If you follow me on Instagram and Facebook, you will know I went blueberry picking and came home with over 7 pounds of blueberries.

Back on track Leslie, back on track….

So what does one do with over 7 pounds of blueberries?

Well, you eat so many that you feel like Violet Beauregarde. “Violet, your turning Violet.”

I measured them into 1 cup amounts, put them in baggies and popped them in the freezer.

I have lots of plans for them.

Well, ViSalus contacted me and wanted me to create a recipe for them using their shape mix…you might have heard them referred to as “Body by Vi™” or heard people talking about the Body By Vi™ Challenge. People loose crazy amounts of weight! Go look at all the success stories here.

I am always on the hunt for a good grab and go breakfast or lunch, well because I am always on the go, and unfortunately don’t have time to sit down and eat.

I received my ViSalus in the mail and mixed myself up a shake. I mixed 12 oz. Unsweetened Vanilla Almond milk and 2 scoops of Vi-Shape®. IT TASTES LIKE CAKE MIX…I swear.  Oh, and I figured it was 3 WW points for the shake. 3 points for breakfast..yes please.

Sooooo, I am totally incorporating these HIGH protein, low carb,low fat shakes into my point counting.Click here for the nutritional info on the shakes.

Anyhow, back to recipe thought process….. those blueberries.

I took a 6 oz. container of Non Fat Greek Yogurt and mixed in 1 1 /2 scoops of the Vi-Shape®. I could have scarfed up the Vi-Shape® spike yogurt up, but those blueberries needed attention.

I dipped the blueberries in the yogurt, placed them on some non-stick foil and stuck them back in the freezer until frozen.

BAM..super healthy snack.

They were delish. I have always loved munching on frozen fruit, but adding the extra protein and nutrition from the Yogurt and Vi-Shape shake mix, made them extra delightful and nutritious.

If you don’t have any Vi-Shape® on hand at this moment and you HAVE to have these blueberries right now, you can just substitute some vanilla Greek Yogurt and they would be equally scrumptious.

Yogurt Covered Blueberries
Ingredients
  • 6 oz. Non Fat Plain Greek Yogurt
  • 1½ scoops ViSalus Vi-Shape Mix
  • 1 cup Frozen Blueberries
Instructions
  1. Line a 9 x 13 pan with non stick foil or parchment paper.
  2. In a small bowl, mix together yogurt and Vi-Shape Mix.
  3. Toss in a couple blueberries (not all of them because it will freeze the yogurt), coat the blueberries with the yogurt and remove with 2 toothpicks.
  4. Place on the lined pan.
  5. Repeat until all the blueberries are covered.
  6. Freeze until yogurt has frozen, about 1 hour.
  7. Keep frozen until you are ready to eat.
Notes
If you don't have any Vi-Shape on hand at this moment and you HAVE to have these blueberries right now, you can just substitute some vanilla Greek Yogurt and they would be equally scrumptious

Chocolate Covered Potato Chips 002 We used to have nice lazy spring days, going to the beach or relaxing at home by the pool. However, now that my son is obsessed with baseball, we spend hours and hours during the week and weekend at the baseball field. I know so many of you can relate. But you know what? I actually love it. Because we are at the field so much, we have not so fancy picnics at the baseball park. I wish I would say I brought a beautiful wooded thatched picnic basket and we sprawled out on a red and white gingham picnic blanket…yeah, that doesn’t happen. We’re stuck on the oh so comfy (not) aluminum bleachers. Which is ok, because if we were all cute and had our picnic on the ground, the ants and bugs would literally carry us away…the price of living in Florida. I have become a pro at packing our meals for our time at the field. Again, no cute picnic basket, we use thermal totes and the reusable ice packs to keep everything cool. We usually pack your normal….sandwiches, drinks, fruit, string cheese and chips. Chocolate covered potato chips!!!! Speaking of chips, don’t you hate when you pack chips and they get all squished? Annoying. I have some advice, switch to Kettle Brand Chips. I learned a long time ago, the thin chips are a no-go when packing for a picnic! Kettle Brand Chips are ULTRA crunchy and super sturdy. I have tried other “kettle cooked” chips but they don’t hold a candle to the Kettle Brand. Seriously. Untitled They have been batch cooked by real honest to goodness people in Willamette Valley, Oregon for over 30 years. I know people are all in an uproar about GMO. Well you will be happy to know that their chips are made using only the finest all-natural, NON GMO ingredients. They are actually the FIRST potato chip to be verified by the Non-GMO Project. Ohhhh and mercy..their flavors… Some of my favorites are Sea Salt & Vinegar, Sea Salt (perfect for my Chocolate Covered Potato Chips), Backyard Barbeque®, Spicy Thai™ (AMAZING), New York Cheddar, Honey Dijon, Sour Cream and Onion, Sweet Onion, Fully Loaded Baked Potato™, Unsalted, Zesty Ranch, Buffalo Bleu™(my husbands favorite) and Salt & Fresh Ground Pepper. All of them are amazing. My grocery store doesn’t carry them in the normal chip aisle. Cause they are special chips. They are in the Natural section of my store. A word to the wise..don’t try chocolate covered potato chips with wimpy thin chips, they will get soggy and nasty. Chocolate Covered Potato Chips
Ingredients
  • 1 /2 8.5 oz. Kettle Brand Sea Salt Potato Chips
  • 1 cup semi-sweet Chocolate Chips
  • Coarse Kosher Salt
Instructions
  1. Line a baking sheet with parchment paper.
  2. Place the chocolate chips in a bowl or large measuring cup.
  3. Microwave the chocolate chips for 30 seconds and stir. Cook in additional 15 second increments, stirring in-between until melted and smooth.
  4. Immediately dip the potato chips one by one in the melted chocolate and place on the lined baking sheet.
  5. Lightly sprinkle with Kosher salt.
  6. Allow to harden at room temperature for about and hour or until the chocolate has hardened.
  7. Store in a sealed container.

I have been sooooooo under utilizing it.

You could have a whole party and use puff pastry in a ka-zillion different ways and no one would catch on that everything was made with the flaky-buttery sheets or cups of gold.

You can do sweet or you could do savory, or both, which is what I did.

Did you miss last weeks recipe?? Key Lime Tarts. The easiest and most impressive dessert recipe on the face of the planet.

This week I went savory to show the versatility.

I wanted to create something that was easy to put together for a party or brunch.

You can make the filling one day in advance and let the flavors meld overnight in the fridge.


 

Crab Puffs

Just a few simple ingredients that you probably already have on hand.

Mix and toss in some chopped green onions.

Flour your counter and roll one Pepperidge Farm® Puff Pastry Sheet into a 10″ X 15″ rectangle.

With a pizza cutter of knife, cut into 24, 2 1/2″ squares.

Press the squares into a mini muffin tin and add 1 tablespoon of the crab mixture into the cups. Bake!

A simple semi- make ahead appetizer using Puff Pastry and lump crab meat.
Ingredients
  • 8 oz. Lump Crab Meat
  • 6 oz. Cream Cheese, softened
  • 1 tablespoon Mayonaise
  • 1 clove Garlic, minced
  • ½ teaspoon Worcestershire
  • ½ teaspoon Soy Sauce
  • 3 Green Onions, chopped plus one more for garnish
  • 1 sheet Pepperidge Farm Puff Pastry, thawed
  • Salt and pepper
Instructions
  1. Preheat oven to 400.
  2. In a medium bowl, mix together crab, cream cheese, mayonnaise, garlic worcestershire, soy sauce and green onions.
  3. Flour counter top and roll out sheet to a 10" x 15" rectangle.
  4. Using a pizza cutter or knife slice 24 2½" squares.
  5. Place one square in each mini muffin well.
  6. Add one tablespoon crab mixture into each cup.
  7. Bake for 20-25 minutes or until puff pastry is golden.
  8. Top with green onions and serve immediately.

One tip with ALLLLLL blenders, if you are using ice, ALWAYS ALWAYS put it in last!

How good you ask?

Well, I brought them to a Birthday BBQ on Sunday and they were ALL gone BEFORE we even ate dinner.

That’s how good they are.

The look all fancy and like I spent hours on them.


Actually, they were one of the easiest desserts I have ever made thanks to pre-made puff pastry.

I have never made my own puff pastry. My thought process…Pepperidge Farm® makes it so well, so why bother. Saves me a HUGE amount of time in the kitchen.

You pop the Pepperidge Farm® Puffed Pastry Shells on a baking sheet, bake, then remove the tops( I can neither confirm nor deny that I ate all 6 tops).While the shells are baking mix you filling(takes 2 minutes) and then fill your baked shells. Pop them back in the oven for the filling to firm up. Let them cool and top with whipped cream and lime slices!

These would be perfect for your Springtime or Mothers Day Brunch, Cinco de Mayo or just to have on a Thursday!

Key Lime Tarts

Buttery, flakey Pepperidge Farms Puffed Pastry Shells filled with tangy Key Lime filling.
Ingredients
  • 2 eggs
  • 1 tbsp. water
  • 1 pkg. (10 ounces) Pepperidge Farm® Puff Pastry Shells, prepared according to package directions, remove tops.
  • 2 limes
  • 1 can (14 ounces) sweetened condensed milk
  • 1 egg yolk
  • ⅓ cup Key lime juice
  • 6 tbsp. thawed frozen whipped topping
Instructions
  1. Heat the oven to 350°F.
  2. Beat 1 egg and the water in a small bowl with a fork.
  3. Brush the pastry shells with the egg mixture.
  4. Zest 1 lime.
  5. Beat the condensed milk, remaining egg, egg yolk, Key lime juice and lime zest in a medium bowl. Pour the mixture evenly into the pastry shells.
  6. Bake for 15 minutes or until the filling is set.
  7. Let the tarts cool on the baking sheet for 15 minutes.
  8. Cut 6 thin slices from the remaining lime.
  9. Top each tart with 1 tablespoon whipped topping and 1 lime slice.
