<p>Sometimes you just need to fry something. It&#8217;s a necessary evil.<br />
Sure frying isn&#8217;t good for you, well neither is picking your nose, but I see people do that all the time. We will call it even.</p>
<p>I needed to get my brain working overtime because I wanted to created a recipe for the Johnsonville <a href="http://www.facebook.com/JohnsonvilleKitchens/app_132197500240171">Wake Up To Johnsonville Photo Recipe Contest</a>.</p>
<p>My husband might have had a little influence on this one. He always comes up with some whacked out food ideas. He wanted these on a stick, but the sausage links are just too thin for that, so I decided on the balls.</p>
<p>They are mighty tasty, mighty tasty indeed! Certainly not your everyday breakfast meal, but they sure are a nice delight every once in a while&#8230;.you know, when you need a little oil in your life.</p>

<li class="ingredient">1 package Johnsonville Sausage Patties(8 ct), original recipe</li>

<li class="ingredient">1 1/2 cups Bisquick</li>
<li class="ingredient">1 tablespoon Sugar</li>
<li class="ingredient">1/4 teaspoon Cinnamon</li>
<li class="ingredient">1/2 teaspoon Vanilla Extract</li>
<li class="ingredient">1 Egg</li>
<li class="ingredient">1/2 cup Milk + 2 Tablespoons</li>
<li class="ERSeparator">Syrup</li>
<li class="ingredient">1 /2 cup Pure Maple Syrup</li>
<li class="ingredient">1 tablespoon Butter</li>
<li class="ingredient">2 tablespoon Heavy cream</li>

<li class="instruction">Place about 2&#8243; oil in a sauce pan and heat to 350</li>
<li class="instruction">Place the sausage patties in a medium bowl.</li>
<li class="instruction">Break them up so they are no longer formed.</li>
<li class="instruction">Reform into about 22 1 1/2 teaspoon sized balls.</li>
<li class="instruction">Place the sausage balls in a large skillet over medium heat and cook for about 15 minutes, turning often.</li>
<li class="instruction">Remove and drain on a plate lined with paper towels.</li>
<li class="instruction">In a medium bowl, mix together the bisquick ,sugar and cinnamon.</li>
<li class="instruction">Whisk in the vanilla, egg and milk until smooth.</li>
<li class="instruction">Pick up a cooked sausage ball with a toothpick and dip into the batter, completely cover the sausage with batter.</li>
<li class="instruction">Carefully lower into the oil and fry for about 1- 1 1/2 minutes or until golden brown.</li>
<li class="instruction">Remove and drain on a paper towel lined plate</li>

<p>There is nothing fancy, and no special ingredients in this. I am sure you have it all in your house right now.</p>

<p>Yeah, these are delightful. Easy too. They would be perfect on your Easter Brunch Table.</p>
<p>The inside is warm and creamy with sweet blueberries and the icing had a slight lemon flavor that goes perfect with the fruit.</p>

<li class="instruction">In a small bowl, mix together the cream cheese,brown sugar and vanilla extract until blended.</li>
<li class="instruction">Unroll and separate the crescent rolls onto un un greased cookie sheet.</li>
<li class="instruction">Evenly distribute the cream cheese mixture over the crescent rolls and spread over the entire tops of the triangles.</li>
<li class="instruction">Evenly sprinkle the blueberries over the crescent rolls with cream cheese.</li>
<li class="instruction">Roll up.</li>
<li class="instruction">Place tip side down on the cookie sheet.</li>
<li class="instruction">Bake for 12-15 minutes or until lightly browned.</li>

<li class="instruction">In a small bowl, mix together the butter, cream cheese,powdered sugar,vanilla extract and lemon extract until smooth.</li>

<p>&#8220;Man, these would get tore up at a party!&#8221; That was a quote from my husband when he tasted these little gems.</p>
<p>I had an extra tube of crescent rolls left over from when I made my scrumptious <a href="http://www.thehungryhousewife.com/2012/03/crescent-cinnamon-rolls.html">Crescent Cinnamon Rolls</a>.<br />
<a href="http://www.alouettecheese.com/"> Alouette </a>sent me some of their new Cheddar Cheese Spread.  I thought they would make the perfect pair and they did.<br />
I used the <a href="http://www.alouettecheese.com/cheese/cheddar.aspx">Bacon Cheddar</a> flavor which gave the buttery crescent rolls a nice smoky cheesy flavor.</p>
<p>I have been<em> all</em> about easy these days. Do you ever feel so bogged down, you feel like you will never catch up. Yep, that&#8217;s me lately.<br />
It&#8217;s driving me crazy. Seems like I am at the bottom of a black hole and can&#8217;t get out. You all know the feeling.</p>
<p>So if you are absurdly busy like me and want a quick and easy little roll or appetizer, give these a whirl. You will love them.</p>

<p>Don&#8217;t you just love lettuce wraps?<br />
You can eat a plethora of them and not feel guilty or feel like you need to go purge.<br />
I honestly don&#8217;t remember the first place I had them, put I remember the coolness of the crispy lettuce against the piping hot filling. It was pure heaven. And very low in carbs. Yeah, I could probably live on lettuce wraps for the rest of my life. And the fact that this meal serves a family of four for $10 means my grocery bill would be pretty cheap for dinner for the remainder of my years. However, I am sure my offspring might object on the lettuce wraps for the rest of <em>their</em> lives.</p>

<li class="ingredient">1 1/2 teaspoon oil, divided</li>
<li class="ingredient">8 oz. portobello mushrooms, chopped</li>
<li class="ingredient">1 pound ground beef</li>
<li class="ingredient">1 (1 oz.) package Mongolian Beef Seasoning Mix</li>
<li class="ingredient">1/4 cup carrot (1/2 large carrot), chopped</li>
<li class="ingredient">1 head Boston bibb lettuce</li>
<li class="ingredient">2 scallions, chopped, divided</li>
<li class="ingredient">1/2 cup crispy chow mein noodles (wide style)</li>
<li class="ingredient">1 cup Hannaford white rice, cooked to package directions</li>
<li class="ingredient">3/4 cup Hannaford Frozen Peas and Carrots (from 16 oz. package), thawed</li>
<li class="ingredient">2 eggs, whisked</li>
<li class="ingredient">3 tablespoons Soy Sauce</li>
<li class="ingredient">Salt and Pepper</li>
</ul>

<li class="instruction">Mix the Mongolian Beef Seasoning and 1/4 cup water together in a small bowl and</li>
<li class="instruction">set aside.</li>
<li class="instruction">Over medium heat, add 1/2 teaspoon oil to a medium skillet</li>
<li class="instruction">Add the mushrooms and carrots and cook for 3 minutes. Remove and set aside</li>
<li class="instruction">In the same skillet, cook for meat until no longer pink, about 5 minutes. Drain</li>
<li class="instruction">Place the meat back into the skillet and add the mushrooms, carrots and Mongolian beef seasoning. Stir to incorporate and cook until heated through.</li>
<li class="instruction">Separate the lettuce into 8 “cups”.</li>
<li class="instruction">Divide the filling into each cup. About 1/3 cup per piece of lettuce.</li>
<li class="instruction">Sprinkle with 1 scallions and crispy chow mein noodles.</li>
</ol>

<li class="instruction">In a medium skillet, over medium heat add 1 teaspoon oil.</li>
<li class="instruction">Add the thawed peas and carrots and cook for about 3-5 minutes or until carrots are softened</li>
<li class="instruction">Add the eggs and quickly stir until cooked.</li>
<li class="instruction">Add the cooked rice and stir to combine.</li>
<li class="instruction">Stir in the soy sauce and 1 scallion.</li>
<li class="instruction">Season to your liking with salt and pepper</li>

The desserts are what get me. Not to say they aren&#8217;t delicious, but they are not so good for your waistline.<br />
I wanted to lighten things up a bit. These in no way are a substitute for a big ol scoop of apple crisp, but they completely satisfy my sweet tooth without adding 1000 calories. And since I used <a href="http://www.wasa-usa.com/">Wasa Whole Grain Crispbread</a>, I got to sneak some extra fiber in my diet. Sneaky-Sneaky.</p>

			<content:encoded><![CDATA[<p>Thought I would share some yummy food that would be perfect for the Super Bowl&#8230;wait, am I going to get sued for saying &#8220;Super Bowl&#8221;?</p>
<p>First I thought I would share something all parents would understand.<br />
This was the evening talk Saturday night&#8230;</p>
<p>My son(almost 9 years old)- &#8220;How do ladies have  babies, where did I come from?&#8221;</p>
<p>Me-(caught completely off guard)- We bought you in Mexico.</p>
<p>Son- &#8220;Thats weird, well then why don&#8217;t I speak Spanish?&#8221;</p>
<p>Me-(tongue tied) &#8211; &#8220;Um, I dunno, go ask your Dad&#8221;</p>
<p>Yep, thats how the &#8220;talk&#8221; went. I surrendered into my shell like a scared little turtle.<br />
I went to my <a href="http://www.facebook.com/pages/The-Hungry-Housewife/140856539283693">Facebook</a> friends for help. They basically said that I better have the talk now before someone else told him.<br />
So that is what I did&#8230;the next day.</p>
<p>We went to get gas and I choose the longest car wash. As we pulled into the car wash, I turned around and asked him, &#8220;So, do you really want to know where babies come from?&#8221; He said yes.<br />
I told him the basics. You could tell he was totally uncomfortable.He kept talking about the soap on the windows. He though the whole thing was gross. I asked if he had any questions and he said<br />
NO!<br />
I suppose thats good for now, I am sure more questions will follow. Ahhhh, the joys of parenthood!</p>

			<content:encoded><![CDATA[<p>Hi all, I hope you had a wonderful Holiday Season. Mine, like I am sure everyone else&#8217;s was packed full and honestly is a bit of a blurr. I spent the last half of my Birthday(Christmas Eve) and into Christmas day cleaning up after my daughter who had the stomach virus. Poor little thing..who wants to be puking on Christmas? And then she gave it to me the day after Christmas..good times..good times. Let me just tell you that Red Robin tastes so much better going in than coming back out. ugggg</p>
<p>New Years Eve was great. My husband decided he wanted to have a party last minute. And by last minute, I mean the day before. Gotta love em&#8217;.<br />
If you read <a href="http://www.thehungryhousewife.com/2011/12/my-fight-with-the-scale.html">this</a> post, you know that none of my clothes fit me, so I began stressing out on what I was going to wear for the party. I mean, people usually get all fancied up for New Years.<br />
So I decided to make our New Years party a PAJAMA  party! Everyone had to come in the P.J&#8217;s. Sure, I still put on some make up, but let me tell you how comfy I was!!!!<br />
I had too much to drink&#8230;doesn&#8217;t happen often, but when it does&#8230;.good lord.  Diet Coke and Cherry Flavored Vodka is VERY easy to chug down.<br />
I was dancing all night long. One low point was, dancing to Beastie Boys- Brass Monkey with my dog under one arm and a wooden spoon in the other hand as a microphone.<br />
I had fun</p>

<li class="ingredient">Edible Black and Orange markers(can find them at the craft store) or Black and Orange Tube writing frosting</li>
<li class="ingredient">2 small thin pretzel sticks</li>
<li class="ingredient">1 Sheet rolled fruit snack(such as a Fruit Roll Up) cut into a 1/4-1/2 inch long strip</li>
<li class="ingredient">1 Hershey’s Kiss</li>
</ul>

<ol>
<li class="instruction">Place 1 toothpick in the center on 1 marshmallow.</li>
<li class="instruction">Place a marshmallow on the top of that toothpick.</li>
<li class="instruction">Place a second toothpick through the center of the second marshmallow.</li>
<li class="instruction">Place the 3rd marshmallow on top of the second.</li>
<li class="instruction">Using the markers or the frosting, draw on two black eyes and 3 black buttons and a mouth. Using the orange marker or frosting draw on a nose.</li>
<li class="instruction">Place the pretzels in sides of the middle marshmallow for the arms.</li>
<li class="instruction">Drape the Fruit Roll up around the neck and arms of the snowman for a “scarf”</li>
<li class="instruction">Place the 3rd toothpick through the middle of the top marshmallow and poke the Hershey Kiss on top to serve as his hat.</li>

<p>I sooooo look forward to pumpkin carving each year for the sole reason of roasting pumpkin seeds.<br />
You see, pumpkins don&#8217;t last long once carved here in the Florida heat. We carve our pumpkins usually 1-2 days before Halloween. If we do them much earlier, they turn into a black moldy pile of mush&#8230;it not a pretty sight.<br />
My kids each get to pick their own pumpkin to carve, which means MORE SEEDS!<br />
Yes, I get the dirty job of separating the seeds from the pumpkin meat, but thats all fine and dandy for me.<br />
There are many ways to can season roasted pumpkin seeds. You can make them sweet, you can make them spicy, the possibilites are endless. For me, I make them they way my Momma used to..simple.<br />

<li class="ingredient">3 cups pumpkin Seeds, seeds from 2 large pumpkins</li>
<li class="ingredient">3 tablespoons butter, melted</li>
<li class="ingredient">1 tablespoon extra virgin olive oil</li>
<li class="ingredient">3/4 tablespoon course Kosher salt</li>
<li class="ingredient">1/4 teaspoon freshly ground pepper</li>

<li class="instruction">To clean the pumpkin seeds, separate them from from pumpkin and rinse them in a strainer.</li>
<li class="instruction">Pour the pumpkin seeds on a large baking sheet and allow to dry in the open air for several hours to overnight.</li>
<li class="instruction">Preheat oven to 325.</li>
<li class="instruction">Place the pumpkin seeds in a large bowl.</li>
<li class="instruction">In a measuring cup, melt the butter in the microwave.</li>
<li class="instruction">Mix the olive oil, salt and pepper into the melted butter.</li>
<li class="instruction">Pour the butter mixture over the pumpkin seeds and stir to incorporate.</li>
<li class="instruction">Pour the pumpkin seeds on a large baking dish.</li>
<li class="instruction">Bake them for 40 minutes, stirring every minutes.</li>
<li class="instruction">Allow to cool and store in an airtight container at room temperature.</li>
