Avocado Aioli Burgers ($10 meal)

I think I professed my love for hamburgers in my last Favorite Things Thursday Post.

There is nothing better than a big fat juicy hamburger. A big fat juice hamburger on a toasted bun, slathered with aioli sauce, melty cheese and a creamy avocado…..oh pinch me now!

Like I said last week, I like my hamburgers with lots of coarse Kosher salt and lots and lot of freshly ground pepper. And I like them on the rare side of medium- rare! If there is juice dripping off my elbow when I am eating it, well then  I know my work as the master hamburger griller is done!

You get this delicious hamburger and a side of homemade sweet potato fries all for $10! Yup.

Avocado Aioli Burgers with Sweet Potato Fries ($10 meal)

A delicious Hamburger with a spicy aioli sauce and avocados serves with sweet potato fries all for $10
Ingredients
  • 1 lb Ground Beef
  • 4 Sweetbay Supermarket Bakery Sesame Hamburger Buns, toasted
  • 2 oz. Hannaford Colby Jack Cheese (1/4 block), sliced in thin slices
  • 4 leafs Red Lettuce
  • 1 Small Tomato,sliced
  • 1 Avocado, pitted, removed from skin and sliced
  • Salt
  • Pepper
Sweet Potato Fries
  • 2 small Sweet Potatoes,washed (about 1 pound)
  • 1 tablespoon Vegetable Oil
  • ¼ teaspoon Salt
  • ½ teaspoon Pepper
Aioli
  • ¼ cup mayonnaise
  • 1 Garlic Clove, minced
  • Zest of 1 Lemon
  • ½ tablespoon Lemon Juice(the juice from ½ lemon)
  • 4 drops Hot Sauce
  • Pinch of pepper
Instructions
Aioli
  1. In a small bowl mix together the mayonnaise, garlic, lemon zest, lemon juice, hot sauce and pepper.
  2. Cover with plastic wrap and place in the refrigerator.
  3. The aioli can be made a day in advance.
Sweet Potato Fries
  1. Preheat the oven to 450
  2. Line a baking sheet with non-stick foil or parchment paper.
  3. Cut the sweet potatoes into thin french fry shaped sticks.
  4. Place them in a bowl and toss with the oil, salt and pepper.
  5. Arrange them on the prepared baking sheet so they are not touching.
  6. Bake for 15-20 minutes, turning over halfway through cooking.
Hamburgers
  1. Form the ground beef into 4 equal sized patties.
  2. Season with desired amount of salt and pepper
  3. In a large skillet over medium high heat, cook the hamburgers for about 4 minutes per side or to your desired doneness.
  4. Add the cheese to the tops during the last minute of cooking to allow it to melt.
Assembly
  1. Spread the top of each bun with 1 tablespoon aioli.
  2. Place a piece of lettuce on each bun.
  3. Add a slice of tomato
  4. Add the hamburger.
  5. Top with the avocado slices.
  6. Add the bun with the aioli to the top.
Notes
Sweet Potato Fries will not be as crunchy as a regular french fry. The hamburgers can also be cooked on an outdoor grill. *Price estimate does not include pantry staples you may likely already have. Rosemary Pork Chops with Balsamic Strawberry Sauce

I was asked by Sweetbay Supermarket to develop a savory strawberry Heart Healthy Recipe for National Heart Month, and pork and strawberry immediately come to mind.

Let me tell you how amazing this recipe is…Really REALLY amazing! Once you slather the pork chop with the strawberry sauce, it is pure heaven.

I cooked these on 2 Tv Segments.

One on Daytime  (aired on 2/24)and on on Fox 4 Blend in Cape Coral (airs on 2/28) . I will try to get the videos up on my site soon.

Rosemary Pork Chops with Balsamic Strawberry Sauce

Delicious Rosemary Pork Chops slathered with a sweet and tangy Balsamic Strawberry Sauce
Ingredients
Pork Chops
  • 4 Bone In Pork Chops (1/2” thick)
2 teaspoons crushed Rosemary
  • 1 teaspoon coarse Kosher Salt
  • ½ teaspoon pepper
  • 2 teaspoons olive oil
  • 1 teaspoon butter
Balsamic Strawberry Sauce
  • 1 cup chopped Strawberries
  • 1½ tablespoons brown sugar
  • 2 tablespoons Balsamic Vinegar
  • ⅛ teaspoon dried rosemary
  • Pinch coarse Kosher salt
  • Pinch Pepper
Instructions
Pork Chops
  1. Pat the pork chops dry with paper towel.
Season with rosemary, salt and pepper.
  2. In a large skillet over medium heat, add the olive oil and butter.
  3. Sauté pork chops for 5 minutes per side or until the internal temperature reaches 145.
  4. Allow to sit for 3 minutes prior to cutting.
  5. Serve with Balsamic Strawberry Sauce
Strawberry Sauce
  1. In a medium saucepan, over medium heat, add the strawberries,brown sugar, vinegar,rosemary,salt and pepper. Cook for 10 minutes, stirring occasionally.
  2. Reduce heat to low and cook for an additional 5-10 minutes, stirring occasionally or until the sauce becomes thick.
  3. Serve over pork chops or on the side as a dipping sauce.

Are you all liking my “Favorite Things Thursday” Segment? I need some feedback, I certainly don’t want to continue something if you don’t like it. But if you love it, I will keep doing them.

So, I love me some hamburgers. And my family says I make the “Best Hamburgers Ever”
They are really quite simple. A good quality ground chuck and lots of coarse Kosher salt and fresh ground pepper. I don’t put any seasonings in my hamburgers, in my opinion they are the best when you can actually taste the beef, not masked with a bunch of other stuff. You might as well make a meatloaf if you add a billion things to them.

Anyway, another one of my tricks to the perfect burger is my cheapy Burger Press. One might think it is another kitchen gadget, but I will not make a burger without it! My burgers never shrink and never turn into little meatballs all because of this little plastic press.

I have no clue where I purchased it, I have had it forever, but I found a similar one here. Ummm,yeah..it’s like $4!!!

Get your ground chuck, roll it in a ball and put it on the press

Green Juice and juicer GIVEAWAY

If you follow me on twitter, Facebook or Instagram, you will know I have gone CRAZY for juicing.

No, not pour juice from a store bought bottle. Making my own healthy juices from a juicing machine or juice extractor! I am addicted I tell you. I actually crave it. I am not sure if it’s my body telling me I need more nutrients or I am just in love with all of the flavor combinations I come up with.

I sent out an APB on twitter asking everyone about juicing and the types of juicers they used and the powers to be must have been listening because Hamilton Beach rocked my world when they sent me their newest Juice Extractor, The Big Mouth Juice Extractor.

When the package arrived, I squealed like a little pig(yes that is a reference to my weight) in excitement. The only thing I had to juice was some clementines.
There was no assembly required, I just had to take some tape off the machine and wash it.

I put a plastic garbage bag into the large clear pulp bin for easy clean up. I peeled the clementines ( you should always peel citrus before putting it in the juicer), and threw them in the HUGE food shoot and in like 3 seconds I had delicious juice.

Clean up took a few minutes. You have to scrub the blade/screen with a little brush that is provided for you. It’s quite easy. I place my juice in the fridge while I clean the machine. You want to make sure you clean it right away.

The  next day I ran out to the store and bought lots and lots of fresh fruit and veggies.

I can up with a delicious “Green Juice” that tasted delicious and filled me up. And you know what, mentally it made me feel great because I knew what I just put in my body…..a massive amount of healthy food.

Juicing couldn’t be easier!

A healthy Green Juice
Ingredients
  • 1 green apple
  • 2 whole romaine lettuce leaves
  • 2 kale leaves
  • 2 whole stalks celery
  • large handful parsley, including stems
  • large handful spinach
  • ¼ lemon,peeled
  • ½" piece of ginger
  • ¼ English cucumber
Instructions
  1. Place all of the items into the juicer one at a time and push down with the food plunger.
Notes
Makes about 1 1 /2 cups juice Make sure all of your fruits and veggies are thoroughly washed.

Now I suppose you want to start juicing too??

Texas-Toast Sloppy Joes ($10 meal)

Until I created this recipe for Sweetbay Supermarket , I always used the canned Sloppy Joe sauce too.

But let me tell you, making the sauce from scratch is not only WAY better than the can, but it is also really really easy!!!

And how fun is it to make those Sloppy Joe’s opened faced? And on some cheesy Texas Toast!!! Much better than a boring ol’ bun.

In my opinion, you just can’t serve these old school sandwiches without corn on the cob. That would be like having grilled cheese without tomato soup. It’s illegal I think.

What really put this meal over the top is that is feeds a family of four, takes less than 20 minutes to cook AND it’s only $10!!!!!!!


Texas-Toast Sloppy Joes ($10 meal)

Texas Toast Sloppy Joes
Ingredients
  • 1 teaspoon Oil
  • 1 Small Onion, finely diced
  • ½ Small Green Pepper, finely diced
  • 1 lb. Ground Beef
  • ¾ cup Ketchup
  • 1 teaspoon Mustard
  • 1 tablespoon Brown Sugar
  • ⅛ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • ¼ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ teaspoon White Vinegar
  • pinch Red Pepper (cayenne pepper)
  • 1 package Hannaford 5 Cheese Texas Toast (8 slices), cooked to package directions
  • 1 package (8 ct) Hannaford Frozen Corn on the Cob, cooked to package directions
  • ¼ cup My Essentials Shredded Cheddar Cheese
Instructions
  1. Add the oil to a medium skillet over medium heat.
  2. Add the onion and cook for about 5 minutes or until the onion has softened.
  3. Add the green pepper and cook for an additional 3-5 minutes or until softened. Remove the onion and green pepper and set aside.
  4. In the same skillet, cook the ground beef until no longer pink in the middle. Drain
  5. Add the cooked beef, onions and peppers back into the skillet, and add the ketchup, mustard, brown sugar, salt, black pepper, garlic powder, onion powder, white vinegar and red pepper. Stir to incorporate.
  6. Reduce the heat to low and allow to cook for about 5 minutes, stirring occasionally.
  7. Serve over 2 slices of Texas Toast and 2 ears of corn.
  8. Sprinkle 1 tablespoon cheese over each Sloppy Joe

How can one say no? I mean, we all know I have no will power.

So I sit here with 2 boxes of Samoas, 2 boxes of Thin Mints(now in the freezer) and 2 boxes of Trefoils. I can’t have that kind of stuff laying around the house. There is a reason I don’t buy cookies at the store…plain and simple. I. WILL. EAT. THEM!

Samoas are my weakness. So I had to come up with a remedy to get rid of them. If I knew I had a box, I would gooble them right up.
I knew I had to put them in something. I had a big ol box of Rice Krispies in the pantry.
The Samoas found a new home….chopped up in the Rice Krispie Treats.

Samoa Rice Krispie Treats

Rice Krispie Treats with chopped up Samoa Girl Scout Cookies.
Ingredients
  • 3 tablespoons butter
  • 4 cups mini marshmallows
  • 6 cups Rice Krispie Cereal
  • 1 box Samoas , chopped
  • ¼ cup semi-sweet chocolate chips, melted
Instructions
  1. Spray a 9 x 13 pan with non-stick spray
  2. In a large saucepan, melt the butter over low heat.
  3. Add the marshmallows and stir until melted.
  4. Stir in the Rice Krispies and the Samoas.
  5. Place the mixture into prepared pan and pat evenly in pan.
  6. Allow to cool.
  7. Place the melted chocolate into a zip lock bag, snip off the edge and pipe the melted chocolate onto the Rice Krispie treats.
  8. Place in the refrigerator for about 10 minutes for the chocolate to set and then cut.
Notes
Makes about 24 squares

I am thinking of Summer Chicken and Basil Pasta , Buffalo Chicken Sliders and we can’t forget something sweet…how bout some Anytime Sugar Cookies?  All sound delightful. I have cooked with I Can’t Believe It’s Not Butter! , but I  have never baked with it, so I am super excited to try the Anytime Sugar Cookies.

Here is the recipe 

Anytime Sugar Cookies

Ingredients

– 
2-1/2 cups all-purpose flour
– 
1/2 tsp. baking soda
– 
1/2 tsp. cream of tartar
– 
1/4 tsp. salt
– 
1 cup (2 sticks) I Can’t Believe It’s Not Butter!® All Purpose Sticks
– 
3/4 cup granulated sugar, divided
– 
1/2 cup confectioners sugar
– 
1 large egg
– 
1/2 tsp. vanilla extract
Instructions
  1. Preheat oven 350°.
  2. Combine flour, baking soda, cream of tartar and salt in medium bowl; set aside.
  3. Beat I Can’t Believe It’s Not Butter!® All Purpose Sticks, 1/2 cup granulated sugar and confectioners sugar in large bowl with electric mixer until light and fluffy. Beat in egg and vanilla until blended. Gradually beat in flour mixture just until blended.
  4. Shape dough into 1-inch balls, then roll in remaining 1/4 cup granulated sugar; arrange on ungreased baking sheets, 2 inches apart. Flatten each with the bottom of a glass.
  5. Bake 10 minutes or until edges are slightly golden. Cool sheets 2 minutes on wire rack; remove cookies from sheets and cool completely.

Favorite Things Thursday

Bar Keepers

Ohhhhh, Bar Keepers Friend, How I love thee!
Growing up, my parents kept Soft Scrub underneath the sink. It’s all I knew.
Then after high school I got a job at Chili’s and the ultra cool bartenders used Bar Keepers Friend to clean everything.
So I made the switch and have never looked back.
I love the stuff, you can clean a million things with it….below is one example of how I use it.
I am not sure if y’all know, but I am REALLY REALLY cheap. I hate spending money.
I have a few sets of plates, all seem to be white. I suppose you can call me cheap and boring.

The problem with white plates is that they start looking yucky and all scratched up with use.
So me being the Mrs. Cheapy-Cheaperson that I am, I refuse to buy new plates.

Bar Keepers Friend to the rescue!

To de-scratch a plate, all you need is your plate, a wet paper towel and Bar Keepers Friend.

Sprinkle some Bar Keepers Friend on your ugly plate and scrub with the wet paper towel until the scratches disappear. Wash the plate.

Campbell’s AdDress Your Heart GIVEAWAY

I think it is a safe assumption to say that we all pretty much grew up with Campbell’s Products.

I remember my Mom was kinda a soup rebel. She would use her cool electric can opener to open the can of classic Campbell’s Chicken Noodle Soup and only mix it with a HALF a can of water instead of a whole can. Breakin the law, breaking the law.

I do the same to this day. Shame on me.

Yeah, there is such thing as a “Soup Master”, pretty nice job title.

Unfortunately, I am only know as the “Laundry Master”, not a very glamourous title.

Anyhooo, yes, Campbell’s is concerned with our life pumpers.
So they teamed up with those 2 chefs for a heart healthy recipe challenge.

If you have already not planned your dinner for tonight, I have have a quick and easy, oh and $10 meal for you.  You get chicken, pesto pasta, green beans and bread for all under $10 for a family of 4. Yeah, that’s a deal!

Light Chicken Parmesan with Pesto Pasta ($10 Meal)

Lightened Up chicken Parmesan with Pesto Pasta
Ingredients
  • 1 lb. Boneless Skinless Chicken Breasts
  • ⅓ cup Flour
  • ⅛ teaspoon pepper
  • ¼ teaspoon salt
  • 1 teaspoon Italian Seasoning
  • 2 tablespoons oil
  • ½ cup Hannaford Pasta Sauce
  • ½ cup My Essentials Shredded Italian Cheese Blend
  • 8 oz. (1/2 box) Hannaford Gemelli Pasta, cooked to package directions
  • 1 0.50 oz. packet Dried Pesto Mix
  • ½ cup milk
  • 3 tablespoons Oil
  • 1 16 oz. package My Essentials Frozen Green Beans, cooked to package directions
  • 1 loaf French Bread
  • Salt and Pepper for additional seasoning
Instructions
  1. ) In a shallow dish mix together the flour, pepper, salt and Italian Seasoning.
  2. Coat each piece of chicken with the seasoned flour.
  3. Over medium heat, in a large skillet, heat the oil.
  4. Add the chicken to the skillet, and cook for 8 minutes per side or until no longer pink in the middle.
  5. In a small saucepan mix together the dry pesto mix, milk and oil and cook over medium heat for about 1 minute or until heated through.
  6. Toss the pesto sauce with the cooked noodles. Season with salt and pepper if desired.
  7. Slice the chicken, pour on the pasta sauce and sprinkle with cheese.
  8. Place the chicken over noodles and serve with green beans and bread.

Double Chocolate Marshmallow Brownies

I am sure if you are a food blogger, you have a pretty spoiled significant other.

One night my husband opened up the “Baking Cabinet” and was just staring into it.
He was just waiting for me to notice.
I said, “What are you doing, do you want me to make you something?
With out hesitation or without even taking a breath he said,
“Brownies……. Brownies with walnuts, chocolate chips and marshmallows.”
He said it so fast like he had been plotting.
So the next morning I made him his requested brownies.
Brownies with chocolate chips, toasted walnuts and marshmallows. Pretty simple.

I took them to work and I have never seen people go so crazy over a brownie. Like I put crack in them. You know, Kinda like McDonalds does with their fries.
They look like normal brownies, but they were anything but.
I mixed the marshmallows into the batter and once baked they melted right in, you can’t even see them in the cooked brownie.
The marshmallows made the brownies sooooooooo deliciously chewy and amazing. And the added chocolate chips and toasted walnuts just put them over the top.
I used a box mix, cause I am lazy like that these days. And to be honest, I love boxed brownie mix.
So if you want people to thing you are a Brownie God, go ahead and make these!

Double Chocolate Marshmallow Brownies

Brownies with marshmallows, chocolate chips and toasted walnuts. The best brownies. Perfectly chewy.
Ingredients
  • 1 Box Brownie Mix, mixed to directions NOT FAMILY SIZE
  • ¾ cup chopped Walnuts,toasted
  • 1 /2 cup Semi-Sweet Chocolate Chips
  • 1½ cup Mini Marshmallows
Instructions
  1. Preheat oven as per directed on your brownie mix
  2. Line a 8 x 8 pan with non stick foil or spray with non stick spray.
  3. Mix your brownies according to your package directions.
  4. Fold in the walnuts, chocolate chips and marshmallows
  5. Bake for about 5 minutes longer than the package directions.
  6. Allow to completely before slicing.
Notes
I did not include in my ingredients the eggs, oil and water because every boxed brownie recipe uses different quantities. To toast walnuts, bake in a 350 degree oven for 8-10 minutes. I did not use the brownie mix that says it is "Family Size" for the 9 x 13 pan. I use the size brownie mix that is for 8 x 8 or 9 x 9 pans.
