I’m so excited one of my good friends and fellow blogger, Katie from Katie’s Cucina and Sew Woodsy is having a baby! Yeah. I just love her.

This is her and her adorable husbands first baby! I’m terribly excited for them. I might just have to go see Katie after the baby is born just so I can smell its sweet baby head. Weird? Sorry.

If she is anything like the majority of new Moms, the last thing she will want to do is cook.
People often make dinners for new parents, but new parents need a quick and easy breakfast too!

I love oatmeal, but hate cooking it, because it ALWAYS boils over….never fails!
Seriously there is nothing easier than Overnight Oatmeal…no cooking and no boiling over.

All you do is mix your ingredients the night before and just like that you have a nutritious breakfast for in the morning. Some morning I eat it right out of the fridge and other mornings, I pop a some in the microwave to take the chill off.
I prefer a “meatier” oatmeal like a steel cut or my favorite, Coach’s Oats. You can use regular oats, but I found the texture to be really mushy.

You can add whatever flavorings you like. I go with the simple brown sugar/maple oatmeal…my fav.
Oh and I always add Dole Chia seeds to my oatmeal for extra nutrition and extra filling power.

Overnight Oatmeal that doesn't require cooking
Ingredients
  • 1 cup Oats (steel cut or Old Fashion)
  • 1 cup Coconut Milk
  • 2 cups Unsweetened Vanilla Almond Milk
  • 1 tablespoon Chia Seeds
  • ¼ teaspoon Maple Extract
  • ¼ cup Brown Sugar
Instructions
  1. In a medium bowl, mix together all ingredients except brown sugar.
  2. Cover and place in the refrigerator for 8 hours to overnight.
  3. Before serving mix in brown sugar.
  4. Top with fresh fruit and toasted coconut if you wish
Notes
Makes 4 cups
If you are watching your calories, you can omit the brown sugar and use a low or no calorie sweetener.

The Perfect Milk for your Milk Hater in the house

Let me tell you a little story about this child of mine….

He HATES milk. Like seriously hates it. He won’t even eat cereal because of the milk. Truly, it’s tragic.

I do believe it’s partially my fault. He was my first born and I really had no clue what I was doing. . I had a dog once, I could certainly raise a child.
When it was time to introduce real milk into his diet, I gave him Pedisure instead because he was sooooo tiny. Well, I think that totally ruined his future in milk consumption.  He got used to the sweetness.

Soooooo, when TruMoo wanted me to try their new Chocolate Marshmallow milk, I saw it as a challenge.

I knew a true milk hater personally, so he was my first taste tester.

When I told him I needed him to try this new milk, he gave me the look like any almost 11 year old kid would give their Mom. You know the look…the “You have got to be kidding me” look.
I bribed him..I did. $5 if he tasted the milk. Remember ,I have great parenting skills?!
Money talks people.
He took one sip, gave me this half grin and said, “Mmmmmm, tastes like cold hot chocolate.”

Whaaaaa? My milk hater son likes MILK. This is huge y’all. Granted it’s not regular white milk, but it’s still milk.

Ohhh, and pop it in the milk for 30 seconds….Deeeee-licious!

I do realize that there are raw eggs in brownie batter, but I have said it before, I have been eating raw betters of alllll sorts my whole life and I am still here to tell about it.
Maybe I am playing Russian Roulette with my life, but I have yet to pull the trigger and have the salmonella bullet hit me in the head.

Now I don’t eat all the batter obviously, since you are looking at a finished product on your screen, but I certainly eat a few tablespoons before I pop them in the oven.  It’s my thing….what can I say.

Anyhoooooo, One word about these Brownie Bites with Caramel Buttercream….EASY and delicious. Ok, that’s two words, but who is counting?

Obvi they start off with a box mix and then a standard buttercream with some Caramel ice cream topping mixed in for an instant caramel buttercream!

This Smucker’s Butterscotch Caramel topping kinda rocks my world, but you can use whatever caramel’s flavor you have on hand.

Brownie Bites with Caramel Buttercream
Ingredients
  • 1 18.75 oz. box Brownie Mix (not family size), mixed to package directions using the amounts of eggs,water and oil the package calls for.
Caramel Buttercream
  • ¾ cup Butter, room temperature
  • 2½ cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Caramel Topping
  • 1 tablespoon Milk
  • Additional caramel sauce for drizzle
Instructions
  1. Preheat oven to package directions.
  2. Spay a mini cupcake tin with non-stick spray.
  3. Divided the prepared brownie batter evenly among the 24 mini cupcake wells
  4. Bake for 20 minutes or until a toothpick comes out clean.
  5. Allow to cool completely.
Caramel Buttercream
  1. In a medium bowl, using an electric mixer, beat butter until smooth.
  2. Add powdered sugar, vanilla, caramel and milk, beat until smooth.
  3. Scoop the frosting into a 12" piping bag fitted with a piping tip with a larger round opening. I use a 1A.
  4. Hold the piping bag vertically above the brownie, apply pressure so a mound of frosting comes out, release pressure slightly then pipe a smaller mound on tip.
  5. Drizzle with more caramel sauce.
