Pork Tenderloin & Giveaway

Pork is my best friend. I just love it. But it is sad that I don’t make it nearly enough.

I think one of the tricks to a perfect piece of pork it to Brine it. Brining tenderizes the meat and gives it a delicious flavor. If you plan a little bit ahead, you will never have another dry piece of pork again! Did you know that the internal cooking temp for pork was just recently lowered to 145 degrees?

Pork is a great alternative meat to turkey on Thanksgiving and Christmas. I know I spend about a week preparing Thanksgiving dinner and I just don’t have the time to do it all again for Christmas. The recipe is simple and your whole family will love it!!

Pork Tenderloin
Recipe Type: Main

Serves: 6
A brined juicy Pork Tenderloin. Perfect for a fancy Holiday meal or just on a Tuesday!
Ingredients
  • BRINE
  • 1/4 cup Course Kosher Salt
  • 1/4 cup Brown Sugar
  • 4 Cups Water
  • PORK
  • 1 to 1 1/2 pounds Pork Loin Tenderloin
  • 1 egg
  • 1 tablespoon Dijon Mustard
  • 1 cup Italian Bread Crumbs
  • 1 teaspoon Rosemary
  • 1/2 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • Pinch Cayenne Pepper
  • 1/4 teaspoon Dry Mustard
  • 1/4 teaspoon Kosher Salt
  • 1/4 teaspoon Pepper
Instructions
TO BRINE PORK
  1. In a gallon zip lock bag, dissolve the salt and sugar.
  2. Add pork to the bag, squeeze out all of the air and place in the refriderator for 4 to 24 hours.
  3. Remove the pork and rinse with water, pat dry.
  4. Preheat the oven to 350
SEASONING THE PORK
  1. In a shallow dish ( like a pie plate), mix the egg and mustard.
  2. In another shallow dish, mix together the bread crumbs, rosemary,garlic powder,onion powder,onion powder, cayenne powder, dry mustard, salt and pepper.
  3. Coat the pork in the egg mixture. Let the excess drip off.
  4. Roll the pork in the bread crumb mixture and make sure the entire piece is coated well.
  5. Place in a baking dish lined with non-stick foil.
  6. Lightly spray the top of the pork with cooking spray.
  7. Bake for about 40 minutes or until the internal temperature is at least 145.

    Years ago before our son was born it was our tradition to have pork tenderloin for our Christmas (just the 2 of us before traveling to family). Now sometimes at my parents we have Pork Ribs, or a Pork Crown roast, but it often makes an appearance!

  72. It is a tradition in the hispanic home to roast the pork of your choice in the oven or whole, cooking it outdoors and overnight. The preparations of this pork is a family affair. As a matter of fact everything we cook that day has pork in it. The rice, the beans, the pasteles, etc. Hispanics love their pork. Well the FDA does state “it’s the next white meat”.

  158. We don’t usually cook it, but buy a Honey Baked Ham every Christmas and Thanksgiving. I prefer the slices cooked in a skillet for breakfast those mornings.

  171. I make roasted pork tenderloin almost every other week. It’s the easiest thing to bake and the left overs are delicious.
