Ohhh lord. What did I get myself into?

Back in November a few friends had a brilliant idea of signing up for the NYC Marathon to on behalf of a very close family friend who has battled Cancer.

That was back in November. Reading about the NYC Marathon..they get over 100,000 applications and only about 6% of those applicants are chosen by lottery. Never in a million years would I have thought my number would have been picked out of their lottery hat.

Yep, I got accepted to run the NYC Marathon.

The longest I have ever ran was 8 miles. EIGHT miles. ummm, do I need to remind you that a marathon is 26.2 miles?

A chubby foodie running a marathon? I suppose so. It has been on my bucket list. But OMG, I never thought it would become a reality. How am I going to do this??

Sooooooo, does anyone have any training tips for me? This girl needs all the help she can get.

What to wear?? I am thinking this…

And I am quite certain I will look like this after the race..

Sour Cream Oatmeal Cookies

Spring is in the air and there is no better way to celebrate the new season than with cookies!!!

I am not a huge fan of oatmeal cookies. Don’t get me wrong, I will eat them. I will never turn down a cookie. I just don’t roll like that.  So why did I pick a recipe with the title, Sour Cream Oatmeal cookies? Who knows, your guess is as good as mine. No rhyme or reason to my way of thinking. But I am glad I choose these cookies to make from Cookie Central.

This is the perfect cookie for you if you don’t like oatmeal cookies. I say this because my best friend Bobbi was at my house when I took them out of the oven. I told her to try them, she said, “No, I don’t like oatmeal cookies.” I gave her the look of death and she tried them. Well Mizz Bobbi, the oatmeal cookie hater ate TWO!

My husband said, “These are oatmeal cookies??”

I would say they are sophisticated. Not too sweet, no cinnamon or raisins, not chewy nor held together with sweet gooey-ness. I added the chocolate chips to the recipe. The chocolate worked amazing in the recipe. They are soft and delicate. I ate way too many..what else is new?

Sour Cream Oatmeal Cookies with Chocolate chips

A delicate not too sweet oatmeal cookie.
Ingredients
  • 1 cup Crisco Butter Shortening or 1 stick Crisco Butter Flavor All-Vegetable Shortening Stick
  • 1 cup firmly packed brown sugar
  • ⅔ cup powdered sugar
  • ⅔ cup sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 4 cups quick rolled oats
  • 1½ cups All-Purpose flour
  • 1 teaspoon cream of tarter
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 bag semi-sweet chocolate chips (my addition to the recipe)
SUGAR COATING
  • ½ cup powdered sugar
  • ½ cup ground or very finely chopped pecans
Instructions
  1. Combine shortening, brown sugar and ⅔ cup powdered sugar in bowl of electric mixer. Beat at medium speed until well blended.
  2. Combine oats, flour, cream of tartar, baking soda and salt in a medium bowl. Add gradually to shortening mixture at low speed. Beat until well blended. Add the chocolate chips and blend until incorporated. Refrigerate overnight or until firm enough to handle.
  3. Heat oven to 350.
  4. Combine ½ cup powdered sugar and pecans.
  5. Shape dough into 1¼-inch balls. Roll balls in powdered sugar mixture.
  6. Place 2 inches apart on ungreased baking sheet.
  7. Bake 13-16 minutes or until top is crackled and dull and the cookies are set.
  8. Cool 2 minutes on baking sheet.
  9. Place on cooling racks to cool completely.
Notes
Be careful when you remove the cookies from the cookie sheet. they are very delicate and may fall apart. The firm up as they cool. Oh and I added the Chocolate chips on a whim. They just screamed "Add chocolate"!

Ingredients
  • 1 cup love
  • 2 tsp kisses
  • 3 tbsp hugs
  • 4 pinches smooches
Instructions
  1. Mix one cup of love, 2 tsp kisses, 3 tbsp hugs together in a small bowl. Add the 4 pinches of smooches. Mix until incorporated. Bake at 350 for 10 minutes and allow to cool.

Frito Lay {Part 3} The People

By now we all have heard about me almost not making it to the Frito-Lay Flavor Kitchen.

I have taken you on a tour of the kitchen.

And today I am going to share with you my new friends.

My girls..

Yep, that is me on the left looking like a giant and I am only 5′ 3″. The cutie pie in the middle is Michelle of Domestic Mama of The Village Cook. And the lovely lady on the right is Joelen of What’s Cookin, Chicago? I just adore these two girls and I am so very glad we shared this experience together.

We got to get all pretty and pampered.

 

 

We had a full day of filming.  We had many laughs and sore feet.

Everyone involved in the day was great.  A big shout out goes to the folks at Time inc..Melinda Russel, Julie Christeas, Don Struckle, Jennifer Zawadzinski, Dawn Bar and Stella Araya-Weil.

They are having a week long shin-dig.
Starting today, April 11th, you can go on a behind-the scenes look at how their newest product flavors are created.  They actually re-created their kitchen high atop a Times square billboard..too cool!


On April 13th at 1 pm,  You can witness the Frito-Lay’s exectutive chef Stephen Kalil showcase a Lay’s Garden Tomato and basil recipe from their all-natural portfolio and the inspiration behind it.
Times Square will be turned into a virtual test kitchen for possible snacks that could show up on store shelves sometime soon!!!!

Cherry Pineapple Surprise

Dump Cake

Cherry Pineapple Surprise a.k.a dump cake.
My Mom used to make dump cake all the time. I think that is where my love of canned cherry pie filling came from. I don’t normally keep pie filling on hand, probably because I know I am nasty and I will, in a weak moment, pop the can open and eat it straight. WHAT? Don’t look at me like that.
The fine folks at Lucky Leaf are very good to me. They sent me some more pie filling. Cherry, my favorite. Did you know that Lucky Leaf Pie filling does not have any of that high fructose corn yuck in it?
Nope it doesn’t!

The recipe they sent along with the cherry pie filling was Cherry Pineapple Surprise. Umm-yum.
Lucky Leaf has a BUNCH of recipes on their site. So if you ever need any inspiration on what to do with your pie filling click here.
This recipes tastes like my childhood!
Like any dump cake recipe, it is best eaten when completely cooled. I have the patients of a gnat ( do gnats even have patients? Hmm, sounded good), so I ate it when it was still warm. It was like slop. It needs time to set up.

Also, if you do easter dinner. Check out this recipe for a yummy Maple Citrus Ham Glaze using Lucky Leaf Apple Sauce.

LUCKY LEAF CHERRY PINEAPPLE SURPRISE
Printer Friendly Version

1 can (20 0z) crushed pineapple (do not drain)
1 box (18.25oz) yellow cake mix (the kind without the pudding mix)
1 can (21oz) Lucky Leaf Premium Cherry Pie Filling
1 cup melted butter or margarine
1 bag (7 oz) shredded coconut
1 cup chopped nuts of choice..I used pecans

Preheat oven to 350.  Lightly grease a 9 x 13 baking dish. In the prepared baking dish, pour in the pineapple. Then cover the pineapple with the Lucky Leaf Premium Cherry Pie FIlling and spread around as much as possible. Sprinkle the dry cake mix evenly over the top. Pour the melted butter over the top, covering evenly. Top with the coconut and nuts. Bake for 50-60 minutes or until brown and bubbly on top. Half way through, I put some foil over the top so the coconut and nuts did not burn.

Fudge..The Best Ever

It is expected to make an appearance at all parties hosted at my house and I get the evil eye if I do not bring it with me to a party I attend.
One bite and I hear, “Oh, my God, this is the best fudge I have ever had!”
I politely shake my head and say, “Thank you, I think so too.”
If they only knew. muahhhh ha ha!
The recipe has been right under their noses for YEARS.
Right on the back of the Kraft Jet-Puffed Marshmallow Cream jar.
I have simplified the recipe a bit over the years.
So there..you too can make the best fudge EVER.

FUDGE- THE BEST EVER

3 cups Sugar
1 1/2 sticks Butter
1 (5 oz) can Evaporated Milk
1 (12 oz) bag semi-sweet chocolate chips
1 jar (7oz) Jet-Pufferd Marshmallow Creme
1 tsp Vanilla Extract

Line a 9″ square pan with foil.
In a medium pot over medium heat, bring the sugar, butter and milk to a rolling boil, stirring constantly.
Allow to boil( at FULL BOIL) for 3 minutes (set the timer!!!)
Remove from the heat.
Stir in chocolate chips and marshmallow cream until completely smooth. Stir in vanilla.
Pour into your foil lined pan and allow to completely cool.
Lift the fudge out of the pan by the foil liner
Cut to the size you desire. I recommend SMALL pieces.

Soccer Cake and Winners

So 15 large pizzas ( Pizza Hut was $35 cheaper than Dominos..thats HUGE) bunch of fruit, a soccer ball cake and about 50 people later..I AM DONE DONE DONE!

Here is the cute cake I made for him.
Vanilla 10″ bottom with strawberry filling. Chocolate 6″ top with strawberry filling. Buttercream Frosting.
Fondant soccer balls. The Soccer balls actually popping out of the top are balls from the party store ( I was not that ambitious). I think it turned out adorable!
