I’m a few days late wishing everyone Merry Christmas, but that’s how I roll lately!

I truly hope that everyone has had a fabulous 2013. I wish you all a Happy Everything and Merry Always.
Every year I share our little family photo shoot taken by my talented friend Kelly Noel Photography.  So here is the 2013 edition.

Sometimes getting them to be serious, proves to be a difficult task.

I mean, for real…I have some pretty cute kids.

Peppermint Fudge

Peppermint Fudge

Are you scurrying around trying to find an easy sweet treat to bring to your Holiday party?
I totally have you covered. You’re welcome.

Peppermint Fudge.

While I am a huge peppermint fan, I didn’t want my fudge to be all Peppermint-y in the fudge itself. Sooooo, I just stole some candy canes off the Christmas tree, crushed them up and threw them on the fudge.

Just the right amount of peppermint.

I have been told by everyone who tastes my fudge, it is the best fudge they have tasted. I have posted it on my site before…The Best Ever Fudge.

You know what, the recipe is right on the back of the Kraft Jet Puffed Marshmallow Cream Jar.
Their technical term for their recipe is “Fantasy Fudge”

Anyhooo, spruce up your fudge with some stolen candy canes for the perfect Holiday Treat!

Peppermint Fudge

Peppermint Fudge
Ingredients
  • 3 cups Sugar
  • 1½ sticks Butter
  • 1 (5 oz) can Evaporated Milk
  • 1 (12 oz) bag semi-sweet chocolate chips
  • 1 jar (7oz) Jet-Puffed Marshmallow Creme
  • 1 tsp Vanilla Extract
  • 4 Peppermint Candy Canes, crushed
Instructions
  1. Line a 9″ square pan with foil.
  2. In a medium pot over medium heat, bring the sugar, butter and milk to a rolling boil, stirring constantly.
  3. Allow to boil( at FULL BOIL) for 3 minutes (set the timer!!!)
  4. Remove from the heat.
  5. Stir in chocolate chips and marshmallow cream until completely smooth. Stir in vanilla.
  6. Pour into your foil lined pan, sprinkle with crushed candy canes.
  7. Allow to cool completely.
  8. Lift the fudge out of the pan by the foil liner
  9. Cut into small squares.

After they devour the sweet crunchy little nuts, they can keep the mason jar.
I mean, who doesn’t love mason jars?

Aside from the nuts being ridiculously easy to make, packaging them up all cute is also a snap.

All you need is 8 mason jars, some scrap book paper(design of your liking), tags and some twine.

Use the lid from the mason jar and use it to trace a circle.
Cut it out and place it on top of the lid before you screw on the metal screw band.
Cute!
Write a little note on the tag and tie with some twine around the lid of the mason jar.
And your done. Ready for gift giving.

Maple Cinnamon Candied Almonds

Maple Cinnamon Candied Almonds
Ingredients
  • 1 lb. Natural Almonds, shelled
  • ⅓ cup Light Brown Sugar, lightly packed
  • ⅓ cup White Sugar
  • 1⅛ teaspoon Cinnamon
  • ½ teaspoon Regular Table Salt
  • 1 Egg White
  • ½ teaspoon Vanilla Extract
  • ½ teaspoon Maple Extract
Instructions
  1. Preheat oven to 325.
  2. Line a large rimmed baking sheet with non-stick foil or regular foil sprayed with non-stick spray.
  3. In a medium bowl, mix together brown sugar, white sugar,cinnamon and salt.
  4. In a large bowl, whisk the egg white until nice and bubbly.
  5. Add the vanilla and maple extract to the egg white and whisk again until frothy.
  6. Pour the almonds into the egg whites and mix to incorporate.
  7. To the almonds and egg whites add the sugar mixture and mix thoroughly.
  8. Pour out onto prepared baking sheet and bake for 30 minutes, stirring halfway through.
  9. Allow to cool completely before packaging.
Notes
1 recipe will yield SIX 8oz. mason jar gifts.

My next recipe for Hurst’s Beans is an easy meatless dip using the protein power packed Pinto Bean.
It’s an easy dip that you can just layer on a regular plate for easy serving. No digging out that 9 x 13 pan.

7 Layer Pinto Bean Dip

An easy game day or party dip.
Ingredients
  • ½ package Hurst's Pinto Beans, reserve flavor packet for another use.
  • 2½ tablespoon Taco Seasoning
  • ¼ teaspoon salt
  • ½ cup Sour Cream
  • ½ cup Shredded Cheddar Cheese
  • 1 cup Shredded Lettuce
  • 2 medium Tomatoes, chopped
  • ⅓ cup Black Olives
  • Dipping chips of choice
Guacamole
  • 3 Avocados,halved, seeded and peeled
  • ½ lemon, juiced
  • 3 teaspoon Sour Cream
  • ½ teaspoon Sriracha Sauce
  • ¼ teaspoon Salt
  • ⅛ teaspoon Pepper
Instructions
  1. Rinse beans until water runs clear. Sort through beans and discard any pebbles or debris. In a large bowl, cover rinsed beans with about 3″ of cold water; soak overnight.
  2. After soaking, place beans in a large soup pot with 8 cups of water. Bring to a rolling boil, then reduce the heat to medium and simmer for about 2 hours, or until beans are tender. Add water during cooking if needed.
  3. Drain beans. Place in a medium bowl.
  4. To beans, add taco seasoning and salt. Mix until incorporated and the beans are somewhat mashed.
  5. Spread the beans out onto a dinner sized plate.
  6. Layer with guacamole(recipe below), sour cream, lettuce, tomatoes and black olives.
  7. Serve with your chips of choice.
To make Guacamole, place the avocados, lemon, sour cream, Sriracha, salt and pepper in a medium bowl and using a fork, mash and mix.
