Don’t you wish the more food you ate the skinnier you would get?
Wouldn’t that be fabulous? Seriously FAB-U-LOUS.

I mean, they can come up with medicine that cures AIDS, but we still all cant be skinny?

Let’s step it up medical scientist people.

Or, how about a pill that makes food taste bad. That would be acceptable too.

You see that’s my problem, I just love the way food tastes..and then I eat it.

Imagine doing what I do, developing recipes and constantly having to have enough will power not to shove my face with 2 cupcakes. It’s kinda stupid.

So I am trying to change my eating habits. Trying to think that I don’t need to get “full” from cupcakes, I just need a taste to satisfy my craving.

It sucks and it’s hard.

Oh and I am sooooo tired of hearing from people who have been skinny their whole lives saying, “Oh, all you have to do is eat in moderation and you can eat anything you want, it’s easy.”

I want to punch them in the face with a cupcake.

If you follow me on Facebook or Instagram, you’ll know I turned to Weight Watchers for some weight loss help.(I’ve lost 8.8 pounds since April 8th)

It puts food into perspective. Gives me accountability to write my food down and actually see what I am eating.

I am sure you are wondering how I tested these cupcakes for quality control……..

I took a bite and spit it out. That is the most will power I have ever had in my life.

Banana Cupcakes with Chocolate and Peanut Butter Frosting

A banana cupcake piled high with chocolate and peanut butter frosting.
Ingredients
Cupcake
  • Yellow Cake Mix
  • ⅔ cup Flour
  • ¼ cup Sugar
  • ½ teaspoon salt
  • 3 Eggs
  • 1 cup Buttermilk
  • 2 tablespoons Vegetable Oil
  • 1 tablespoon Vanilla Extract
  • 3 very ripe Bananas, mashed
Chocolate Frosting
  • ½ cup (1 stick) butter
  • ⅔ cup Cocoa
  • 3 cups powdered sugar
  • ⅓ cup milk
  • 1 teaspoon vanilla extract
Peanut Butter Frosting
  • 8 oz. Cream Cheese, softened
  • ½ cup Peanut Butter
  • 1½ teaspoon Vanilla Extract
  • Pinch Salt
  • 4 cups Powdered Sugar
  • 2 tablespoons Milk
Garnish
  • 2 Bananas, sliced
Instructions
Cupcakes
  1. Preheat oven to 350 and line cupcake pan with paper liners.
  2. In a medium bowl, whisk together cake mix, flour,sugar and salt.
  3. Add in eggs, buttermilk,oil and vanilla extract. Mix with an electric mixer on medium speed for 2 minutes.
  4. Add bananas and mix until thoroughly incorporated.
  5. Fill cup cake wells ⅔ full.
  6. Bake for 18-20 minutes or until a toothpick comes out with only a few crumbs.
  7. Allow to cool completely before frosting.
Chocolate Frosting
  1. Melt butter
  2. Stir in cocoa
  3. Alternately add powdered sugar and milk, beating to spreading consistency.
  4. Add small amount additional milk, if needed. Stir in vanilla.
Peanut Butter Frosting
  1. Beat cream cheese, peanut butter,vanilla and salt until fluffy.
  2. Add powdered sugar one cup at a time and beat until smooth.
  3. Add milk one tablespoon at a time for desired consistency.
To frost the cupcakes
  1. Fill 2 piping bags fitted with your favorite tip, one with chocolate frosting and one with peanut butter frosting.
  2. Alternately pipe the chocolate and peanut butter frosting onto the cupcakes.
  3. Top with the banana slice immediately before serving.

I know I have mentioned it here before that I have a divided house in the seafood department.
My son and I love it and my husband and daughter do not.
In fact, my husband doesn’t eat anything from the water….yeah, chew on that for a second.
Annoying, isn’t it.
So I get all giddy when I actually get to cook crustaceans.

This weeks challenge was to “Express Myself”.
I remember eating shrimp and grits for the fist time in a little restaurant in Savannah Georgia and falling in love.

You will see lots and lots of shrimp and grits recipes in the deep dark hole we call the internet and you will also notice that they use many different spices.
I thought this challenge was perfect to showcase the ease and simplicity of the Sauté Express® Sauté Starers.
There was no hunting and guessing what spices and flavoring I needed to add to my recipe. Sauté Express® Sauté Startes have everything you need in them. You get a little golden nugget of olive oil, butter,garlic and spices. Now that I think about it, these are also great for people who do not cook a lot because you don’t have to purchase lot and lot of containers of spices that just end up going to waste.

Shrimp and Grits

Cheesy creamy grits topped with delicious shrimp
Ingredients
Cheese Grits
  • 3 cups Chicken Stock
  • 1 cup Skim Milk
  • 1 cup Stone Ground Grits
  • ¼ cup Butter
  • ¼ teaspoon Coarse Kosher Salt
  • ¼ teaspoon Pepper
  • 8 oz. Extra Sharp White Cheddar Cheese, Shredded
Shrimp
  • 8 oz. Bacon, diced
  • 2 squares Land O' Lakes Saute Express Saute Starter, Garlic & Herb
  • 1 lb. Peeled and Deveined Shrimp, raw
  • 1 green onion, chopped
  • 1 handfull Fresh Parsley, copped
Instructions
Grits
  1. Bring the chicken stock and milk to a boil in a medium sauce pan with a lid.
  2. Add the grits, butter,salt and pepper and bring back to a boil while stirring.
  3. Cover and reduce heat to a low simmer and cook for 20 minutes, stirring occasionally.
  4. Remove from heat and stir in cheese.
Bacon and Shrimp
  1. In a medium nonstick saute pan, cook the bacon until crisp, remove and set aside.
  2. Drain the bacon grease but do not clean or wipe the pan.
  3. To the same pan over medium heat, add 2 Garlic & Herb Land O' Lake Sauté Express Sauté Starters.
  4. Add the shrimp and cook for 2 minutes per side until pink.
  5. Add cooked bacon, green onion and parsley. Toss to coat.
  6. Serve shrimp and any sauce sauce in the pan over the grits.

Well, I am going to go out on a limb and claim, that this is the Best Potato Salad in alllll the land.

Lemme, break it down for you.

Potatoes, garlic, bacon, black olives,eggs, green onions, real mayonnaise and the star of the show…BACON GREASE.

I went all old school with this recipe. I mean back in the day, bacon grease was saved in a coffee can and used everyday. Quite possible the reason life expectancy wasn’t too long back then.

But it’s potato salad, you’re  not going to eat it every day, so suck it up and clog your arteries will ya?

I took this to work and was told it was indeed was the best potato salad ever eaten, so my claim is 100% bonafide.

The best potato salad with bacon, black olives and garlic
Ingredients
  • 3 lbs. Baby Red Potatoes(not peeled), cubed
  • 8 oz. Bacon
  • 4 cloves Garlic, minced
  • 1 cup Mayonaise
  • 1 tablespoon Dijon Mustard
  • 5 Eggs, hard boiled, chopped
  • 1 3.8 oz. can Sliced Black Olives
  • 3 Scallions, green parts thinly sliced
  • Bacon Grease, saved from the pan
Instructions
  1. In a large pot of salted water, boil the potatoes until fork tender, drain and put the potatoes in a large bowl
  2. Meanwhile, in a large skillet, cook bacon until crisp, remove to a plate lined with paper towels. Crumble bacon when its cool enough to handle..
  3. Turn the heat off the skillet, add the garlic to the bacon grease and cook (the grease will still be hot enough to cook the garlic) for 1 minute.
  4. Pour bacon grease with the garlic over the potatoes, mix to incorporate.(yes, use all of the bacon grease)
  5. Mix in mayonnaise, mustard,eggs, black olives, scallions and bacon.
  6. Salt and pepper to taste.

During this challenge, one of my missions was to let the Sauté Express® Sauté Starter shine all by itself.

I wanted to show that there is a product out there that makes cooking a breeze either for the busy family or for those new at cooking who are a bit afraid of coming up with their own flavors.

Week number three is all about One-Pan Wonders. One-pan dinners are great because they are usually quick and there is minimal clean-up, which my husband loves because I cook and he cleans! Sweet, huh?

With the use of the Sauté Express® Sauté Starters, my One-Pan Wonder is a winner.

Oh and you know what? You can have this dinner on the table for your family in under 30 minutes. You’re welcome.

See the little squares in my pan? Packed in those little squares is butter, olive oil and loads and loads of spices and flavorings. Pop a couple in your pan and you never have to think what flavorings to pair together.

This dinner is not only EXTREMELY easy to make, but it tastes like I added all the spices and flavorings myself. When my husband tasted it, he said, “What else did you add to it?” I told him nothing except the Sauté Express® Sauté Starter. He honestly didn’t believe me. He swore I added lemon and garlic.

Without the little magic squares, this dinner would be completely and utterly boring with no life at all.

I will say this dish had a bit of kick to it, which is good because my family loves a li’l spice.

Ingredients
  • 3 squares Lemon Pepper Sauté Express® Sauté Starter, divided
  • 1½ lbs. baby red potatoes, diced
  • 1 medium red onion, thinly sliced
  • ¾ cup water
  • ¾ lb. fresh asparagus, trimmed and cut
  • 1 lb. pork tenderloin, thinly sliced
Instructions
  1. In a large nonstick skillet over medium heat, melt 1 Sauté Express® Sauté Starter Square, add potatoes and onions.
  2. Cook potatoes and onions for 10 minutes, stirring occasionally.
  3. Add water and asparagus, cover and cook for and additional 5 minutes, stirring occasionally. Remove to a plate, cover to keep warm.
  4. Add the last 2 Sauté Express® Sauté Starter squares to the same pan.
  5. Add the pork and cook for 3 minutes per side. Return the potato mixture to the pan, toss to coat.
  6. Serve

This is a first-of-its-kind seasoned butter and olive oil starter that can be used to cook and season any protein, such as chicken, fish or pork, in one easy step. My favorite recipe idea with a twist is Chicken and Broccoli Macaroni and Cheese.

While I could probably live on the cheesy pasta for the rest of my life, I wanted to make it more of a complete meal. One with a li’l oomph. But I didn’t want to make too much of a fuss or add cooking time. I am busy, and I know you are too, so I am sure you can appreciate a quick dinner.

Cooking my chicken in the Savory Butter and Olive Oil Sauté Express® Sauté Starter gave it a wonderful flavor, and I didn’t have to spend more time gathering more spices and seasonings. All I needed was Sauté Express® Sauté Starter to cook and flavor the chicken.

Now, my all-time favorite dish is more of a complete meal with the addition of the chicken and broccoli. And it’s all cooked in just 30 minutes.

Chicken and Broccoli Macaroni and Cheese
Ingredients
  • 1 lb. elbow macaroni
  • 1 lb. boneless skinless chicken breasts
  • 2 squares Savory Butter & Olive Oil Sauté Express® Sauté Starter
  • 12 oz. microwavable broccoli florets
  • 5 tablespoons butter
  • 6 tablespoons flour
  • 1 teaspoon dry mustard powder
  • ⅛ teaspoon pepper
  • 4 cups whole milk
  • 8 oz. sharp cheddar cheese, shredded
  • 8 oz. Monterey jack cheese, shredded
  • Salt

Crumb Topping
  • 1 cup Italian bread crumbs
  • 3 tablespoons butter, melted
Instructions
  1. Adjust oven rack to middle position and preheat oven to high broil.
  2. In a large stock pot bring 4 quarts of water to a boil and add macaroni, boil for 9–11 minutes, drain and put back into stock pot.
  3. While pasta is boiling, cook broccoli in the microwave per package directions. Lightly chop and set aside.
  4. In a medium nonstick skillet with a lid, melt 2 Sauté Express® Sauté Starter squares over medium heat, and add chicken. Cook for 6–8 minutes per side over medium-low head with the lid on, or until no longer pink in the middle. Remove and chop chicken into bite-sized pieces, set aside.
  5. While the chicken is cooking, make the cheese sauce. In a medium pot over medium heat, melt butter, add flour, dry mustard powder and pepper, whisk for about 1 minutes or until flour starts to darken.
  6. Slowly whisk in the milk and whisk until smooth. Bring to a full boil while whisking. Remove from heat and stir in cheeses, stir until smooth. Salt to taste.
  7. Pour the cheese sauce into the noodles and mix until incorporated. Fold in chicken and broccoli. Pour into a 9x13 casserole dish.
  8. In a small bowl, mix together bread crumbs and melted butter, sprinkle over macaroni and cheese. Place in oven and broil for 3 minutes or until golden brown. Serve.

Eggo Ice Cream Sandwiches with Nutella
Ingredients
  • 2 Eggo Homestyle Mini Waffle sheets, separated and toasted
  • Breyers Extra Creamy Vanilla Ice Cream
  • 2 teaspoons Nutella
Instructions
  1. Spread each waffle mini with ½ teaspoon Nutella.
  2. Add about a 2 tablespoon scoop of ice cream on-top of 1 Nutella covered Eggo mini waffle and top with another Nutella covered Eggo Mini Waffle.
  3. Eat immediately or place back in freezer until ready to eat.

I hope you guys aren’t sick of waffles yet, I know I’m not.

These are really really good y’all.
And probably one of the simplest things I have ever created using a bunch of shortcuts.

But you know what? Shortcuts are totally fine.
When you are entertaining, you don’t want to be in the kitchen for days or spend a ka-billion dollars.
These little Buffalo Chicken Eggo® Bites can be made in the time it takes to cook frozen chicken nuggets.

Tip: Get good quality chicken nuggets. Not the kind that are like nasty little sponges inside. Ewwweww.
You can certainly make your own, but using store bought is much much easier.

An easy appetizer with pre-made chicken nuggets, tossed in Buffalo sauce on top of a crispy Eggo Mini Waffle.
Ingredients
  • 2 sheets Kellogs Eggo Waffle Minis, toasted and separated
  • 8 Pre-made Freezer Chicken Nuggets(good quality), cooked to package directions.
  • 2 tablespoons Buffalo Wing Sauce
  • 2 teaspoons Blue Cheese Dressing
  • 1 tablespoon Blue Cheese Crumbles
  • 1 Green Onion, thinly sliced
Instructions
  1. Place the buffalo wing sauce in a medium bowl, add the chicken nuggets and toss to fully coat.
  2. Drizzle blue cheese dressing over chicken nuggets and top with blue cheese crumbles and green onion.

I mean, there are 2 Eggo® Nutri-Grain Waffles in there…and fruit….and  dairy.

That equals a balanced meal.

Aside for being beautiful photos(yes, I’m tooting my own horn), these super easy strawberry shortcakes are a cinch to make.

No biscuit making, which cuts out ohhhhh, about a hour of prep time.

So if you are having a serious sweet-tooth or a hankering for some strawberry shortcake, look no further than your freezer for your Eggo® Waffles.

It certainly has been fun being a Chief Waffle Officer..we still have 2 more days left. Yahhhhoooo.

Strawberry Shortcakes made with Eggo Waffles
Ingredients
  • 4 Nutri Grain Eggo Waffles, toasted
  • ½ pint Strawberries, about 15, lightly mashed
  • 1 tablespoon Sugar
  • ½ teaspoon Lemon Juice
Whipped Cream
  • 1 cup Heavy Whipping Cream
  • 1½ tablespoon sugar
Instructions
  1. Place a medium bowl and the mixers to your electric beater in the freezer.
  2. Mix mashed strawberries, sugar and lemon juice in a small bowl, cover and place in the refrigerator for 30 minutes or until some juices have been released from the strawberries.
Whipped Cream
  1. Remove the bowl and beaters from freezer.
  2. Add the heavy whipping cream and sugar.
  3. Starting off on low, begin to whip the cream.
  4. Slowly increase the speed and beat until thickened.
Arrange
  1. Place one Eggo on a plate and top with whipped cream and strawberries, add the other Eggo and repeat.
Notes
Placing the bowl and beaters in the freezer help the whipped cream whip up nice.

Summer Salad with Eggo Croutons & Giveaway

If it were up to me, I would have salad every night for dinner.

It doesn’t happen often since my kids don’t like salad.

So when I ship them off to friends houses, I always make a nice salad full of fruit, and some protein.

Strawberries and blueberries are both in season right now, take advantage of it and make your salad colorful.

Oh, and don’t grab a box of pre-made crusty, break your teeth croutons, just open your freezer and pull out the Eggo® Waffles.

Yep, this is another recipe I developed for my duties as an Chief  Waffle Officer.

Thick and Fluffy Eggo® Waffles, cut up, seasoned and pan fried in a bit of butter and extra virgin olive oil.

Uh, huh. I turned a waffle into a crouton. It was kinda a no-brainer.

A delightful salad with fresh fruit and seasoned eggo waffle croutons
Ingredients
  • 1 5 oz. bag Lettuce mix
  • 6 large Strawberries, sliced
  • ¼ cup Blueberries
  • 3 slices Deli Chicken, thick sliced
  • 3 tablespoons Raspberry Vinaigrette, or your favorite dressing
  • 2 tablespoons butter
  • 2 teaspoons Extra Virgin Olive Oil
  • 1 small Clove Garlic, minced
  • 2 Kellogs Eggo Waffles Thick and Fluffy, cut into bite sized pieces, and thawed
  • ½ teaspoon Italian Seasoning
  • Pinch Salt and Pepper
Instructions
  1. In a large salad bowl, toss together, lettuce, strawberries, blueberries, chicken and salad dressing.
  2. In a medium skillet over medium heat, melt the butter and olive oil.
  3. Add garlic clove and waffles.
  4. Sprinkle in Italian seasoning, salt and pepper. Toss to coat.
  5. Saute waffles, stiring occasionally until the edges turn golden brown.
  6. Add more olive oil if the pan becomes too dry.
  7. Toss the croutons with the salad

When I think of amusement park food, one of the first things that pops into my head is the Churro!

Have you had them?

The are crispy fried dough sticks covered in cinnamon sugar. Their kinda ridiculously good.

As a Chief Waffle Officer, when I saw the Eggo® French Toast Waffles, I knew I had to run with my Churro thought.

These little Churro Eggo® Dippers are a perfect snack for your kiddos after school and the honey peanut butter dip is perfect for slathering all over them.

Grab your French Toast Waffles, slap on some butter and sprinkle with a hefty shake of cinnamon sugar, pop in your toaster oven and YUM.

Churro Eggo Dippers
Ingredients
  • 2 Eggo French Toast Waffles
  • 1 teaspoon Butter, softened
  • 1 teaspoon Cinnamon Sugar
Peanut Butter and Honey Spread
  • ¼ cup Smooth Peanut Butter
  • 3 teaspoons Milk
  • 1 teaspoon Honey
  • ⅛ teaspoon Cinnamon
Instructions
  1. Toast Eggos.
  2. While still hot spread with butter and sprinkle with cinnamon sugar.
  3. Cut into strips.
Peanut Butter and Honey Spread
  1. In a small bowl, mix together peanut butter, milk, honey and cinnamon.
  2. Serve with waffle strips.
Notes
I prefer making these in the toaster oven. So if you have a toaster oven, spread the waffles with butter and sprinkle with cinnamon sugar BEFORE you toast.

The first Challenge this week is “Please Your Picky Eater.” This topic is super relevant for my family. As a recipe developer and food blogger I get asked two specific questions all the time…

1) Why don’t you weigh 350 pounds? (Everyone seems to use this number!)
2) Do your kids eat everything you make?

Answer to Q1: Ha. I have gained lots and lots of weight since starting my blog.
Answer to Q2: Ha, again. I have the pickiest eaters on the face of the planet. I swear.

My kids used to eat everything I put in front of them when they were babies, but as they have grown, they have lost their taste buds. When I make my weekly menu and ask them what they want for dinner this week, I always get the same four requests from the kids over and over: tacos, hamburgers, pizza, pasta. Uggggg, anyone else in the same boat? It’s very frustrating. I am tired of all of those things.

Pizza, I can do. But, again, it gets boring because all the kids want is cheese pizza. I was challenged by Land O’Lakes to create an easy weeknight meal with their new Sauté Express® Sauté Starter that even my pickiest eaters would love. Have you seen this new GENIUS product? I am in love, seriously.

When I first read about the product, I thought, “Ok, they mixed some olive oil, butter and spices together. I do that all the time in my skillet.” But let me tell you, these little delicious miracle starter squares are AHHHH-mazing! You melt them in the pan, add your protein and BAM…. a perfectly seasoned dinner! Just look at all the Italian seasonings in the pan.

I decided to please my two picky eaters by mixing up our normal boring pizza night. No more round, classic cheese pizza. My idea for “Please Your Picky Eater” is Chicken Pizza Pockets. These fun pizza pockets are super kid-friendly and put a fresh twist on pizza night!

I used one Italian Herb Sauté Express® Sauté Starter square in a skillet, added my chicken, licked the spoon and chopped the chicken to add it to my fancy pizza pockets.

Roll the pizza dough out and cut into fourths.

Add some pizza sauce (homemade or store bought).

Sprinkle on the cheese and chopped chicken.

Fold the pizza dough over onto itself and pinch the edges to seal.

Lightly brush the dough with an egg wash and Italian Seasoning and pop them in the oven.

Viola, simple, quick and easy dinner.

Ingredients
  • ½ lb. (1) boneless skinless chicken breast
  • 1 Italian Herb Sauté Express® Sauté Starter square
  • 1 lb. fresh pizza dough (can purchase from your bakery) or 1 can refrigerated pizza crust
  • 1 cup pizza sauce, divided
  • 1 cup (4 oz.) mozzarella cheese, shredded
  • 1 egg, lightly beaten
  • Italian seasoning to taste
Instructions
  1. Preheat oven to 400 degrees. Line a cookie sheet with parchment paper.
  2. In a medium non-stick skillet with a lid, melt Sauté Express® Sauté Starter over medium-low heat until it starts to bubble.
  3. Add chicken and cook for 6–8 minutes per side with lid on or until no longer pink in the middle. Chop into small bite-sized pieces.
  4. While chicken is cooking, roll out pizza dough into a 12″ circle on a lightly floured surface. Using a pizza cutter, cut the dough into fourths (four triangles), and place on cookie sheet.
  5. Evenly distribute ½ cup pizza sauce, cheese and chicken over each triangle, leaving about ¼–½ inch clean edge.
  6. Fold dough over and pinch the edges to seal. Lightly brush with egg wash.
  7. Sprinkle with Italian seasoning and bake for 15–18 minutes or until golden. (*If you used the pizza crust from the can, follow baking instructions on the package.)
  8. Serve with remaining ½ cup pizza sauce.
