I am not quite sure if I can even say I have a sister anymore.

She, “sister”, comes over today when I was developing this recipe and saw the new Jif Chocolate Hazelnut spread on the counter and said, “Is this like Nutella or something?”

I said, “Yeah, it’s delicious, taste it.”

With a turned up lip she said, “I have never even had Nutella.”

Me, “We are not sisters anymore.”

She’s dead to me.

Anyway, now that I am an only child that means more S’mores Milk Shake for me.

Jif came out with 2 new products Jif Chocolate Hazelnut Spread and Jif Mocha Cappuccino Hazelnut spread. They are mighty tasty and a bit dangerous since you will want to stick your whole face in the jar!

That other chocolate hazelnut spread company has held the reigns for long enough in the Chocolate Hazelnut spread arena, dont’cha think? Jif is gonna give them a run for their money!

I think toasting the marshmallows is a must with this recipe. I used fancy gourmet marshmallows, but I am sure Jet-Puff will do just fine.
I used my kitchen torch to toast the outsides, slid them onto a plate and “smooshed” then around until the un-toasted parts were exposed and torched those as well. I did this several times until all the everything was nicely browned.

S'mores Milkshake

A creamy milkshake with toasted marshmallows, graham crackers and Jif Chocolate Hazelnut spread
Ingredients
  • 3 cups Vanilla Ice Cream, packed
  • ⅔ cups milk
  • 4 large Marshmallows, toasted
  • 2 sheets regular Graham Crackers
  • ¼ cup Jif Chocolate Hazelnut Spread
Instructions
  1. Place the milk in a blender.
  2. Add the ice cream.
  3. Mix in blender until smooth.
  4. Add the marshmallows(these will obviously be very sticky), graham crackers and Jif Hazelnut Spread.
  5. Pulse several times until the last 3 ingredients are incorporated
Notes
Makes 4 cups, enough for 2 people. This is a "eat it with a spoon" milkshake because of the graham crackers.

Rustic Flower Cake and a Birthday

Isn’t it sad how fast our kids grow up? It sucks actually.

When I started this site Emma was only 2..turning 3.  Actually one of my first posts here was her Sleeping Beauty Birthday Cake. That cake was the FIRST cake I had ever made. For her 4th Birthday, she requested a Little Mermaid Birthday cake.

Yes, by the time she was 4, she was requesting I make her “fancy” cakes. So much for the 1970’s sheet cake with sprinkles, served still in the 9 x 13 pan.

Her 5th “Peace Sign” Birthday  cake was atrocious! I threw it together in 2 seconds. But the kids thought it was cool.

She was quite spoiled for her 6th Birthday, she got not one, but 2 Cute Cakes…one cupcake cake and one Shabby Chic rose cake.

Which brings us to her 7th birthday.

Again, the brat requested her own cake. She wanted a “messy” cake with butterflies, and roses with sliver balls in them.
She saw this cake on my pinterest board and loved it, so I drew my inspiration from it.

So that’s what she got…talk about an easy cake. I didn’t even have to smooth out the frosting..SCORE.

Favorite Things Thursday

I bake a lot. I know based on the lack of posting these days, it doesn’t seem like it, but I do.

Ok, you know that sticky residue on your baking pans, that no matter how many times you scrub your pan it won’t come off? You know what I’m talking about right? Well, I hate to tell you but it is from Non-Stick cooking spray. That stuff will kill your pans. You can not use it and grease your pans by hand, but that is just a P.I.A. !

Well, BAK-Klene ZT No-Stick Baking Spray to the rescue.

This stuff is the Bomb-Diggity. It doesn’t leave that sticky junk on your pans.

It’s not the cheapest stuff around. I get mine from Williams-Sonoma for $9.95 BUT, it lasts a long time and if it saves my pans from getting all gross…I would probably pay twice that amount!

Cuban Burger

Cuban Burger

Cuban Sandwiches are HUGE here in Tampa. Most of the country has probably never even heard of them.  It’s a mighty fine sandwich with roast Cuban pork, ham, swiss cheese, pickles, mayo and mustard on Cuban Bread, then the bread is brushed with butter and the sandwich is pressed thin. IT.IS.AMAZING

Johnsonville has a new “burger” line out. When I saw the Chorizo flavor, I instantly thought of making a Cuban Burger.
If you like the flavor of Chorizo, you will love these.

They have other flavors as well, Bratwurst Patties,Italian Sausage Patties and Cheddar Bratwurst. They are also super convenient because you can make one or all 6, it’s up to you.

The Cuban take on a hamburger
Ingredients
  • 1 Johnsonville Chorizo Pattie, frozen
  • 1 Hamburger Bun
  • 1½ teaspoon mayonaise
  • ½ teaspoon mustard
  • 3 pickle rounds
  • 1 slice swiss cheese
  • 1 slice deli ham
Instructions
  1. Grill Johnsonville Chorizo Pattie according to package directions.
  2. Mix mayonnaise and mustard together and spread on bun.
  3. Place pattie on bun and top with swiss cheese,pickles and ham.
  4. Makes 1 burger.

I took these photos from one of the many parties we attended. The day photos, I took at the Dole and Johnsonville parties hosted by Susan at Doughmesstic and Paula from Bell’alimento. And the nighttime photos I took during the Cameron Hughes Wine party hosted by the same great ladies. I sadly didn’t take any photos of the Zip List party hosted by Maria and Lori. I had been up for 24 hours at that point and thought I was dying.

Speaking of the Dole party, the fabulous Chef Ben Ford cooked for us. It was pretty awesome.

I had the best chicken panini there. The restaurant was so cozy.

Oh and when 4 girls are hungry, the only thing to do is to go to Top Pot Doughnuts and get a dozen doughnuts. We gave it the ol collage try, but we only seemed to put a dent in them.

We ate cupcakes like it was nobodies business….We stopped at Yellow Leaf Cupcakes and gorged.

We also had a little Pj-Cupcake party in our room one night. In attendance was Amanda from Kevin and Amanda (she tortured us with all the cupcakes) Lori from Recipe Girl and Recipe Boy, Jenny from Picky Palate, Maria and family from Two Peas , Shaina from Food for my Family , Tara from Unsophisticook and of course my sweet roommates.

So there you have it. I think I gained 9 pounds.

Mango Avocado Salsa

This is my favorite salsa of all times. It’s sweet from the mango and creamy from the avocado and a little spicy from the onion and cilantro. It’s just plain glorious.
Throw it on some chips, add it atop grilled chicken, salmon, salad..the possibilities are endless.
I normally use red onion for some color, but I forgot and got a Vidalia/sweet onion and it turned out perfect, it is just missing the pop of color from the red onion.

And how cute are my daughters chubby little 7 year old fingers holding the mango….I can’t stand it!

The perfect summer salsa made from Mangos and avocado
Ingredients
  • 2 Mangos,cubed
  • 2 Haas Avocados,cubed
  • ½ small onion(red or Vidalia),cubed
  • 1 tablespoon Honey
  • Juice from ½ Lemon
  • Juice from ½ Lime
  • 2 tablespoons Cilantro, chopped
  • Salt and Pepper to taste
Instructions
  1. Mix all ingredients in a bowl,cover and set in the refrigerator for 20 minutes.

A delicious new Quaker Snack

I really try to only get fruit and yogurt for my kids to munch on or to pack in their lunches, but they quicky get tired of the same things over and over. So when a company comes out with a new wholesome food snack option..I am ALLLLLLL over it. However sometimes I am leary of the nutritional value and the possibility of the “pre-packaged” taste. At 140 calories, 5 grams fiber, 6 grams protein and an excelent source of 5 B-Vitamens, I do not feel guilty eating them or giving them to my kids for a quick breakfast snack.

My 7 year old daughter, who eats NOTHING I bake, even my banana bread, LOVED the Banana Nut Bread flavor. My sons favorite was the Cinnamon Pecan Bread. Shocking, they like the opposite.

We were out of town for Memeorial day and I brought a box to the beach. All 5 bars were gone in 2 hours!
They were a perfect on the go snack.

How to cut a Pineapple

Sure, pre cut fresh pineapple is convenient, but it is also more expensive and me being the Cheapy McCheaperson that I am, I cut my own. It’s easy and will save you money.

So in the event that whole pineapples intimidates you, here is my easy step by step photo journey.

Get yourself a beautiful golden yellow pineapple. If it’s green, it’s not ripe yet.

With your sharpest knife, cut the top off. Make sure you keep the top, It looks beautiful on a fruit tray.

Cut off the bottom and discard

Let’s get rid of the spiky part.

Cut the pineapple in quarters.

You see the tough core at the interior point? It needs to go bye bye.

Afetr the core is gone, cut the quarters into half.

Carrot, Beet and Pineapple Juice

If you follow me on twitter,Facebook or Instagram, you would know by now that I got a Juice Extractor.The Hamilton Beach Big Mouth Juice Extractor. Can I tell you how over the moon excited I was to get it.

I have been wanting to start “juicing” for a while now. Not as a means to diet, just to get more healthy food into my diet. Lord knows I need to balance out the baked goods.

I am sharing with you one of my favorite concoctions…
Carrot, Beet, Pineapple and Ginger Juice.
IT.IS.DELICIOUS !!!

I crave it.

Yes, you hear me correct, I crave beet juice. Don’t knock it till you try it!

You need 1/4 pineapple, 1 beet peeled, 5 carrots and 1/2″ piece of ginger.

Pour it into a big mug and pop it into the fridge while you clean your juicer.

Carrot, Beet and Pineapple Juice
Ingredients
  • ¼ pineapple peeled
  • 5 carrots
  • 1 beet, peeled
  • ½" piece of ginger root
Instructions
  1. One by one, place your ingredients onto your juicer and juice.
  2. Pour into a glass and refrigerate while you clean your juicer.
Notes
Makes about 1½ cup juice
