boxes of Trefoils. I can&#8217;t have that kind of stuff laying around the house. There is a reason I don&#8217;t buy cookies at the store&#8230;plain and simple. I. WILL. EAT. THEM!</p>

<p>Samoas are my weakness. So I had to come up with a remedy to get rid of them. If I knew I had a box, I would gooble them right up.<br />
I knew I had to put them in something. I had a big ol box of Rice Krispies in the pantry.<br />
The Samoas found a new home&#8230;.chopped up in the Rice Krispie Treats.</p>

<li class="ingredient">1/4 cup semi-sweet chocolate chips, melted</li>

<li class="instruction">Spray a 9 x 13 pan with non-stick spray</li>
<li class="instruction">In a large saucepan, melt the butter over low heat.</li>
<li class="instruction">Add the marshmallows and stir until melted.</li>
<li class="instruction">Stir in the Rice Krispies and the Samoas.</li>
<li class="instruction">Place the mixture into prepared pan and pat evenly in pan.</li>
<li class="instruction">Allow to cool.</li>
<li class="instruction">Place the melted chocolate into a zip lock bag, snip off the edge and pipe the melted chocolate onto the Rice Krispie treats.</li>
<li class="instruction">Place in the refrigerator for about 10 minutes for the chocolate to set and then cut.</li>

<p>I am sure if you are a food blogger, you have a pretty spoiled significant other.</p>
<p>One night my husband opened up the &#8220;Baking Cabinet&#8221; and was just staring into it.<br />
He was just <em>waiting</em> for me to notice.<br />
I said, &#8220;What are you doing, do you want me to make you something?<br />
With out hesitation or without even taking a breath he said,<br />
&#8220;Brownies&#8230;&#8230;. Brownies with walnuts, chocolate chips and marshmallows.&#8221;<br />
He said it so fast like he had been plotting.<br />
So the next morning I made him his requested brownies.<br />
Brownies with chocolate chips, toasted walnuts and marshmallows. Pretty simple.</p>
<p>I took them to work and I have never seen people go so crazy over a brownie. Like I put crack in them. You know, Kinda like McDonalds does with their fries.<br />
They <em>look</em> like normal brownies, but they were anything but.<br />
I mixed the marshmallows into the batter and once baked they melted right in, you can&#8217;t even see them in the cooked brownie.<br />
The marshmallows made the brownies sooooooooo deliciously chewy and amazing. And the added chocolate chips and toasted walnuts just put them over the top.<br />
I used a box mix, cause I am lazy like that these days. And to be honest, I love boxed brownie mix.<br />
So if you want people to thing you are a Brownie God, go ahead and make these!</p>

<li class="instruction">Preheat oven as per directed on your brownie mix</li>
<li class="instruction">Line a 8 x 8 pan with non stick foil or spray with non stick spray.</li>

<li class="instruction">Fold in the walnuts, chocolate chips and marshmallows</li>
<li class="instruction">Bake for about 5 minutes longer than the package directions.</li>

<p>I did not include in my ingredients the eggs, oil and water because every boxed brownie recipe uses different quantities.</p>
<p>To toast walnuts, bake in a 350 degree oven for 8-10 minutes.</p>
<p>I did not use the brownie mix that says it is &#8220;Family Size&#8221; for the 9 x 13 pan.<br />
I use the size brownie mix that is for 8 x 8 or 9 x 9 pans.</p>

<p>Valentines Day. Do you like it? Me..I&#8217;m on the fence.<br />
Maybe back in High School when the boys were romantic, it was a cutsie and stuff.<br />
But I have come to the realization the Valentines day is a Hallmark Day. I mean unless your man is Uber romantic, it will probably be just another day&#8230;..sigh. I think once you have kids, like everything else, the holiday becomes about them.</p>
<p>But we can still be a hopeless romantic and make some heart shaped Jello, right?<br />
It&#8217;s cute and the kids liked to help.</p>
<p>Jello and kids kinda go hand in hand.</p>
<p>I got the idea of the multi colored Jello from the old school <a href="http://www.kraftbrands.com/Jello/recipe.aspx?ID=129370">Jello Mosaic Dessert Bars</a><br />
But what fun is it just cutting the jello into cubes? Let&#8217;s make hearts!!!!</p>
<p>Below is that it looks like before its final 2 hour chill.<br />
As you can see, I used a small heart cookie cutter to cut my firmed red jello and arranged them in a 9 x 13 pan, then poured the sweetened condensed mixture over the top.</p>

<p>And once the firm, you invert the pan and cut them out.<br />

<li class="ingredient">4 (3oz.) boxes Strawberry Jello</li>
<li class="ingredient">2 envelopes Knox Unflavored Gelatin</li>
<li class="ingredient">5 1/2 cups boiling water, divided</li>
<li class="ingredient">1 can (14oz.) Sweetened Condensed Milk</li>
<li class="ingredient">1/2 cup cold Water</li>
</ul>

<ol>
<li class="instruction">Spray a 9 x 13 pan with non stick cooking spray.</li>
<li class="instruction">In a large bowl, add the 4 packages of Strawberry Jello.</li>
<li class="instruction">Mix in 4 cups boiling water and stir for about 2 minutes, or until dissolved.</li>
<li class="instruction">Pour into the prepared pan and place in the refrigerator for 2 hours or until firm.</li>
<li class="instruction">In a medium bowl add the 1/2 cup cold water and sprinkle the gelatin over the top, let stand for 1 minute.</li>
<li class="instruction">Stir in 1 1/2 cups boiling water and sweetened condensed milk, mix well and allow to cool.</li>
<li class="instruction">Remove the firm red jello from the fridge and invert onto a cutting board.</li>
<li class="instruction">Re-spray the same 9 x 13 pan with non stick spray.</li>
<li class="instruction">With a heart cookie cutter, cut hearts out of the jello. Take care to cut them as close together as possible to reduce waste.</li>
<li class="instruction">Arrange the hearts in the pan.</li>
<li class="instruction">Pour milk mixture over the hearts and place in the fridge for 2 hours until firm.</li>
<li class="instruction">Remove and cut into squares.</li>

			<content:encoded><![CDATA[<p>Hi all, I hope you had a wonderful Holiday Season. Mine, like I am sure everyone else&#8217;s was packed full and honestly is a bit of a blurr. I spent the last half of my Birthday(Christmas Eve) and into Christmas day cleaning up after my daughter who had the stomach virus. Poor little thing..who wants to be puking on Christmas? And then she gave it to me the day after Christmas..good times..good times. Let me just tell you that Red Robin tastes so much better going in than coming back out. ugggg</p>
<p>New Years Eve was great. My husband decided he wanted to have a party last minute. And by last minute, I mean the day before. Gotta love em&#8217;.<br />
If you read <a href="http://www.thehungryhousewife.com/2011/12/my-fight-with-the-scale.html">this</a> post, you know that none of my clothes fit me, so I began stressing out on what I was going to wear for the party. I mean, people usually get all fancied up for New Years.<br />
So I decided to make our New Years party a PAJAMA  party! Everyone had to come in the P.J&#8217;s. Sure, I still put on some make up, but let me tell you how comfy I was!!!!<br />
I had too much to drink&#8230;doesn&#8217;t happen often, but when it does&#8230;.good lord.  Diet Coke and Cherry Flavored Vodka is VERY easy to chug down.<br />
I was dancing all night long. One low point was, dancing to Beastie Boys- Brass Monkey with my dog under one arm and a wooden spoon in the other hand as a microphone.<br />
I had fun</p>

<p>Bark is so easy to make and it&#8217;s perfect for Holiday parties or just any day of the week really. However, it is quite dangerous to have laying around the house. It is cut in such small pieces, that you just walk by, pick one up and pop it into you mouth. Well, if you continue to do this all day, you will have probably eaten half of the tray. Don&#8217;t know how I know this fact..probably read it somewhere&#8230;yup that&#8217;s it.{cough-cough}.</p>

<li class="ingredient">16 oz. White Chocolate (4 bars), chopped, divided</li>
<li class="ingredient">2 oz. Semi- Sweet Chocolate, chopped</li>
<li class="ingredient">1 tablespoon Vegetable Shortening, melted</li>
<li class="ingredient">1 cup roughly chopped Salted Pretzels</li>
<li class="ingredient">4 Candy Canes, Chopped</li>
</ul>

<div class="instructions">
<ol>
<li class="instruction">Line a 8 x 8 or 9 x 9 pan with non stick foil. Or spray the foil with no stick cooking spray.</li>
<li class="instruction">In a large bowl, melt 12 oz. white chocolate by placing in the microwave and heating in 30 second intervals, stirring in-between each interval. This usually take 1 to 1 1/2 minutes depending on your microwave.</li>
<li class="instruction">When the chocolate is melted, stir in the melted shortening and the remaining 4 oz. white chocolate and stir until smooth.</li>
<li class="instruction">Reserve 2 tablespoons of the candy canes and pretzel for sprinkling on top.</li>
<li class="instruction">Stir the remaining candy canes and pretzels into the white chocolate.</li>
<li class="instruction">Pour the mixture into the prepared pan.</li>
<li class="instruction">Sprinkle the 2 tablespoons of the candy canes and 2 tablespoons of the pretzels on top.</li>
<li class="instruction">In a small bowl melt the semi-sweet chocolate for about 1 minute, cooking in 30 second intervals.Stir until smooth.</li>
<li class="instruction">Place the semi-sweet chocolate into a zip lock bag and snip a tiny part of the corner off.</li>
<li class="instruction">Drizzle the chocolate over the white chocolate.</li>
<li class="instruction">Place the bark in the refrigerator for several hours to to firm.</li>
<li class="instruction">When completely firm, cut into desired shapes.</li>
<li class="instruction">Store in a covered container in a cool dry place</li>

<li class="ingredient">1 teaspoon vanilla extract</li>

<li class="instruction">Line a 8 X 8 pan with foil.</li>
<li class="instruction">Place white chocolate in a microwave safe bowl along with 1/2 cup Eagle Brand Sweetened Condensed Milk.</li>
<li class="instruction">Microwave for 30 seconds.</li>
<li class="instruction">Add peppermint extract and stir until smooth. Set aside.</li>
<li class="instruction">Place the semi-sweet chocolate and salt with the remaining Sweetened Condensed milk.</li>
<li class="instruction">Microwave for 1 minute. Remove and stir.</li>
<li class="instruction">Microwave for an additional 30 seconds.</li>
<li class="instruction">Add vanilla extract and stir until smooth.</li>
<li class="instruction">Pour into the prepared pan.</li>
<li class="instruction">Pour the white chocolate over the top and swirl with a knife.</li>
<li class="instruction">Top with crushed candy canes.</li>
<li class="instruction">Place in the refrigerator for several hours to set.</li>

<p>I made lots and lots and lots of this crumb cake when I worked at the bakery. Might not be the best photo, but it was taken in the horrid florescent light at the bakery.<br />
It sold out every time I made it. So you know it must be good.<br />
The bakery is sadly no longer in business. Man, do I miss licking the bowls. Whaaaa? Quality control, it was for quality control people.</p>
<p>In my opinion, crum cake is allllll about the crumb. The more the better.</p>
<p>The recipe was from a Cooks Illustrated book, with a few additions.  Not sure which one..I just stole a copy of the recipe from the shop..shhhhhhhh.</p>

<li class="ingredient">1/3 cup granulated sugar</li>
<li class="ingredient">1/3 cup dark brown sugar</li>
<li class="ingredient">1 tablespoon ground cinnamon</li>
<li class="ingredient">1/8 teaspoon table salt</li>
<li class="ingredient">8 tablespoons unsalted butter (1 stick), melted and still warm</li>
<li class="ingredient">1 3/4 cups CAKE flour</li>
<li class="ERSeparator">CAKE</li>
<li class="ingredient">1 1/4cups CAKE flour</li>
<li class="ingredient">1/2 cup granulated sugar</li>
<li class="ingredient">1/4 teaspoon baking soda</li>
<li class="ingredient">1/4 teaspoon table salt</li>
<li class="ingredient">6 tablespoons unsalted butter (3/4 stick), cut into 6 pieces, softened but still cool</li>
<li class="ingredient">1 large egg</li>
<li class="ingredient">1 large egg yolk</li>
<li class="ingredient">1 teaspoon vanilla extract</li>
<li class="ingredient">1/4 teaspoon almond extract</li>
<li class="ingredient">1/3 cup buttermilk</li>
<li class="ingredient">Confectioners&#8217; sugar for dusting</li>

<div class="ERSeparator">TOPPING:</div>
<ol>
<li class="instruction">In a medium bowl whisk sugars, cinnamon, salt.</li>
<li class="instruction">Stir in the melted butter.</li>
<li class="instruction">Add flour and mix with your hands until the mixture resembles thick, cohesive dough; set aside to cool to room temperature, 10 to 15 minutes.</li>
</ol>

<ol>
<li class="instruction">Adjust oven rack to upper-middle position and heat oven to 325 degrees.</li>
<li class="instruction">Completely line an 8 x 8 pan with parchment paper or foil and spray with nonstick cooking spray.</li>
<li class="instruction">In bowl of standing mixer fitted with paddle attachment, mix flour, sugar, baking soda, and salt on low speed to combine.</li>
<li class="instruction">With mixer running at low speed, add butter one piece at a time; continue beating until mixture resembles moist crumbs, with no visible butter chunks remaining, 1 to 2 minutes.</li>
<li class="instruction">Add egg, yolk, vanilla,almond extract and buttermilk; beat on medium-high speed until light and fluffy, about 1 minute, scraping once if necessary.</li>
<li class="instruction">Transfer batter to baking pan; using rubber spatula, spread batter into even layer.</li>
<li class="instruction">Break apart crumb topping into large pea-sized pieces and spread in even layer over batter.</li>
<li class="instruction">Bake until crumbs are golden and wooden skewer inserted into center of cake comes out clean, 35 to 40 minutes.</li>
<li class="instruction">Cool on wire rack at least 30 minutes.</li>
<li class="instruction">Remove cake from pan by lifting parchment overhang.</li>
<li class="instruction">Dust with confectioners&#8217; sugar if desired.</li>

<p>I am a sucker for all things LEMON. Lemon chicken, lemon pasta, lemon lotion..I could go on and on.<br />
But nothing screams summertime more than a nice refreshing Lemon Bar or some call the Lemon Squares. They have been one of my favs ever since I was a wee little girl.</p>
<p>I like to think they are healthy because a fruit<em> is</em> after all the first word. Totally a diet dessert. {cough-cough}</p>

<li class="ingredient">12 tablespoons (1 1/2 sticks) butter</li>
<li class="ingredient">1 3/4 cups plus 3 tablespoons all-purpose flour</li>
<li class="ingredient">2/3 cup confectioners&#8217; sugar, plus more for garnish</li>
<li class="ingredient">1/4 cup cornstarch</li>
<li class="ingredient">3/4 teaspoon salt plus a pinch</li>
<li class="ingredient">4 eggs, lightly beaten</li>
<li class="ingredient">1 1/3 cups granulated sugar</li>
<li class="ingredient">1 1/2 teaspoons lemon zest</li>
<li class="ingredient">2/3 cup fresh lemon juice, strained</li>
<li class="ingredient">1/4 cup whole milk</li>

<li class="instruction">Line a 9 by 13-inch baking dish(bottom and sides) with non stick foil, or use regular foil sprayed with non-stick spray. Set pan aside.</li>
<li class="instruction">In a large bowl combine 1 3/4 cups of the flour, 2/3 cup of the confectioners&#8217; sugar, the cornstarch, and 3/4 teaspoon of the salt and mix thoroughly.</li>
<li class="instruction">Cut the 12 tablespoons of butter into small pieces and add to the flour mixture.</li>
<li class="instruction">Using your hands, 2 forks, or a pastry blender, work the butter into the flour mixture until the mixture resembles coarse meal.</li>
<li class="instruction">Transfer the butter-flour mixture to the prepared baking dish and press into an even 1/4-inch layer along the bottom and partly up the sides of the pan.</li>
<li class="instruction">Refrigerate for 30 minutes.</li>
<li class="instruction">While the crust is chilling, preheat the oven to 350 degrees F.</li>
<li class="instruction">Bake the crust until golden brown, about 20 to 25 minutes.</li>
<li class="instruction">While the crust is baking, assemble the filling by combining the eggs, granulated sugar, flour, and lemon zest in a medium bowl and whisking until smooth.</li>
<li class="instruction">Stir in lemon juice, milk, and remaining pinch of salt and mix well.</li>
<li class="instruction">When the crust is golden brown, remove it from the oven and reduce the oven temperature to 325 degrees F.</li>
<li class="instruction">Stir the lemon mixture again, then pour onto the warm crust.</li>
<li class="instruction">Bake until the filling is set, about 20 minutes.</li>
<li class="instruction">Transfer to a wire rack to cool completely.</li>
<li class="instruction">Remove the dessert by gently pulling it out of trepan by the foil.</li>
<li class="instruction">Transfer to a cutting board and, using a clean knife, cut into squares, wiping knife after each cut.</li>
<li class="instruction">Sprinkle with powdered sugar.</li>
<li class="instruction">Serve immediately, or refrigerate, wrapped with plastic wrap, up to 2 days, until ready to serve.</li>
