Chocolate Covered Potato Chips 002 We used to have nice lazy spring days, going to the beach or relaxing at home by the pool. However, now that my son is obsessed with baseball, we spend hours and hours during the week and weekend at the baseball field. I know so many of you can relate. But you know what? I actually love it. [rss-cut] Because we are at the field so much, we have not so fancy picnics at the baseball park. I wish I would say I brought a beautiful wooded thatched picnic basket and we sprawled out on a red and white gingham picnic blanket…yeah, that doesn’t happen. We’re stuck on the oh so comfy (not) aluminum bleachers. Which is ok, because if we were all cute and had our picnic on the ground, the ants and bugs would literally carry us away…the price of living in Florida. I have become a pro at packing our meals for our time at the field. Again, no cute picnic basket, we use thermal totes and the reusable ice packs to keep everything cool. We usually pack your normal….sandwiches, drinks, fruit, string cheese and chips. Chocolate covered potato chips!!!! Speaking of chips, don’t you hate when you pack chips and they get all squished? Annoying. I have some advice, switch to Kettle Brand Chips. I learned a long time ago, the thin chips are a no-go when packing for a picnic! Kettle Brand Chips are ULTRA crunchy and super sturdy. Chocolate Covered Potato Chips

Chocolate Covered Potato Chips
Ingredients
  • 1 /2 8.5 oz. Kettle Brand Sea Salt Potato Chips
  • 1 cup semi-sweet Chocolate Chips
  • Coarse Kosher Salt
Instructions
  1. Line a baking sheet with parchment paper.
  2. Place the chocolate chips in a bowl or large measuring cup.
  3. Microwave the chocolate chips for 30 seconds and stir. Cook in additional 15 second increments, stirring in-between until melted and smooth.
  4. Immediately dip the potato chips one by one in the melted chocolate and place on the lined baking sheet.
  5. Lightly sprinkle with Kosher salt.
  6. Allow to harden at room temperature for about and hour or until the chocolate has hardened.
  7. Store in a sealed container.

    One of my favorite picnic basket foods is Curried Chicken Salad with Apples and Raisins. It is super easy to make and holds up wel in hot weather. I like a little spice in my picnic basket 🙂
