None of my teams are in the game this year, so I suppose I will watch it for the commercials. That’s what girl do right? Watch the game for the new commercials.

If you are entertaining for the game, you know you need a bunch of easy, non-fancy some what do-ahead food items.

There is really nothing easier than throwing some chicken breasts in your Crock-Pot® Slow Cooker, tossing in your favorite BBQ sauce and setting it on low for 6 hours. Then all you do is shred it up and pop it on some buns. You can even just keep the chicken in the Crock-Pot® Slow Cooker, pre-slice some buns and have people serve themselves whenever they please. That way the buns don’t get soggy.

Isn’t the Crock-Pot® Slow Cooker a life saver???

Crock-Pot® BBQ Chicken Sandwiches

Easy BBQ Chicken Sandwiches
Ingredients
  • 1½ lbs. boneless skinless chicken breasts
  • 1 18 oz jar BBQ sauce
  • 2 large onions,thinly sliced
  • 1 tablespoon butter
  • 4 hamburger rolls, buttered and toasted
  • butter for hamburger rolls
Instructions
  1. Place the chicken in Crock-Pot® Slow Cooker
  2. Pour in BBQ sauce
  3. Cook on high for about 5½ to 6 hours.
  4. Remove the chicken and shred on cutting board.
  5. Return to the crock pot and incorporate the shredded chicken with BBQ sauce
  6. Distribute onto toasted buns and top with cooked onions
ONIONS
  1. Place the 1 tablespoon butter in a large pot with a lid.
  2. When the butter is melted, add the onions and cover.
  3. Cook on medium low for about 45 minutes, covered stirring occasionally.
  4. Serve over shredded chicken.

Soooo, I shall be the rule follower that I am and call it ‘The Big Game”.

I can’t even begin to tell you how easy this little tasty appetizer is. Their assembly take less than 5 minutes…probably like 2 minutes. Very non committal.

Go ahead and make these for the Big Game. I am sure they will be gobbled right up!

I again choose Lorraine® Cheese because I knew once it melted, it would drape perfectly over the chicken nugget and beg to be popped into the mouth! And I indeed was correct, just take a gander at the photo below…don’t you just want to lick your screen??!?!?!?

Place the Lorraine® Cheese and the ham on the cooked chicken nuggets and pop them back in the oven for a minute or so until the chases begins to melt. Top with honey mustard and parsley.

Ingredients
  • 16 good Quality Frozen Chicken Nuggets
  • 2 slices Lorraine® Lacy Cheese cut into 16 2" square pieces
  • 2 slices deli Ham, thinly sliced, cut int 16 pieces
  • 4 teaspoons Honey Mustard Dressing
  • Parsley for garnish
Instructions
  1. Cook chicken nuggets per package directions.
  2. Remove from oven(keep oven on).
  3. Place a square of cheese on chicken nugget, followed by ham. Place back in oven and bake for an additional minute or until cheese has melted.
  4. Remove from oven, spread ¼ teaspoon honey mustard dressing onto, garnish with parsley if desired.
  5. Serve warm.

Why must we insist on going to a fancy schmancy Fondue restaurant to spend over $100 on fondue?

Fondue is ridiculously easy to make and you probably already have everything on hand to make it.

I hate to be the bearer of bad news, but Valentines Day is just a month away, save yourself some money and do “fancy” at home.

Oh and guess what? A fondue pot is not necessary. You can easily make it on the stovetop in a sauce pan over low heat.

I wanted my dippable gold goodness to be ultra creamy, so the obvious choice in cheese was Lorraine® Cheese Original Deli Sandwich Slices.

Lorraine® Cheese is know as the crown jewel of sandwich cheese, but since I knew that it melted beautifully from my Cuban Sandwiches, I knew it would be scrumdiddlyumptious in a fondue.

 Like I said, fondue is easy.

Swiss Cheese Foundue

Just rip your cheese into shreds.

Toss it with some flour to help thicken the cheese mixture. Then continue with the rest of the recipe, which is really just sautéing garlic in some wine and then slowly adding the cheese while stirring.

Swiss Cheese Fondue

Creamy Swiss cheese fondue
Ingredients
  • 2 8 oz. packages Lorraine® Cheese Original Deli Sandwich Slices, roughly torn
  • 1½ tablespoons Flour
  • 4 cloves Garlic, minced
  • 1¼ cups White Wine
  • 1 teaspoon Sherry Wine
  • ½ teaspoon Coarse Kosher Salt
  • ¼ teaspoon Worcestershire Sauce
  • ⅛ teaspoon Pepper
Instructions
  1. Place the torn Lorraine® Cheese Original Deli Sandwich Slices into a large bowl, toss with flour and set aside.
  2. In a small sauce pan over medium heat or a fondu pot, add garlic and a splash of the wine. Cook for 30 seconds.
  3. Add remaining wine.
  4. Add cheese in handfulls, stirring in-between each addition until smooth.
  5. Stir in sherry wine, salt , worcestershire sauce and pepper.
  6. Add additional salt if desired.
  7. Serve warm in the fondue pot.
Notes
Serve with cut up crusty french bread, apples and or a variety of vegetables.

Cajun Roasted Chicken and Vegetable 15 Bean Soup

Ingredients
  • 1 package Hurst's Cajun 15 Bean Soup, rinsed
  • 4 Garlic Cloves, minced
  • 3 carrots, chopped into bite sized pieces
  • 2 Zucchini, chopped into bite sized pieces
  • 1 large Red Onion, chopped into bite sized pieces
  • 1 pint Cherry Tomatoes
  • 1½ lb. Boneless Chicken Breasts
  • 1 teaspoon Coarse Kosher Salt
  • 1 teaspoon Onion Powder
  • ½ teaspoon Garlic Powder
  • ¼ teaspoon Chili Powder
  • ¼ teaspoon Pepper
  • 2 tablespoons + 1 teaspoon Extra Virgin Olive Oil
  • 1 6oz. bag baby Spinach
Instructions
  1. Place beans in a Large bowl, cover with 2 quarts water. Allow to soak overnight, or at least 8 hours. Rinse.
  2. Place rinsed beans in large stock pot, cover with 2 quarts water.
  3. Bring to boil.
  4. Reduce heat, partially cover and simmer for 2½ hours.
  5. Preheat over to 400.
  6. Meanwhile, in a small bowl, mix together salt, onion powder, garlic powder, chili powder and pepper; set aside.
  7. Line a large rimmed baking sheet with parchment paper or foil.
  8. In a large bowl, toss together garlic, carrots, zucchini, onion and tomatoes with half the spice mixture and 2 tablespoons olive oil. Pour onto baking sheet.
  9. Cover chicken breasts with remaining 1 teaspoon olive oil and remaining spice mixture and place on baking sheet with vegetables.
  10. Bake 40 minutes. Remove and shred chicken.
  11. After beans have been cooking 2½ hours, add shredded chicken, roasted vegetables and cajun seasoning packed.
  12. Cook on low for an additional 30 minutes.
  13. Add spinach during last 5 minutes of cooking.
  14. Season with additional salt and pepper if desired

I know the majority of you have never had a Cuban Sandwich, especially if you have never been to Ybor City here in Tampa.

The original Cuban Sandwich was called the mixto, a sandwich comprised of ham, roast pork,swiss cheese and mustard made for Ybor City cigar workers.

You can get “Cuban Sandwiches” most anywhere in Florida now, but most of them are just glorified deli sandwiches, not deserving of the name “Cuban Sandwich”.
What makes a Cuban a Cuban is the roast pork. Nooooo, not sliced Spanish roast pork from the deli. It needs to be a Boston butt that his been slowly cooked in Adobo All Purpose seasoning and mojo criollo for hours and then shredded(I do this in the Slow Cooker).
Another item that makes the sandwich perfect is the bread….Cuban Bread. I am sure you wont be able to find it in say, Michigan, so you can settle on a nice hefty loaf of French Bread.
Cheese is also a must. May I suggest the crown jewel of sandwich cheese…
Lorraine® Cheese Reduced Fat Deli Sandwich Slices. Lorraine Cheese is uniquely different than most Swiss cheeses. You see I am not the hugest Swiss Cheese fan but Lorraine Cheese is much more mild the most Swiss and it has a creamier flavor and lacy light texture that melts perfectly on hot sandwiches.

The trick here is to make a large Boston Butt and use the meat for several dinners, reserving 2 cups of meat for these tasty sandwiches.
Start assembling your sandwiches. Slather with the mayo/mustard mixture on every piece of bread. Top one slide with 1 1/2 slices of Lorraine® Cheese Original Deli Sandwich Slices.

Put the tops on and slather on some butter on the tops and bottoms of the bread.

This is my fancy sandwich press. I actually do have one, but it is packed away in one of my boxes that I packed when we moved. But you know what, this little trick works perfect. A heavy brick covered in foil is A LOT cheaper than purchasing a sandwich press if you don’t have one.

Cuban Sandwich
Ingredients
  • 12 oz. Cuban Bread (approximately 24" long)
  • ⅓ cup Mayonaise
  • 1 tablespoon Yellow Mustard
  • 3 slices Lorraine® Cheese Original Deli Sandwich Slices
  • ½ lb. Deli Ham, thinly sliced
  • 2 cups Shredded Pork(recipe below)
  • Pickle Slices
  • 4 tablespoons Butter, room temperature
Shredded Roast Pork
  • 4-5 lb. Boneless Boston Butt
  • Adobo All Purpose Seasoning
  • 3 cups Mojo Criollo
Instructions
  1. Cut bread in half then cut those halves in half vertically.(you will have 4 pieces of bread, 2 tops and 2 bottoms)
  2. In a small bowl, mix mayonaise and mustard together; spread on each piece of bread.
  3. Put 1½ slices on Lorraine® Cheese Original Deli Sandwich Slices on 2 pieces of bread.
  4. On the bottom pieces of bread, add, ham, roast pork and pickles.
  5. Place the top bread on the sandwich.
  6. Brush the tops and bottoms of the sandwiches with butter.
  7. Cut each sandwich into 2 equal pieces.
  8. Place in a sandwich press for 3-4 minutes or until bread is golden.
Shredded Roast Pork
  1. Sprinkle Boston Butt liberally with Adobo All Purpose Seasoning
  2. Place in slow cooker.
  3. Add Mojo Crillio
  4. Cook on low for 8 hours.
  5. Remove, shred the meat and return to the juice in slow cooker.
  6. Reserve 2 cups of meat for the sandwiches.
Notes
If you do not have a sandwich press(like me currently), cover a heavy garden brick with heavy duty aluminum foil.
Place the sandwich in a large skillet over medium heat and put the brick on top of the sandwich. After 3-4 minutes, flip and repeat on the opposite side.

You can find Mojo Criollo and Adobo seasoning in the ethnic section of your grocer or on-line.
