Salmon in foil

salmon cooked in foil Seafood OMG, SEAFOOD. Our friends from the sea have never graced the pages of The Hungry Housewife blog. Why? Well 1/2 of my household hates it. My son and I are the only seafood lovers. One day last week I had my “want to kill myself” migraines (uh huh..they last for like 3-4 days, and my life is miserable). However dinner still needed to be cooked and I had nothing out.
I served my husband and daughter hot dogs(GASP, at least I made them on the grill and not the microwave) and I pulled out some frozen salmon from the freezer. I had no clue if it would cook properly in its frozen state, but I was hungry and in pain. But it worked perfectly and was delicious.

FROZEN SALMON IN FOIL
Salmon
Lemon
Compound Butter(recipe below)
Foil
Kosher salt and pepper
Heat your grill to roughly 400’ish
Place your salmon onto a large square of tin foil
Cut of about a Tablespoon of compound butter for each fillet and place it on top
Sprinkle with a bit of salt and pepper
Add some lemon slices
Close the foil up tightly around the salmon and grill for 20 minutes
Yum yum yum!!
ALL PURPOSE COMPOUND BUTTER
1 stick butter
juice and zest of 1/2 of a lemon
2 tablespoons fresh parsley
2 cloves garlic minced and sauteed in butter
Salt and pepper
Mix all ingredients together and place on a sheet of cling wrap. Form into a log by rolling in between the cling wrap and freeze until hard.

  1. I am not a seafood person, so this recipe is not for me. I keep trying to like it, but it has yet to happen. I know my boyfriend would enjoy this though so perhaps I will make it for him. Sorry to hear you were not feeling well.

    Yeah I am a Veggie… but I do make Salmon for Hubbby because it is good for him!! He loves it!! It is high in the Omega's ya know!!! I am gonna do it this way for him! (I have never ever had salmon!) Now the last thing I gave up 20 years ago was Lobster and shrimp! hahah)

    I have migraines too.. they STINK!!
    I am on Topamax Daily now because they were so terrible!

  11. Sorry about the headache. I'm prone to them and seem to have them for weeks on end.

    Salmon (& shrimp) is my go to protein when I don't know what to make. Have you tried Old Bay RUB? Pretty good. (not the regular)

  12. YUM! I loooove salmon. Try adding some pesto, that's really good to, and simple! You could even add some cherry tomatoes inside of your foil packet.

  17. Same problem in this house – I LOVE seafood (I could eat it every night) and my husband hates it. This looks great! I don't have the patience to make two separate dinners, so I end up eating whatever I make my husband.

  20. I can't even imagaine a migraine lasting 3 or 4 days ((shudder)). That must be terrible! I don't make alot of salmon, the first time I made it my hubby said it didn't taste like anything, I'll try your recipe.

    My kids actuallly really like salmon. I prefer a white fish, halibut is the best! But times when I've made salmon, I'm always surprised that they love it. I can handle it and like it more now than I used to. GREAT to know it broils well still frozen! I've wondered.

    I wanted to add also. I always wanted to be a stay at home mom, but one of the good things about working is you get to be more tired and bitchy. I make one dinner, one. Eat it or don't. I don't care. You are far sweeter than me.
