I never claimed not be to strange.I even have strange taste buds. They like salty/sweet things. And normally those salt/sweet cravings can be resolved by eating potato chips with chocolate or peanut butter and chocolate. So the peanut butter, Nutella, potato chip Panini was born. Ohhh, stop it! You know you wanna try it.
Eat it with a big ole’ glass of milk and all of your PMS symptoms will go away.

It’s ok you can still make this even if you dont have a Panini Maker…I don’t.
I take my handy-dandy grill pan, put it over my burner. Then I take my heavy cast iron skillet and put some foil on the bottom. I then throw my tea pot on top to balance out the skillet. And there you have it..the poor folks Panini Press!

Jif peanut butter…oh how I love thee. What’s the saying? “Choosy Moms choose Jif.” I suppose I am a choosy Mom.

Ohhhh, and take a bite and watch all of the yummy warm Jif Peanut Butter ooze out.

Peanut Butter,Nutella,Potato Chip Panini

Ingredients
  • 1 4" piece of French Bread, sliced in half horizontally
  • 1 tablespoon Jif Peanut Butter
  • ⅓ tablespoon chocolate hazelnut spread, such as Nutella.
  • 6 sturdy potato chips, such as Ruffles
  • 1 teaspoon butter, softened
Instructions
  1. Preheat you "Panini Press"
  2. Spread the Jif peanut butter on one side of the bread.
  3. Spread the Nutella on the other piece of bread.
  4. Place the potato chips onto of either the peanut butter or Nutella.
  5. Assemble the sandwich.
  6. Spread the softened butter on both sides of the outside of the bread.
  7. Place on the "panini press" and grill for 3-4 minutes on each side.
Notes
This sandwich is equally as good with Cheez-Itz!!!!

Coffee Ice Cream with chocolate and caramel

Just because it is fall doesn’t mean you can’t have ice cream. I mean, it’s not COLD yet.
Every time I make ice cream I swear it’s the best I have ever had. So, either I am building an arsenal of the worlds best ice cream or I am totally full of myself. hmmm?

This ice cream is soooo good if I do say so myself. (did you hear the tooting of ones own horn?)
The coffee flavor is perfect with delicious ribbons of caramel. The chopped chocolate, well just goes perfect with coffee, and the cacao nibs give it a wonderful crunch.

I made this 2 days ago and it is all gone. Not sure where it all went. But I can tell you that my cellulite seems to be growing cellulite on top of itself. ehhh, who cares.

Starbucks was kind enough to send me a bunch of VIA Ready Brew coffee packets. Not only are they convenient to make a nice cup of coffee with, but you can also do a billion things with them. I choose to create some ice cream..duh.

If you love Starbucks Caramel Macchiato, you will LOVE LOVE LOVE this ice cream!

Coffee Ice Cream with chocolate and caramel

My version of Starbucks Caramel Macchiato in ice cream form!
Ingredients
  • 1 cup whole milk
  • A pinch of salt
  • ¾ cup sugar
  • 1 vanilla bean, split lengthwise
  • 2 cups heavy cream,cold
  • 2 packets Starbucks VIA Ready Brew Italian Roast
  • 5 egg yolks
  • ¾ cup semi-sweet chocolate chips, chopped
  • ¾ cup Cacao Nibs, I use Scharffen Berger
  • ½ cup caramel sauce
Instructions
  1. Put a large sauce pan on the stove.
  2. Split the vanilla bean pod in half and scrape the beans out and place the pod and the beans in the pot.
  3. Add the whole milk, salt, and Starbucks VIA ready brew packets
  4. Over medium heat, heat the mixture until little bubbles start to form around the edges of the pot, but it is not at a boil.
  5. Remove from heat.
  6. In a medium bowl, whisk the egg yolks until they start to lighten a bit(this takes a few minutes with vigorous whisking).
  7. Gradually add the sugar while still whisking.
  8. CAREFULLY start to add some of the hot milk into the egg mixture.
  9. Do this by taking about ¼ cup of the hot milk mixture at a time and slowly adding it to the egg mixture while whisking. Do it slowly or you will have scrambled eggs!
  10. Continue to incorporate the milk into the eggs until about half of it is mixed in.
  11. Pour the tempered egg mixture into the pot on the stove with the remaining milk.
  12. Cook on low heat until the mixture is thickened and the temperature is 170(egg safety).
  13. Pour the heavy cream into a large bowl.
  14. Pour the cooked mixture through a fine mesh strainer into the bowl with the heavy cream, mix and allow to sit a room temperature until it is no longer steaming.
  15. Cover tightly and place into the refrigerator overnight.
  16. Remove from fridge and remove the split vanilla bean pod.
  17. Pour into ice cream maker and follow manufactures directions.
  18. A few minutes before the ice cream is done, add the chocolate chips, cacao nibs, and caramel sauce
Notes
If you can not find the Cacao Nibs, you can omit them. They just give a nice crunch.

A loaded Baked Potato in a skillet hashbrown form.
Ingredients
  • 4 pieces bacon
  • 1 box Hungry Jack Premium Hashbrown Potatoes
  • ½ teaspoon Coarse Kosher Salt
  • ¼ teaspoon pepper
  • ¼ cup cheddar cheese, shredded
  • 2 tablespoons sour cream
  • 1 tablespoon chives, chopped
Instructions
  1. Open the Hungry Jack Hashbrowns and fill it with hot tap water. Close the container and allow to sit for 12 minutes.
  2. In a large skillet over medium heat, cook bacon until crispy, remove onto a plate lined with a paper towel. Reserve the grease in the skillet.
  3. Crumble the bacon when cool enough to handle.
  4. Drain the excess water from the hashbrowns.
  5. Pour the hasbrowns into the skillet with the bacon grease.
  6. Mix in the salt and pepper.
  7. Cook the hashbrowns over medium high heat, until your desired crispiness, stirring occasionally. I cooked mine for 10 minutes.
  8. With a spatula, flatten the hashrowns into the skillet and cook for a few minutes so the bottom will get crispy.
  9. Remove from heat.
  10. Sprinkle on cheese, bacon, sour cream and chives.
  11. Serve.
Notes
If you are unable to find Hungry Jack Premium Hashbrowns, you can use 1 pound of the brand of hashbrowns you have on hand.

General Tso’s Chicken (Sun-Bird)

Do you get in a cooking rut? Ohhh, I totally do sometimes. Being a lover of all food, I would love to cook exotic food and try new things every night. However, if I tried to pull that, my family would starve and possibly disown me. But I do try to “Break the Routine” every once in a while.
For instance, Asian food. I make it every so often, but when I do, something is always missing. That special magic, that spark.


So here is where Sun-Bird Asian Seasonings comes to the rescue. They offer easy and convenient authentic Asian sauce mixes. I am not one on pre-packaged mixes but I will take all the help I can get in the Asian department. I am sooooo very glad I was given the opportunity to try Sun-Birds products. Talk about easy…my dinner was ready in about 15 minutes.
And the taste…well lets just say after dinner was done, my 8 year old son was eating the General Tso’s chicken from the pan on the stove. It tasted just like a meal I would get at an authentic Asian restaurant. Oh and it had a nice kick to it!

Pretzel Rolo Turtles

You can blame my sister for this one. She is the one who told me about these little nuggets of pure chocolate and caramel crack rock. Poor mans turtles I call these. I love me some Turtle candies. After I made these and ate, ohhh about 8 of them, I sent her a text message, and I quote…
“I.HATE.YOU”.

A word to the wise, DO NOT MAKE THESE if….

  • You have will power issues
  • You have an addictive personality
  • You are PMS’ing
  • Your significant other just broke up with you
  • Your favorite bachelor did not get a rose

Pretzel Rolo Turtles

The poor mans Turtle. Pretzel Rolo Turtles
Ingredients
  • 20 Miniature Pretzels,
  • 20 Rolo Candies, unwrapped
  • 20 Pecans, toasted
Instructions
  1. Preheat the oven to 350.
  2. Place the pecans on a baking sheet and toast for about 7 minutes or until fragrant.
  3. Remove them from the oven.
  4. On a small baking sheet, arrange the pretzels.
  5. Place one Rolo on top of each pretzel
  6. Place them in the oven for about 4-5 minutes.
  7. Remove the pan and smoosh one pecan on top of each Rolo.
Notes
In a pinch and dont want to turn on the oven? Just want ONE? Place a pretzel and a Rolo on a microwave safe plate and nuke for 15 seconds. Remove from the microwave and smoosh the pecan into the Rolo. This recipe is for 20 candies, but you can make however many you would like.

It’s not officially fall yet, so I am still allowed to post a yummy summer dessert. But hurry because berry season is almost out the window.
This dessert is about as healthy as you can get on the Hungry Housewife. Berries and yogurt. There is a nice buttery sweet tart there too, but I mean the berries totally make it a fat free dessert. Work with me here people.

Mixed Berry Tart

A delicious mixed berry tart.
Ingredients
SWEET PASTRY DOUGH
  • 1⅓ cups all-purpose flour
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • 1 stick (1/2 cup) cold unsalted butter, cut into ½-inch cubes
  • 1 large egg yolk
  • 1½ tablespoons ice water
  • 1 egg white, lightly beaten(for brushing the dough while in the oven)
BERRIES
  • 5½ cups mixed berries, such as strawberries(sliced), blackberries, blueberries and raspberries
  • 1¼ cup vanilla flavored yogurt, Greek or regular
  • 1 tablespoon agave nectar
Instructions
FOR THE CRUST
  1. Whisk together flour, sugar, and salt in a large bowl.
  2. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal with some small (roughly pea-size) butter lumps.
  3. Beat together yolk and water with a fork and stir into flour mixture until combined well.
  4. Gently knead mixture in bowl with floured hands just until a dough forms.
  5. Turn out dough onto a lightly floured surface and knead gently 4 or 5 times more.
  6. Form dough into a ball, then flatten into a 5-inch disk.
  7. Chill, wrapped tightly in plastic wrap, at least 1 hour
  8. Preheat the oven to 400.
  9. Flour your counter again.
  10. Roll the dough out into a circle, large enough to fit in a 9" tart pan, about 10-11 inches.
  11. Place the dough in a 9" tart or pie pan.
  12. Lightly prick the bottom of the tart with a fork.
  13. Line the tart with foil and fill with pie weights.
  14. Bake for 8 minutes.
  15. Remove the foil and weights.
  16. Reduce heat to 350.
  17. Bake for an additional 25 minutes.
  18. Remove from oven a brush with beaten egg white and bake for an additional 3 minutes.
  19. Remove from oven and allow to cool completely.
FOR THE BERRIES
  1. In a large bowl, gently mix together the berries,yogurt and agave nectar
ASSEMBLY
  1. Pour the berries into the baked tart and serve.
Notes
No time to make your own dough? No worries, use a pre-made deep dish pie crust.

Cupcakes for two. Seriously? I know, I know, probably not a good recipe to have on hand. The fact that I can whip up 2 cupcakes in 20 minutes is a pretty dangerous situation for me. Well, I suppose I can be positive and think, “At least I don’t have 24 cupcakes sitting around the house”.
I found the original recipe for the cake part of the cupcake over at How Sweet It is. However I had to jazz them up with some almond extract and fill them with some yummy black raspberry jam.

The cupcakes are not your traditional light as air, bakery style cupcake. They are a bit more dense. Perfect to me!

Cupcakes for two

Jelly filled cupcakes for two with Cream cheese blackberry frosting.
Ingredients
Cupcake
  • 1 egg white
  • 2 tablespoons sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 1 drop almond extract
  • ¼ cup flour
  • ¼ heaping teaspoon of baking powder
  • pinch of salt
  • 1½ tablespoons milk
Filling
  • 1 tablespoon black raspberry jam
Cream Cheese Blackberry Frosting
  • 3 tablespoons butter, room temperature
  • 2 tablespoons cream cheese, room temperature
  • Small pinch of salt
  • 1 cup powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • 1 tablespoon heavy cream
  • ½ teaspoon blackberry jam
Instructions
  1. Preheat the oven to 350.
  2. Line 2 wells of a cupcake pan with cupcake liners.
Cupcakes
  1. In a medium bowl, mix the egg white and the sugar until incorporated.
  2. Mix in the butter, vanilla extract, almond extract.
  3. In a small bowl whisk together the flour, baking powder and salt.
  4. Add the flour mixture to the sugar and eggs.
  5. Mix until smooth.
  6. Mix in the milk.
  7. Divide evenly into the cupcake liners.
  8. Bake for 15-20 minutes.
Filling
  1. Place the blackberry jam in a tiny bowl and microwave for 10 seconds.
Cream Cheese Blackberry Frosting
  1. In a medium bowl, cream together the butter,cream cheese and salt until smooth with an electric mixer.
  2. Turn the mixer to low and add the powdered sugar.
  3. Add the vanilla extract and increase the mixer to medium.
  4. Beat in the heavy cream and mix on high until the frosting is fluffy, about 30 seconds to 1 minute.
  5. Fold in the blackberry jam.
Assembly
  1. Inject the cupcakes with ½ tablespoon jam each.
  2. Top with frosting.
Notes

I am totally loving these Bake and Store Silicone cupcake holders. They were perfect for this cupcake for two recipe.
I just placed two holders on a tiny baking sheet and placed the cupcake liners in the holders and baked away! Then after I decorated them I popped the lid on and they were all nice and cozy. The travel well and will stay fresher because of the lid. Love them!
