Nutella Peanut Butter bananna Ice cream

Oh boy,oh boy, oh boy. My husband has named this ice cream the best ice cream he has ever had. Big words huh? Them are some fighting’ words. I made this after all of my Key Lime Pie with Chocolate Ice Cream was devoured. Now I heard that that ice cream was the best too..so I am totally confused.
Nutella is a serious downfall of mine. It is a staple in the pantry. Have you seen the commercials stating it is nutritious for breakfast??? I almost spit water through my nose when I saw that. I mean have you looked at the fat content on the stuff? Not diet food folks. Does that stop me from slathering it ALLLLL over a banana??? No, surely it does not.
Don’t forget to buy yourself an ice-cream maker. This is the one I use. You will get many many many pounds of cellulite usage out of it!

Nutella-Banana-Peanut Butter Ice Cream

A heavenly creamy ice cream.
Ingredients
  • 3 cups whole milk
  • 1 cup heavy cream
  • ½ vanilla bean pod
  • 5 egg yolks
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons vodka
  • 1 ripe banana, chopped into small chucks
  • ¼ cup peanut butter
  • ¼ cup Nutella
Instructions
  1. Put a large sauce pan on the stove.
  2. Split the vanilla bean pod in half and scrape the beans out and place the pod and the beans in the pot.
  3. Add the whole milk and heavy cream.
  4. Over medium heat, heat the mixture until little bubbles start to form around the edges of the pot, but it is not at a boil.
  5. Remove from heat.
  6. In a medium bowl, whisk the egg yolks until they start to lighten a bit(this takes a few minutes with vigorous whisking).
  7. Gradually add the sugar while still whisking.
  8. CAREFULLY start to add some of the hot milk into the egg mixture.
  9. Do this by taking about ¼ cup of the hot milk mixture at a time and slowly adding it to the egg mixture while whisking. Do it slowly or you will have scrambled eggs!
  10. Continue to incorporate the milk into the eggs until about half of it is mixed in.
  11. Pour the tempered egg mixture into the pot on the stove with the remaining milk.
  12. Cook on low heat until the mixture is thickened and the temperature is 170(egg safety).
  13. Pour it into a bowl and allow to sit a room temperature until it is no longer steaming.
  14. Stir in vanilla and vodka
  15. Cover tightly and place into the refrigerator overnight.
  16. Remove from fridge and remove the split vanilla bean pod.
  17. Pour into ice cream maker and follow manufactures directions.
  18. A few minutes before the ice cream is done, add the Nutella and peanut butter by the spoonful.
  19. Add the banana. Continue in the ice cream maker for another minute or so.
  20. Enjoy
Notes
The vodka imparts no flavor. This is just to keep the ice cream from totally freezing like a rock after you put it in the freezer. It also helps it soften up a little faster when you remove it from the freezer...just a little trick I learned.

My son loves asparagus. I mean, really loves it. He will eat a whole entire bunch of it if you let him. Honestly, I think he just likes to wait a few hours and then he laughs when he pees and it smells like asparagus.

Boys will be boys.

Grilling it is one of my favorite ways to prepare it aside from roasting it. Its not a science and there is really no recipe.
So go grill you some, eat it, then pee!

Grilled asparagus
Ingredients
  • 1 bundle of asparagus
  • 2 teaspoons Extra Virgin Olive Oil
  • Coarse Kosher Salt
  • Pepper
Instructions
  1. Preheat your grill to medium high.
  2. Place your asparagus on a large plate and drizzle it with the olive oil.
  3. Sprinkle it with the salt and pepper.
  4. With your hands(because it is fun), mix the asparagus around a bit, to get it all covered with the oil.
  5. Place it on the grill and cook it for about 5-6 minutes, turning it a couple of times.
  6. Remove and enjoy.

White Chocolate Cherry Cookies

Mmmm, don’t you just love dried cherries? I could eat the whole bag if you let me. So when Payson Fruit Growers contacted to to try their product, I said yes. I secretly want to do a taste test with my favorite brand, Archer Farms from Target.
Payson Fruit Growers sent me a bag of dried tart cherries and Tart Cherry Juice Concentrate. I have not used the Cherry Juice concentrate yet, but I hear it is great with ice cream.
The cherries were wonderful. Moist, perfectly tart and not the least bit bitter,  just the way I like them.

I knew I had to use them in my White Chocolate Cherry Macadamia Nut Cookies. When I worked at the bakery, I bought this recipe along with me to test with the patrons. It was one of the most poplar cookies sold! I was hesitant, but I did leave the recipe at the bakery so she could continue to sell them when I left.

White Chocolate Cherry Cookies with Macadamia Nuts

A deliciously crispy on the outside, chewy on the inside cookie.
Ingredients
  • 8 oz (2 sticks) butter, softened but still cold
  • ¾ cup white sugar
  • ¾ cup light brown sugar
  • 2 eggs
  • 1½ teaspoon vanilla
  • 3 cups flour
  • ¾ teaspoon coarse Kosher salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup dried tart cherries, chopped
  • 1 bag white chocolate chips
  • ½ cup macadamia nuts, toasted and chopped
To Toast The Nuts
  • Preheat the oven to 350. Place the nuts onto a baking sheet and bake for 12-15 minutes or until they start to turn golden and you can start to smell them
Instructions
  1. In a medium bowl, cream together butter and both sugars just until incorporated.
  2. Add the eggs and vanilla and mix until just incorporated.
  3. In a medium bowl, thoroughly mix together the flour, salt, baking powder and baking soda.
  4. Add the flour mixture to the butter and sugar and again mix until just incorporated.
  5. Stir in the cherries,chocolate chips and macadamia nuts.
  6. Portion out the cookies into 2 oz portions (about the size of a large cookie scoop). Place on a cookie sheet lined with wax paper. Cover and place in the fridge for several hours. I always leave mine overnight.
  7. Preheat the oven to 375.
  8. Place the chilled cookie dough balls onto an ungreased cookie sheet and bake for 20-25 minutes. Allow to cool for a few minutes on the cookie sheet before removing.
Notes
These cookies are best when they are slightly undercooked in the middle. They will set up once cooled and this will allow for a chewy cookie.
