On to the challenge.
This month’s challenge is brought to us by Karen of Bake My Day and Zorra of 1x umruehren bitte aka Kochtopf. They have chosen Tuiles from The Chocolate Book by Angélique Schmeink and Nougatine and Chocolate Tuiles from Michel Roux.

These are my take on the Crème de Pirouline cookie! You know those highly addictive little tubular cookies that are ohhh so yummy to dip in coffee!!?? I just shaped them into a rectangle using a stencil I cut from a box. Then mixed a bit of the batter with some cocoa to achieve the brown color and piped the lines on before baking. I rolled them around a pencil and let cool.
Then I whipped up a mixture of dark chocolate and Nutella and piped it into the cookies!!!
Lip smakin good people!

Recipe:Yields: 20 small butterflies/6 large (butterflies are just an example)

Preparation time batter 10 minutes, waiting time 30 minutes, baking time: 5-10 minutes per batch
65 grams / ¼ cup / 2.3 ounces softened butter (not melted but soft)
60 grams / ½ cup / 2.1 ounces sifted confectioner’s sugar
1 sachet vanilla sugar (7 grams or substitute with a dash of vanilla extract)
2 large egg whites (slightly whisked with a fork)
65 grams / 1/2 cup / 2.1/4 ounces sifted all purpose flour
1 table spoon cocoa powder/or food coloring of choice
Butter/spray to grease baking sheet
Oven: 180C / 350F
Using a hand whisk or a stand mixer fitted with the paddle (low speed) and cream butter, sugar and vanilla to a paste. Keep stirring while you gradually add the egg whites. Continue to add the flour in small batches and stir to achieve a homogeneous and smooth batter/paste. Be careful to not overmix.Cover the bowl with plastic wrap and chill in the fridge for at least 30 minutes to firm up. (This batter will keep in the fridge for up to a week, take it out 30 minutes before you plan to use it).
Line a baking sheet with parchment paper or grease with either butter/spray and chill in the fridge for at least 15 minutes. This will help spread the batter more easily if using a stencil/cardboard template such as the butterfly. Press the stencil on the bakingsheet and use an off sided spatula to spread batter. Leave some room in between your shapes. Mix a small part of the batter with the cocoa and a few drops of warm water until evenly colored. Use this colored batter in a paper piping bag and proceed to pipe decorations on the wings and body of the butterfly.
Bake butterflies in a preheated oven (180C/350F) for about 5-10 minutes or until the edges turn golden brown. Immediately release from bakingsheet and proceed to shape/bend the cookies in the desired shape. These cookies have to be shaped when still warm, you might want to bake a small amount at a time or maybe put them in the oven to warm them up again. (Haven’t tried that). Or: place a bakingsheet toward the front of the warm oven, leaving the door half open. The warmth will keep the cookies malleable.
If you don’t want to do stencil shapes, you might want to transfer the batter into a piping bag fitted with a small plain tip. Pipe the desired shapes and bake. Shape immediately after baking using for instance a rolling pin, a broom handle, cups, cones….

I have a non food related story to tell you all.

About 4 years ago my house was burglarized. Meaningless things were stolen like computers and DVD players. However non replaceable things were taken as well. Like ALL of my jewelry, jewelry that I had had all of my life..my first “diamond” ring that I got from my first love in 5th grade, my grandmothers High School graduation ring, my Graduation ring, family heirlooms pieces, pricey watches, etc. Overall about $25,000 worth of jewelry in 3 separate jewelry boxes. Not to mention, my best friend Bobbi was keeping her jewelry box at my house because her house was being remodeled and she knew it would be safe at my house. Well that was gone as well.
Today I get a letter in the mail saying someone might have found a class ring that belonged to me based on the name engraved inside. I was hesitant to call because I thought it might be a scam of some sort. but I called anyway.
A man with a heavy Southern accent picked up the phone. He said he uses a metal detector on the beach all the time and he always finds gold that people have dropped at the beach. I described my ring to him and it was a match! He said he has had the ring in his possession for a couple of years but has never found a name match. I just recently added my maiden name to my facebook account. He said he was looking through some scrap gold he has found over the years and he decided to see if he could locate the name on the ring again. He went to Facebook, typed in the name on the inside of the ring again and FOUND ME!
Pretty darn cool huh?
How do you repay someone for such kindness?

Computer broke!

Garlic TIP

Put your garlic in a Tupperware container(separate the bulbs from one another), put a lid on it and “SHAKE THE HELL OUT OF IT” for about 20 or so seconds.
Me being the skeptic, I was out to prove them wrong.
I try the so called new trick.
And DAMN it, they were right!!!! The skins were totally removed.
Ok, so maybe you already new this new found trickery, smarty pants!

I used to have an aversion to cooking them. I suppose I burned them one too many times. They require pot stalking. Its kind hard to stalk a pot with 2 young kids. You know moms, while cooking we are pulled in every direction. You get the, “Mom, I need help”, “Mom, shes looking at me”, Mom, I spilled my juice”, Mom, come wipe my butt”(ya, I still have young kids that need my help in the bathroom..oh the joys of parenthood!!!) Ok, so you get the point. They need constant attention.

I soooo swear this is not a pile of earth worms I dug up from the back yard!!!


CARAMELIZED ONIONS

Preheat oven to 425
Thinly slice your desired amount of onions( I always use Vidalia Onions)
Coat lightly with vegetable oil
Season with salt and pepper
In a dutch oven fitted with a lid, bake for around 1 hour, or until desired color is reached
Make sure you stir them every 15 minutes so they don’t burn( yes you still have to attend to the pot, but not as much)

Now a little toot tooting of my own horn!!
