Pound Cake for National Pound Cake Day

In honor of National Pound Cake day, I thought it was only fitting to post, um, Pound Cake! Duh!

My mom gave me this recipe after I bitched about my failed pound cake attempt a while ago.

Well this pound cake was FAR from a fail. It was moist and delicious. But don’t you dare put a glaze on top because it is plenty sweet enough. Next time I make it I might even decrease the sugar by just a tinsy tiny bit. I did however make some homemade vanilla bean whipped cream to make it cute since I already had the whipping cream out for the cake. I think she told me she got the recipe from an old Southern Living
Cookbook.

Come on folks, whip you up one of these bad boys in honor of the Holiday!

WHIPPING CREAM POUND CAKE
1 cup butter, softened
3 cups sugar
6 large eggs, room temp
3 cups sifted cake flour
1 cup whipping cream
2 teaspoons vanilla
Beat butter until creamy, gradually add sugar. Add eggs one at a time, beating well.
Add flour and whipping cream alternately, beginning and ending with flour. Pour into a greased and floured Bundt cake and bake at 325 for 1 hour and 15 minutes.

I like a day dedicated to cake, who can beat that? Does that mean you can eat nothing but cake all day?? It is hard to find a good recipe for pound cake that is moist, so it looks like you got lucky! Love the little vanilla bean cream trees, they are darling. Nice camera work, by the way 😉

  12. Peter M says:

  14. Now this sounds like the perfect holiday to celebrate! This pound cake looks deliciously moist and dense. I could definitely pack on a few pounds polishing off this cake–I mean, I’m pretty sure I wouldn’t be able to stop myself from devouring it. Whipping cream makes the BEST poundcakes (I, too, have figured this out after much failure with the “regular” recipes…Bakewise by Shirley Corriher has a great whipping cream poundcake recipe!)

Hi Leslie, I have the pound cake in the oven as I type. I took your advice and decreased the sugar by 1/2 cup. That batter is to die for I cant stop eating it. I had some whipping cream that needed to used. So a pound cake and chicken tetrazzini tonight. Both use whipping cream. Keeping my fingers crossed the cake turns out.
