My day NEVER ever EVER starts without my coffee. I have the sweetest non-coffee drinking husband who makes me my coffee every morning in my French Press. Sweet, I know. He has to boil the water in the tea kettle and all that jazz. Yeah, I’ll keep him..he sure is handy.

Soooo, when I got the Keurig, I think he was happier than I was. All he had to do to make my coffee in the morning was put a K-Cup in the machine and that was it. And in 1 minute I had my fresh delicious coffee.

Potato Salad – The World’s Best

Potato Salad

Whatcha doing for Memorial Day? I hope you are having a picnic so you can make my potato salad..The World’s BEST potato salad. Those are some pretty big shoes to fill. But I tell you, this potato salad makes me very very happy.

One of my sisters besties, Faith, once made some potato salad and it was rockin’. I asked her what she did and she said she boiled the potatoes with chicken bouillon cubes. What a great idea. Soooo, I stole her idea and made some tater salad of my own.

I will tell you this is pretty garlic-y, so if you do not like garlic, you might want to reduce the amount of garlic. I love it just the way it is. Also, you can make this a few days ahead of time, all of the flavors make happy food love and glorious things happen.

Potato Salad - The World's Best

A delicious Potato Salad that is perfect anytime of year.
Ingredients
  • 5 pounds Red Potatoes,cubed
  • 6 Chicken Bouillon Cubes
  • Water
  • 1½ cups Mayonaise
  • 1 teaspoon Dijon Mustard
  • 4 Garlic Cloves, minced
  • 4 Hard Boiled Eggs, chopped(optional)
  • 1 teaspoon Coarse Kosher Salt
  • ½ teaspoon Pepper
  • Parsley, a handful, chopped
Instructions
  1. Place the cubed potatoes in a large pot and fill with enough cold water to cover the potatoes by 2"
  2. Add the chicken bouillon cubes.
  3. Bring the potatoes to a boil and boil until fork tender, about 6 minutes. (This time will vary depending how small or large your potatoes are cut)
  4. While the potatoes are boiling, make the mayo mixture.
  5. In a medium boil, mix together the mayonnaise, dijon mustard, garlic cloves, eggs, salt and pepper and parsley.
  6. Drain the potatoes and place them in a large bowl.
  7. Pour the mayonnaise mixture over the potatoes and mix well.
Notes
You can decrease the amount of garlic if you are not a big garlic fan. This can be made several days in advance.

Roasted Vegetable and Chicken Pasta

This recipe was born after looking into my crisper drawer and realizing I had a whole bunch a veggies that had only a few more days to live, 2 days max. I had to use them up quick.

I love love love roasting vegetables. Roasting concentrates the flavors and just makes everything better.

There is no sauce in the dish. I tried to keep it as simple and healthy as I could.  Don’t get me wrong..I love my sauces, and my butter and my cookie dough and my…oh, I could go on and on. My kids love plain pasta with extra virgin olive oil and lots of salt and pepper, so that is the flavor I was looking for. Did my kids eat the veggies? Yeah, right. They picked through this dinner..God forbid they eat a pepper or a tiny tiny piece of squash. Oh well.

Roasted Vegetable and Chicken Pasta

A delicious roasted vegetable and chicken pasta.
Ingredients
VEGETABLES
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • ½ purple onion, sliced
  • ½ bunch asparagus
  • 1 pint cherry tomatoes
  • 1 small head broccoli, cut into bite size pieces
  • 1 red pepper, chopped
  • 1 pint mushrooms, sliced
  • ¼ cup extra virgin olive oil
  • 1 teaspoon coarse kosher salt
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon dill
PASTA
  • 1 13.25 oz box of pasta, cooked to package directions
  • ¼ cup extra virgin olive oil
  • ⅔ cup parmigiano-reggiano cheese, shredded
  • Salt and pepper to taste
CHICKEN
  • 1½ pounds boneless skinless chicken breasts
  • 1 tablespoons extra virgin olive oil
  • ½ teaspoon coarse kosher salt
  • ½ teaspoon pepper
  • 1 large handfull spinach
  • Shaved parmigiano-reggiano cheese for garnish(optional)
Instructions
VEGETABLES
  1. Preheat then oven to 350.
  2. On a large baking sheet combine combine the zucchini, squash, onion, asparagus, tomatoes, broccoli, red pepper, mushrooms, olive oil, salt, pepper, garlic powder, onion powder and dill together.
  3. Roast for 30 minutes, stirring every 10 minutes.
CHICKEN
  1. Cut the chicken into bite size pieces.
  2. In a large sautee pan, over medium heat, add the extra virgin olive oil.
  3. Add the chicken to the pan and season it with salt and pepper.
  4. Cook the chicken for about 6 minutes or until it is no longer pink in the middle.
  5. Add the spinach to the pan with the chicken and cook for an additional 20 seconds, or until the spinach is wilted.
PASTA
  1. While the pasta is still hot toss it with the extra virgin olive oil and parmigiano-reggiano cheese. Add salt and pepper to taste.
ASSEMBLE
  1. In a very large serving bowl, toss the roasted vegetables, chicken and pasta together. Make sure to add any juices from the roasted vegetable pan and the chicken pan.
  2. Again, salt and pepper to taste
  3. Also, feel free to add more olive oil if needed to the finished dish.

Parchment Paper Tip

Parchment paper has a million ka-billion (it’s a real number look it up, oh wait not it’s not) uses in the house. I go through rolls and rolls of it. While the kids like to color on it, I like to use it in the bathroom. Nope, I kid. I obviously use it in the kitchen, however I am sure there are bathroom uses. I probably would not recommend wiping with it, might be a little rough.

Cookie sheets get lined with parchment paper, brownie pans get lines with parchment paper and certainly cake pans.
I DARE not bake a cake without it being lined with the magic paper. No more cakes sticking to the bottom of the cake pan. It is glorious stuff I tell you.  Oh, you know what? It makes for easy clean up, since my husbands cleans the dishes, he loves to see the parchment paper out.

I am going to show you a faster and easier way to line your cake pans with parchment paper. I might save you 30 seconds or so. Instead of tracing out your cake pan and then cutting out an entire circle, try it this way……..

You need- your pan, parchment paper, a pencil and scissors

Baby Shower

I wanted to share with you the baby shower I threw for my sister. This is going to be her last baby, in which she tried and tried for years. She did IVF and all sorts of shots and hormones for 4 years. After pregnancies and miscarriages, they gave up and finally came to terms with the fact that they would one have one child, Sarah Belle.

So my sister, the perpetual yard sale person, had a yard sale, sold ALL of her baby items. Then 3 days later, she found out she was pregnant!!! No drugs, no hormones..just naturally pregnant! God works in funny ways!

I wanted her shower to be perfect, something out of a magazine. I had a specific vision of how I wanted everything to look. Lots of little details everywhere.  I pulled the colors and the “building theme” from the babies bedding.

My home was turned into a beautiful shower setting. I would love to plan parties for a living. It would be so fun to spend other peoples money!!!!!

I will give y’all the recipes for all of my fabulous food in a later post.
