I love love love me some rice. Really I do. I could probably find a way to fix it for ever meal. I love mixing all sorts of thing in it. But sometimes when I am a super slacker grocery shopper and have nothing it the house to mix with my rice, it’s nice to have the convenience of Sun-Bird Asian Seasonings. P.S Hmmm, I think I did it to you last year too with the ruffle cake. My bad!

** Dear readers..to achieve this look use a 1m tip. I used this frosting recipe and folded in 9 oz. milk chocolate that was melted and cooled. It took me bout 1 minute for pipe the roses on the cake…I was in a massive rush. However if you take your time while piping, it would have a much cleaner look.

 

 

Simple Birthday Cake

I hope you don’t mind another cake photo, but I just love love love cakes. I made this simple chocolate cake for my sister-in-laws birthday last weekend. I couldn’t just leave it a plain ole chocolate cake, so I made a green(her favorite color) flower from fondant and slapped it on the side. Instant chic cake!!!
Thanks to Christina over at Mele Cotte for giving me the idea of using coffee grounds for the middle of the flower.

I ALWAYS ALWAYS ALWAYS use Hershey’s Black Magic Cake Recipe..here   I have made many-a chocolate cakes and this one is by far the very best!
and for the frosting I use  is Hershey’s “perfectly chocolate” chocolate frosting..here

 

 

Dill Oyster Crackers

These are my all time favorite make at home crackers. My step Mom used to make them when I was a kid. They are soooooo full of flavor and VERY addicting. Though I have changed the recipe a bit over the years, I love them as much today as I did 20 years ago.  They are always a hit at parties.
If I am making them to just have at the house for a snack, I make a half batch. Why? Ummm, hello, do you not know me by now? I see food and I eat it and can’t stop! Ohhh, how I wish I was blessed with will power. Maybe in another life.

Dill Oyster Crackers

Delicious little crackers that pack HUGE flavor.
Ingredients
  • 2 - 11 oz. boxes Oyster Crackers
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 package Hidden Valley Salad Dressing Mix
  • 1½ tablespoons dried Dill
  • ¼ teaspoon pepper
  • ¼ teaspoon Coarse Kosher Salt
  • 1½ cups vegetable oil
Instructions
  1. Preheat the oven to 175.
  2. In a large measuring cup mix together the onion powder, garlic powder, salad dressing mix, dill, pepper, salt and oil.
  3. Place the oyster crackers in a large bowl and pour the oil mixture over the top and mix until well incorporated.
  4. Pour evenly onto 2 baking sheets.
  5. Bake for 1½ hours, stirring every 15 minutes.
  6. Store in an airtight container.

Back to school is in full swing and I am about to pull out my hair. I can’t seem to find any balance. Working, blogging,homework..it’s just about to drown me. I think its kinda crazy that my 3rd grader has 2 hours of homework a night. A bit much, don’t you think?

So again, during those really hectic nights when I haven’t really even planned dinner, I know I can count on Sun-Bird for a quick fix. Just like the General Tso’s chicken, this Mongolian Beef was perfect. I would never be able to keep all of the ingredients on hand to make this meal work. I find that to be the problem with me and Asian cooking. So many ingredients go into Asian cooking, they would end up going bad before I got a change to use them all up.

If you are a busy, frazzled Mom like me, give this dish a try. My kids gobbled up the Mongolian Beef and asked for seconds! KID APPROVED!!

Flatbread Naan Pizza

Pizza dough is for the birds. Don’t get me wrong, I make pizza all the time for my kids using fresh pizza dough,but it’s a pain, and all they want on the pizza is cheese. So they get plain ol boring cheese pizza with leftovers for their lunch.
For the hubby and I, I make Naan pizza. You get 2 pieces in a package, so thats one for me and one for him. I love it because I can make my own personal “pizza” with all the toppings I want and then a personalized one for the hubs.

Have you not seen Naan in your stores. Mine keeps it by the deli.
Stonefire is my favorite, it has perfect texture and it somes in 3 different flavors, Original,Garlic and Whole grain. Pick up some Naan next time you are at the store. You will be pleasantly surprised at the delicious-ness and the million things you can do with it!
I have been buying their brand for a while now, but they did send me some for free!! Wahhooo, the perks of being a food blogger.

There is not much of a recipe, just throw what you like on your Naan. And throw it in a 400 degree oven until the cheese melts. Below is the recipe for my Naan Pizza

Nann pizza
Ingredients
  • 1 piece Naan
  • 1 teaspoon extra virgin olive oil
  • ⅓ cup ricotta cheese
  • pinch coarse Kosher salt
  • Pinch pepper
  • ¼ teaspoon chopped rosemary
  • Onions, grilled
  • Cherry tomatoes, sliced in half and grilled
  • ¼ cup mozzarella cheese, shredded
  • ¼ cup fresh mozzarella pearls
  • 2 tablespoons fresh basil, chopped
Instructions
  1. Preheat the oven to 400.
  2. Brush the Naan with the olive oil.
  3. In a small bowl, mix together the ricotta cheese, salt, pepper and rosemary.
  4. Spread the ricotta mixture over the Naan.
  5. Top the pizza with the shredded mozzarella, onions, tomatoes, mozzarella pearls and basil.
  6. Place on a baking sheet and bake for about 10 minutes or until the cheese is melted.
