When life hands you Boxed Cake Mix(or when they are buy one get one free at the store and you can’t pass up a sale) what do you do with it? Well, I don’t usually make cakes with them as I prefer homemade. Well silly, you make cookies!
These were pretty amazing if I do say so myself. What puts them over the top? The crispy coconut on top. AMAZING I tell you! I adore coconut. I could eat it with everything. Roll a piece of cow crap in coconut, yep I’ll take it! Ok so that’s just plain nasty. No thanks, I will pass on the coconut covered cow terds. A hint for the wise, if you store these in an airtight container, the coconut will loose a bit of that heavenly light crispness. So eat them all in one sitting and you will be better off!!!!

GERMAN CHOCOLATE COOKIES
1 box German Chocolate Cake mix
4 Tablespoons butter, soft
1 egg
1/2 cup canola oil
1/4 Teaspoon coconut extract
1 teaspoon vanilla extract
1 cup pecans, toasted and chopped
3/4 cup chocolate chips(milk or semi-sweet)
Coconut to roll the cookies in before baking
Preheat the oven to 350.
In a large bowl, mix all of the ingredients together until blended.
Scoop out a ping pong ball size amount of cookie(I used my tiny Pampered Chef Scoop, that I could not live without all 3 sizes)
Roll into a ball (moisten your hands if it gets sticky)
Roll in the coconut.
Place on an ungreased cookie sheet 2 inches apart.
Bake for 8-10 minutes.

I just use what I have on hand. Mushrooms and capers would have been divine. Its also a very healthy dish, only 2 table spoons of butter ( gasp). And like 90 % of the time, I used whole grain pasta. I hope you are also using whole grain! I had the opportunity to be on a conference call with Bob Greene(Oprah’s Trainer) with some other fine food bloggers about a month ago and he gave us some valuable information. If you haven’t yet made the switch to whole grain pasta, now is your chance. Barilla is having their Whole Grain Taste Challenge. If you buy their pasta and are not satisfied, they will replace it with your favorite box of pasta. So, there is nothing to loose!

CREAMY LEMON WINE CHICKEN WITH ROASTED TOMATOES
Printable Recipe

1 pound of your favorite pasta, cooked and drained
2 pints cherry tomatoes
Extra Virgin Olive Oil
1 pound boneless, skinless chicken breasts, cubed
1 onion, sliced thinly
4 cloves garlic, minced
2 Tablespoons butter
4 Tablespoons flour
2 cups Chicken Stock
1/2 cup White Wine
Juice from 1 1/2 – 2 lemons
6 oz baby spinach
2 Tablespoons Fresh Parsley, chopped
Salt and Pepper

Pre heat oven to 400 degrees.
Line a baking sheet with parchment paper or a silicone mat
In a medium bowl toss tomatoes with enough olive oil to coat and sprinkle with salt and pepper.
Place on baking sheet and roast for 30 minutes or until the tomatoes start to pop open, stirring occasionally.
While the tomatoes are roasting…
In a large pot, coat the bottom with olive oil.
Over medium heat saute the onions until starting to brown, stirring often.
Add the butter.
Add the chicken and sprinkle with salt and pepper
Cook for about 5 minutes.
Add the garlic and cook for another minute
Add the flour and cook while stirring for 2 minutes(to cook out the flour taste)
Stir together the chicken stock, wine and lemon juice
Slowly add the wine mixture to the chicken, stirring any brown bits off the bottom of the pan with a wooden spoon
Bring to a boil, reduce heat to and simmer for 5-10 minutes.
Toss is the spinach to wilt. Once the spinach is wilted in the sauce add the parsley.

Salt and Pepper to taste
Serve over pasta and top with the roasted tomatoes

When I told her I had no clue how to get one of those fancy buttons, she did it for me!!! How nice is that!?? Since my logo is a bit long, it got squeezed in translation. However a button is a button and it is awesome that Jennifer took the time to do it for me!
So if it were dying to have one of my buttons for your blog, well here ya have it! But don’t go steeling my logo for your personal use..it is currently being Trademarked!! 🙂 My Lawyer will hunt you down! LOL LOL LOL

Don’t you just love when you are craving something, then throw it together and it works wonderfully?
I made this pumpkin bread a few months ago (you have no clue how behind I am on posting).
I must say, it was perfect. Well anything with a crumb topping is perfect if you ask me.
This bread is super duper moist, sweet but not too sweet and ultra comforting. I took my banana bread recipe and mixed it up a bit. Sure you could roast your own pumpkin and puree it. But when I made this bread, it was not pumpkin season and there were no pumpkins to be had.

PUMPKIN BREAD
Printable Recipe
Makes 2 loafs
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup light brown sugar
1/2 tablespoon vanilla
3 eggs
1 can(15 oz) Libby’s 100% Pure Pumpkin(not pumpkin pie filling)
2 cups flour
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 tablespoon pumpkin pie spice
1/2 teaspoon cinnamon
1/3 cup buttermilk
1/2 to 1 cup toasted walnuts, chopped
Preheat the oven to 350.
Lightly grease TWO 8 x 3 3/4 x 2 pans (those disposable foil ones at the store)
Cream together butter and sugars until light and fluffy.
Add the vanilla
Add the eggs, one at a time.
In a separate bowl, whisk together the flour,salt,baking powder,pumpkin pie spice and cinnamon.
Add the dry ingredients to the wet, alternating with the buttermilk, starting and ending with the flour.
Fold in the pumpkin and toasted walnuts.
Equally pour into the pans and top with crumb mixture (recipe below).
Bake for 50-60 minutes, until toothpick inserted into the center comes out clean.

CRUMB TOPPING

1/4 cup white sugar
1/4 cup brown sugar
1/3 cup ap flour
1/2 teaspoon ground cinnamon
1/4 cup cold butter, cubed
1/2 cup oatmeal (1 package of instant oatmeal)
1/2 cup walnuts

In a medium bowl, combine 1st five ingredients with a pastry blender or 2 forks, so it resembles, well “crumbles”.
Mix in oatmeal and walnuts

· Macy’s Culinary Council, made up of 15 world-renowned chefs including Emeril Lagasse, Tyler Florence, Todd English, as well as entertaining authority Martha Stewart, will serve as the experts of this campaign. They are offering up dinner party themes, recipe ideas, product suggestions and even their suggested playlists, to help America host delectable and entertaining dinners. · To launch the campaign, Macy’s will host a special VIP dinner party with Martha Stewart and Emeril Lagasse on September 15th in its flagship Herald Square store.
