Have you ever made a cake and the outside of the cake get toooooo done? Toooo Brown? Toooo Dry? Toooo Crusty?

Do you get that big dome on your cake that you have to lop off?

Well do I have a solution for you.

Bake Even Strips.

They are little insulated fabric strips that you soak in water before you bake a cake.

Then once they have soaked up some cool water, you wrap them around your cake pan and bake as normal.

This was a 3″ thick cake pan, so I needed 2.

I won’t bake a cake without them.

I love love love them.

They are little security blankets if you will.

The Bake Even Strips come in different sizes Small(2  30″  1 1/2″ wide good for 2 8″ or 9″ pans) and
Large(4 strips, 36″, 43″, 49″ & 56″ good for 10″, 12″, 14″ & 16″ pans)

There are silicone ones too, but I have not used that variety yet

Easy Caramel Brownies

DOHHHHHH!

Did you ever see a recipe somewhere and think,”Well , duh..why didn’t I think of that”?
Yep, that is this recipe. My friend Lori over at Recipe Girl posted it and I just slapped my forehead.
I usually only post my original recipes here on my site, but I just had to  make and share this one!

No making caramel! You see, I have a love hate relationship with making caramel. I ALWAYS burn my first batch….always..without fail. So the fact that I don’t have to make my own caramel makes this recipe 5 star in my book!

It starts with some glorious Dove Chocolate caramel candies.

Spread half your batter ( not a family size box) into a 9 x 9 pan.

Arrange the unwrapped Dove Chocolates over the batter (look away OCD friends, the Doves are not all facing the same way)

Add the remaining batter onto.

Bake and enjoy

Easy huh?

Box mix, mixed to package directions.
Dove chocolate
Pour half into 9 x 9 pan.
Place Doves on batter.
Por the remaining batter
Bake!!!

Oh and if you plan on using a family size brownie mix in a 9 x 13 pan, just use two packages of Dove candies.

 

 

Tangy Salad Dressing

What was the point of eating a salad without slatering it with Ranch?

No ranch? No salad.

Well you see, that thought process was ohhhh, about 10 years ago when I actually had this now mythical thing called a metabolism.

With old ago, I have smartened up.

As much as I still love love love ranch, I had to quit it.

I don’t do store brand dressing.

Something about store bought salad dressing, just tastes off to me.

I have tried all the brands, and I’m not a fan of any of them.

Making your own is super simple, you can either mix it up in a blender of right in a bowl and I bet you already have all of the ingredients sitting right in your pantry already.

If you like tangy, full of life salad dressing, this one is for you!

Tangy Salad Dressing

A tangy homemade salad dressing
Ingredients
  • 1 Clove Garlic,minced
  • ¼ cup White Wine Vinegar
  • ¼ cup Cider Vinegar
  • 2 tablespoons White Sugar
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Lemon Juice (juice from ½ lemon)
  • ⅓ cup Vegetable Oil
  • ¼ cup Extra Virgin Olive Oil
Instructions
  1. Place the first 6 ingredients into a blender and blend for 15 seconds.
  2. With the blender still on, add both oils in a slow stream.
  3. Blend for an additional 15 seconds.
  4. Place in a sealable container and store in the refrigerator for up to 1 week.
Notes
Make 1½ cups

I’m not 100 years old.

I swear.

I still boil water in my tea kettle.

Yes, I am fully aware that I can get my water hot for my evening tea in about 60 seconds in my microwave, but I like rollin’ old school.

There is just something soothing about boiling my water in my pretty shiny Chantal Tea Kettle and pouring it into my favorite tea cup with its awaiting tea bag.

It’s a nightly ritual for me.

Oh, and it looks pretty on my range.

Because we are blending WHOLE oranges, it will be thicker than a juice but thinner than a smoothie.

If you don’t have a high powered blender like Blendtec , I would suggest cutting up your oranges.

Notes
Makes 3 cups This would also be WONDERFUL with ½ cup pineapple added in.

Pretzel Caramel Bars

A sweet, salty,chewy and gooey bar dessert.
Ingredients
Bars
  • 1 stick + 3 tablespoons Butter
  • 1½ cups Brown Sugar,packed
  • 1¼ cups Flour
  • 1½ teaspoon Baking Powder
  • 1⅛ teaspoon Coarse Kosher Salt,divided
  • ½ cup Graham Cracher Crumbs
  • 2 Eggs, lightly beaten
  • 2 teaspoons Pure Vanilla Extract
  • 25 Pretzel Sticks ( not the big rods) broken up
  • ½ cup Milk Chocolate Chips
Caramel Drizzle
  • 7 Caramel Candies (such as Kraft Caramels), unwrapped
  • ½ teaspoon cream or half and half
Instructions
  1. Heat oven to 350.
  2. Line a 9 x 9 pan with parchment paper or non-stick foil.
  3. In a small pan, over low heat, melt together the butter and brown sugar for 2 minutes. Allow to cool for a few minutes.
  4. Whisk together flour,baking powder, 1 teaspoon salt and graham cracker crumbs.
  5. After the brown sugar mixture has cooled some, whisk in the eggs and vanilla.
  6. While stiring, pour the brown sugar mixture into the flour mixture, this will be somewhat thick.
  7. Stir until fully incorporated.
  8. Pour into the pan.
  9. Top with pretzel pieces and chocolate chips.
  10. Bake for 40 minutes
  11. Remove from oven and cool in pan.
  12. Drizzle with caramel and sprinkle with the remaining ⅛ teaspoon coarse kosher salt.
  13. Cut into desired sized squares.
Caramel Drizzle
  1. In a small bowl add the caramel candies and cream.
  2. Microwave in 15 second increments, stirring in-between each increment. Do this until the caramel is smooth.

Cherry Pitter

This weeks Favorite Thing is the OXO Cherry Pitter.

A MUST HAVE if your family likes cherries.

Yeah, yeah, I have seen the other ways to pit a cherry, like with a straw or a paper clip.

Honestly, I have tried both of those and nothing compares it this cherry pitter.

I need a new one. There should actually be a little clear plastic “splatter screen” on the end of it, but mine disappeared.

Yep, just disappeared..kinda  like socks.

So I am off to order myself a new one.

Yes, it still works without the splatter screen, you just might have a little extra cherry juice splatter.

I love love love desserts that are super easy and transportable. These tasty little tidbits would be perfect for your next Bunko party or book club. Or send them with your significant other to work like I did and get them out of the house so you don’t eat them all.

My friend Shelly made these scrumptious looking Strawberry and Cream bars and got my creative juices flowing.

Yum, right? I wanted something similar, but different.

So basically it all starts with a cake mix. With a side of cream cheese, sweetened condensed milk, berries and pecans…don’t forget the eggs to hold everything together.

See, everything is right in the world.

Berries and Cream Bars

A delicious bar dessert that starts off with a cake mix.
Ingredients
  • 1 box Yellow Cake mix
  • ½ cup(1 stick) Butter, room temperature
  • 1 Egg
  • ½ cup Pecans, chopped
  • 8 oz. Cream Cheese, softened
  • 14 oz. Sweetened Condensed Milk
  • 1 Egg
  • 1 teaspoon Vanilla
  • 1½ cups sliced Strawberries
  • 1½ cups Blueberries
Instructions
  1. Preheat oven to 350.
  2. Line a 9 x 13 pan with non-stick foil or spray with non-stick spray.
  3. In a medium bowl, mix together the cake mix, butter and egg. This has the consistency of thick dough, so I recommend mixing it with your hands.
  4. Reserve 1 cup for topping and mix in the chopped pecans with the reserved dough.
  5. Pat the dough(without pecans) into the prepared pan, the layer will be thin.
  6. Bake for 10 minutes.
  7. In a medium bowl, mix together the cream cheese,sweetened condensed milk, egg and vanilla with an electric mixer until smooth.
  8. Pour mixture over the partially baked crust.
  9. Evenly distribute straberries and blueberries over mixture.
  10. Crumble topping evenly over fruit.
  11. Bake for 35-40 minutes
  12. Allow to cool completely.
  13. Refrigerate before cutting.

The key is making a “slurry”. Making a slurry is simple, Mix corn starch with a cold liquid
But this was soooooo delicious and it’s healthy. SCORE.

Another way to up the nutritional value of a pasta meal is to kick the white flour pasta to the curb and replace it with a whole grain pasta.

Sautéed Vegetable and Chicken Pasta

A delicious sauteed vegetable and chicken pasta with a light sauce
Ingredients
  • 8 oz. Baby Bella Mushrooms, chopped
  • 1 medium Red Onion, sliced
  • 4 Garlic Cloves, minced
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 pint Cherry Tomatoes
  • 1½ pound Boneless, Skinless, Chicken Breast, cubed
  • 2 tablespoon Olive Oil, divided
  • ½ teaspoon Coarse Kosher Salt
  • ½ teaspoon Pepper
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon dried rosemary
  • 2½ cups Chicken Stock
  • 2½ tablespoons Corn Starch
  • Juice of one Lemon
  • 9 oz. Spinach
  • 14.5 oz Barilla Plus Multi Grain Pasta, cooked to package directions
Instructions
  1. In a medium bowl, add the chicken, 1 tablespoon oil, salt,pepper, Italian Seasoning and rosemary. Toss to incorporate and set aside.
  2. In large 12" skillet over medium heat, add the chicken and cook until no longer pink in the middle, about 8-10 minutes. Remove the chicken and set aside.
  3. In the same skillet, over medium heat, add 1 tablespoon oil.
  4. Sautee onions and mushrooms until onions are translucent, about 5 minutes.
  5. Add the tomatoes ,zucchini and squash, cook until the tomatoes start to pop open a bit.
  6. Add the garlic and cook for an additional minute.
  7. Add the chicken and any juices that accumulated in the bowl back into the pan.
  8. In a large measuring cup, mix together the chicken stock, corn starch and lemon juice.
  9. Add the chicken stock mixture to the pan and bring to a light boil until it thickens to your liking.
  10. Add the spinach and allow it to wilt down.
  11. Add the cooked pasta, stir to combine and season with salt and pepper to your liking.
Notes
Use a BIG 12" skillet....This make A LOT of food!

Strawberry Banana Smoothie

1 Banana

7 Strawberries

3/4 cup Unsweetened Vanilla Almond Milk

1 tablespoon Ground Flax Seed

3/4 cup Ice

1 packets Nectresse

Place all ingredients into a blender and blend until smooth.

Makes 2 cups
