We are a chicken house. We eat it A LOT. So you have to have a huge chicken recipe arsenal. I love this cheesy chicken and so did everyone else in the house..even the kids..shocking, I know.
For my $10 meals, I served it with green beans and pre-packaged rice and vermicelli mix. Its a nice balanced, quick and easy meal!

Chicken zucchini Roll Ups 2

Chicken and Zucchini Roll-Ups ($10 Meal)

Chicken stuffed with zucchini and cheese makes a delicious $10 meal.
Ingredients
  • 1 zucchini, finely chopped
  • 2 cloves garlic, minced
  • ⅛ teaspoon salt
  • ¼ teaspoon pepper
  • 1 pound boneless skinless chicken breasts, 3 breasts
  • 2½ tablespoons oil, divided
  • 1 cup My Essentials 4 Cheese Italian Blend Shredded Cheese
  • ½ cup Bread Crumbs
  • ½ teaspoon Onion Powder
  • ½ teaspoon Garlic Powder
  • 1 Egg
  • 1 box Hannaford Rice & Vermicelli Mix Chicken Flavored, cooked to package directions
  • 1 bag (16 oz.) My Essentials Frozen Green Beans, cooked to package directions
Instructions
  1. Preheat oven to 350.
  2. In a medium skillet over medium heat, add ½ tablespoon oil.
  3. Add the zucchini, salt and pepper and cook for 5 minutes.
  4. Stir in the garlic and cook for an additional minute.
  5. Remove the zucchini mixture and allow to cool while you prep the chicken.
  6. Place the chicken in-between 2 pieces of plastic and pound the chicken to ¼” thickness.
  7. Mix together the bread crumbs, onion powder and garlic powder in a shallow plate.
  8. In another shallow plate whisk the egg.
  9. Add the cheese to the cooled zucchini, mix and evenly divide over the chicken breasts.
  10. Roll the chicken breast up into a roll and secure with toothpicks.
  11. Roll the chicken into the egg and allow excess to drip off.
  12. Roll in the bread crumbs.
  13. In a medium oven proof skillet, heat 2 tablespoons oil over medium heat.
  14. Add the chicken and cook for 4 minutes per side.
  15. Place the chicken in the oven and cook for 35 minutes.
  16. Slice the chicken into coin shaped and serve with the rice and green beans.

Favorite Things Thursday

Moroccan Oil

I don’t know what I did without this stuff!

I have the kind of hair that really can’t decide what it wants to do. It’s kinda straight and kinda fuzzy, some curl in random places, it’s a hot mess really.

I certainly don’t have the kind of hair that I can let dry naturally. Think homeless person.

And to make matters worse, it’s super fine and totally greasy. I have have have to wash my hair EVERYDAY or it looks like I haven’t washed it in two weeks.

When I get out of the shower, I use one of those big ol’ pick combs and one squirt of Moroccan Oil. I love the smell and it allows me to glide the comb through my hair without ripping out the last two hairs on my head.

It gives my hair a nice shine and tames down the flyways without making my hair oily AT ALL.

Beefy Baked Potatoes

When I was developing my $10 meal recipes for Sweetbay Supermarket, they gave me the idea of developing a different type of Shepherds Pie. While my Guinness Shepherds Pie is wildly popular, I didn’t want to use beer in their recipe and wanted to take the step of making mashed potatoes out of the equation. So I made an easy Shepherd Pie Filling and put it over baked potatoes and topped it with cheese! YUM!

I love serving “different” meals to my family. And yep, it’s only $10 to make this dinner.
It might come in under if you run to Sweetbay Supermarket this week because 80% lean ground chuck is $2.79 lb.

Beefy Baked Potatoes

A deconstructed Shepherds Pie
Ingredients
  • 4 Medium Russet Potatoes
  • 1 pound Ground Beef
  • ½ teaspoon oil
  • ⅓ cup Hannaford Frozen Peas, thawed
  • ⅓ cup Hannaford Frozen Carrots, thawed
  • ½ cup Hannaford Frozen Corn, thawed
  • 1 packet (.87 oz.) Hannaford Brown Gravy Mix, cooked to package directions
  • 1 cup My Essentials Shredded Sharp Cheddar Cheese
Instructions
  1. Wash and prick the top potatoes with a fork about 5 times.
  2. Cook the potatoes in the microwave on high for 25 minutes or until fork tender
  3. In a medium skillet cook the ground beef until no longer pink in the middle, drain.
  4. In the same skillet, over medium heat, add the oil, peas,carrots and corn. Cook for 5 minutes or until the carrots are tender.
  5. Return the beef to the skillet with the vegetables. Add the gravy and cook for about 5 minutes or until heated through.
  6. Partially open the potatoes and evenly divide the beef mixture over each potato, top each potato with ¼ cheese.

Crescent Cinnamon Rolls

I planned on making homemade cinnamon rolls, but I forgot to thaw out my cinnamon roll dough that I made a couple of months ago. But you know when you get something in your head to make, you are completely on a mission.

I remembered I had some Pillsbury Crescent rolls in the fridge and thought, “yeah, they will do.”

Easy and delicious I tell you. The kids LOVED LOVED LOVED them…and so did the grownups.

Unroll your Crescent Rolls

Spread your cinnamon butter over the dough

Crescent Cinnamon Rolls

A semi homemade cinnamon roll made easy with a tube of Crescent Rolls
Ingredients
  • 1 tube (8 count) Pillsbury Crescent Rolls, unrolled and separated
Filling
  • 4 tablespoons butter,softened
  • ¼ cup white sugar
  • 2½ teaspoons cinnamon
Glaze
  • 2 tablespoons butter, melted
  • ¼ cup + 2 tablespoons powdered Sugar
  • ½ teaspoon vanilla extract
Instructions
  1. Preheat oven to 375
  2. Place the unrolled and separate crescent rolls on an un greased rimmed cookie sheet(one with sides).
Filling
  1. In a small bowl, mix together the butter, sugar and cinnamon
Assemble
  1. Evenly spread the cinnamon butter over the crescent rolls and roll up tightly.
  2. Place tip side down on the cookie sheet.
  3. Bake for 10-12 minutes.
Glaze
  1. In a small bowl, mix together the butter, powdered sugar and vanilla until smooth.
  2. Place in a zip lock bag and snip a tiny corner off.
  3. Drizzle the glaze over the cinnamon rolls.
Notes
Some cinnamon butter will leak from the crescent rolls while cooking. This will not affect the taste.

I did, and to be honest I didn’t really see many movies this year, so I just watched for the fashion.

Favorite Things Thursday

I love when I find a good food product, like a really good food product.
A couple of years ago, I was desperate for blueberry pancakes, but blueberry season was over. I wasn’t going to pay $6 for a tiny 1/2 pint of tasteless blueberries. As I strolled down the frozen veggie/fruit section, I saw a new product in my store (those always catch my eye).

So I picked up the blue bag of blueberries and brought them home. Not having much hope for them, as I am not a big fan of frozen fruit, I threw them into my pancake batter.

The strangest thing happened when I bit into my first bite. I was instantly transported back to a trip to Cape Cod when I was a little girl. I am serious. One bite and all the memories flooded back. I remember picking blueberries off of wild blueberry bushes and literally eating them till we were blue in the face.
The minute I was done shoving my face with delicious blueberry pancakes, I looked up the company online and wrote them a letter. I gushed about how amazing I thought their blueberries were and them memories they evoked. The wrote a very nice note back and told me that they get letters often get those same types of letters!
